CAJUN PEANUTS (BAKED, NOT BOILED)
Use honey roasted peanuts to make this sweet and spicy snack! This is great to make and give as gifts. From one of my favorite cookbooks, "BHG Off The Shelf Cooking." Cook time includes cooling time.

Steps:
- Preheat oven to 350 degrees. Line a 15 x 10 x 1-inch baking pan with foil; grease the foil and set aside.
- In a medium bowl beat egg white with rotary beater until frothy. Stir in Cajun seasoning and cayene pepper. Add peanuts and toss to coat.
- Spread peanuts in a single layer in prepared baking pan.
- Bake in the preheated oven for 12 minutes, stirring once halfway through baking. Cool completely. Break up any large clusters of peanuts.

- Cut each potato lengthwise into eight wedges. , In a large bowl, combine the oil, shallots, garlic, salt, paprika, cayenne and pepper; add potatoes and toss to coat. Place in a greased roasting pan., Bake, uncovered, at 450° for 45-50 minutes or until tender and golden brown, turning every 15 minutes. Sprinkle with parsley.

CAJUN SUGARED PEANUTS
I was headed to a Mardi Gras party and needed to throw something together fast. I had some raw peanuts on hand and decided to try candy coating them with a kick of Cajun seasonings added in. This is the result and they were a hit. 'Addictive' was the word most people used. Would be a great gift to give out during the holidays.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Stir sugar into water in a saucepan over medium heat; cook and stir until the sugar dissolves completely. Add peanuts, chipotle chile powder, kosher salt, chili powder, and garlic powder into the liquid.
- Bring the mixture to a boil and cook, stirring constantly, until the liquid evaporates and the remaining syrup coats the nuts, about 15 minutes; spread immediately onto the prepared baking sheet. Use forks to separate any peanuts stuck together and to get an even layer.
- Bake in preheated oven, stirring and then separating the peanuts every 5 minutes, until the peanuts are glazed, about 20 minutes total. Let peanuts cool completely before breaking into small pieces.

CAJUN BOILED PEANUTS
A wonderful southern tradition--and obviously and acquired taste! Don't want it so hot?- replace pepper and Cajun seasonings and jalapeños with some ham hocks and have them country style.

Steps:
- In large steel stock pot (for outside use) place peanuts and fill with water 3/4 full.
- Add all but the jalapeños.
- Place on gas burner and heat until boiling.
- Boil at a steady boil for about 6 hours, adding water as needed to keep pot at least half full.
- Stir occasionally.
- During last 2 hours add jalapeños.
- Taste at the end of the 6 hours for doneness. They should be completely soft and the inside of the shells are completely "wet" looking--no white remains visible.
- Eat hot or cold!
- They are great!
- Freeze some for later--just heat in microwave to enjoy that fresh out of pot taste again!
CAJUN PEANUTS
My neighbor had cajun peanuts from Feridies at holiday time. They were awesome but impossible to find in the stores. I found this recipe on cooks.com and wanted to hold onto it on zaar. I will rate once I make some. Happy munching!

- In a small bowl, stir together paprika, brown sugar, black pepper, onion powder, thyme, rosemary, garlic powder, and cayenne pepper.

INSTANT POT® CAJUN BOILED PEANUTS
I love boiled peanuts but in the past they've been a bit of hassle to make. They've got to be soaked in water overnight, then you have to wait for the giant pot of water to boil, the water evaporates so you have to add more water every hour, and then every time you do that you have to wait for the water to start boiling again. I knew there had to be a way to simplify the process and the Instant Pot® is the solution. While they still take time, the method is hands-off and they are still done quicker than the 8 hours alone it takes to soak them overnight using the stovetop method.

- Place water, peanuts, salt, Creole seasoning, and liquid crab boil in a multi-functional pressure cooker (such as Instant Pot®) and stir to combine. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 180 minutes. Allow 25 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 25 minutes. Unplug the cooker but keep the lid on. Let peanuts sit for 2 hours for maximum flavor.

WAY TOO EASY CAJUN POTATOES
These were a staple in the Irish Channel in the good ole days. I still make mine in a cast iron pan but you can use any oven proof pan. For those who must have heat, add extra cayenne. To shorten baking time we sometimes nuke the potato chunks a little before adding to the oil.

Steps:
- Pre heat oven to about 375-400.
- With a fork score all over the potatoes (peeled or not), this will make them more crisp.
- Chop the potatoes into 1 1/2-2 inch chunks.
- Put the oil in the pan (warming the pan first is good, but not vital), add potatoes, sprinkle all seasonings over (go easy with the salt; more can be added after cooking) and toss and stir potatoes with two forks until all chunks are coated.
- Bake for 15 mins, stir well (again with the forks), bake a further 10-15 minutes.
- Note: If you've nuked them, the potatoes will need a little less time. Watch them towards the last few minutes.
