CAJUN SALMON SANDWICH WITH GOAT CHEESE AND LEMON MAYONNAISE

Cajun Salmon Sandwich With Goat Cheese and Lemon Mayonnaise image

Steps:

  • Preheat oven to 350 degrees F.
  • Season the salmon with Seafood Cajun Seasoning.
  • In a medium saute pan, saute salmon in butter on medium-high heat, fat side down, until golden brown. Using a metal spatula turn salmon over and cook until golden brown. Transfer salmon onto a small sheet tray and place in oven for 4 to 6 minutes. Remove from oven and let rest.
  • Slice ciabatta roll lengthwise and place under broiler until lightly golden. Spread Goat Cheese and Lemon Mayonnaise on roll. Arrange salmon, lettuce, tomatoes and onions on roll. Enjoy!

  • In a medium bowl, combine cayenne pepper, kosher salt, paprika, black pepper, garlic, onion powder, gumbo file and crab boil seasoning.

Saffron and Dill Mayonnaise, Plus Garlic and Lemon Mayonnaise image

Steps:

  • SAFFRON MAYONNAISE: Grind 2 pinches of saffron in a mortar and add 1 tablespoon boiling water to infuse for several minutes. Stir this into 1 cup of mayonnaise. Serve with roasted red peppers and tomatoes, fried potatoes, Mediterranean soups, lentil or chickpeas.
  • GARLIC MAYONNAISE: Coarsely chop 4 to 6 cloves garlic. Transfer into a mortar and pound with a pinch of salt until it turns into a paste. Stir into a cup of mayonnaise and add a little lemon juice to taste. Serve with chargrilled summer vegetables (eggplant, zucchini and charred red onion), a summer vegetable soup, or use as a dip for crudite.
  • DILL AND LEMON MAYONNAISE: Add a quarter cup of chopped dill, 1 teaspoon lemon zest and lemon juice to taste to 1 cup mayonnaise. Serve with poached eggs, steamed vegetables and boiled new potatoes

Smoked Salmon and Goat Cheese Sandwiches image

Steps:

  • Mix goat cheese, 6 tablespoons minced arugula, 2 tablespoons oil and 2 teaspoons chives in small bowl. Season generously with pepper. Arrange salmon in single layer on large plate. Drizzle 3 tablespoons oil over. Spoon lemon juice over. Sprinkle with 4 tablespoons minced arugula, 4 teaspoons chives and generous amount of pepper. (Can be prepared 4 hours ahead. Cover and refrigerate.)
  • Just before serving, toast bread. Spread with goat cheese mixture; top with salmon. Place sandwiches on plates. Tuck arugula under sandwiches. Make cut in each lemon slice from center to edge. Twist 1 slice atop each sandwich.

Steps:

  • Heat a heavy skillet over high heat for 15 to 20 minutes.
  • Mix mayonnaise and enough Cajun spice to reach desired hotness.
  • Lightly spray both sides of salmon filets with nonstick cooking spray and sprinkle with Cajun spice.
  • Place salmon in the hot skillet to blacken; cook 2 to 3 minutes per side.
  • Cooking time will vary with thickness of filets and heat of pan, salmon is done when it flakes easily with a fork.
  • Spread mayonnaise mixture onto each roll, top with blackened salmon, tomato and 1/4 cup shredded cabbage.
  • Squeeze with lemon juice and serve.

Smoked Salmon Sandwich With Goat Cheese image

Steps:

  • In a bowl, mash the goat cheese with a fork. Add the yogurt, and mix together until smooth. Spread half on one slice of bread, and top with the smoked salmon. Slice the cucumbers very thin, and layer them over the salmon. If desired, season the cucumbers with a little salt and pepper, and squeeze on some lemon juice. Sprinkle the chopped chives or dill over the cucumbers.
  • Spread the remaining goat cheese mixture over the other piece of bread. Place on top of the cucumbers, press down and cut the sandwich in half.

1 1/2 ounces smoked salmon (more if desired)
1/2 ounce goat cheese (about 2 tablespoons)
1 to 2 tablespoons plain yogurt
Several cucumber slices (about 1 1/2 ounces)
A squeeze of lemon
