BASIC HAM AND BEAN SOUP

Hearty ham and bean soup. Easy to make and a great way to use a leftover ham bone. This soup also has lots of mixed vegetables.

Basic Ham and Bean Soup image

Steps:

  • Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
  • After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
  • Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.

Steps:

  • In a large bowl, combine beans; divide into six batches (2 cups each). Store in airtight containers. Yield: 6 batches (12 cups total)., To prepare soup: Place one batch of bean mix in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. , Drain. Add 2-1/4 qts. water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Add ham, tomatoes, onion, green pepper, garlic and seasonings; return to boil. Reduce heat; simmer for 45-50 minutes.

Steps:

  • Sort through and rinse beans; drain.
  • In a large saucepan bring beans and splitpeas along with 6 cups of water to a boil.
  • Boil for 10 minutes, then drain, rinse, and drain again.
  • Place the drained beans in the crockpot along with the ham, onions, carrots, basil, oregano, salt, pepper, bay leaves, and last 6 cups of water.
  • Cover crockpot and cook on low for 8-10 hours or on high for 4-5 hours.
  • Remove bay leaves and adjust seasoning for salt and pepper if necessary.

Steps:

  • If desired, omit ham and substitute beef, chicken, or vegetable stock for the cooking water.
  • Wash beans thoroughly.
  • Place in a large kettle, cover with water and soak overnight.
  • (An alternate method is to bring beans and water to a boil,remove from heat, and cover and let stand for 1 hour.) Next drain beans and add 2 quarts of new water and ham or ham hock (or use broth if omitting ham).
  • Simmer slowly for 2-1/2 to 3 hours.
  • Then add spice packet, onion, tomatoes (undrained), lemon juice and salt to taste (spice packet contains no salt).
  • Simmer another 30 minutes or until beans are tender.
  • Take ham from soup.
  • Remove any bits of ham from bone and return to soup.
  • If using boneless ham, cut into bite-size pieces and return to soup.
  • Serve.

  • Bring to boil.
  • Reduce heat, and simmer uncovered for 10 minutes.
  • Drain, discarding cooking water, and rinse beans.
  • Combine all ingredients in slow cooker.
  • Cover.
  • Cook on low 8-10 hours, or high 4-5 hours.
  • Discard bay leaves before serving.

KATHY'S HAM AND BEAN SOUP

This is the highlight of my 'after' Easter cooking....that ham bone that is in the fridge after most of the ham is eaten. I just can't get myself to throw it out without making a pot of this soup!! I use canned beans in place of the dry, it just makes making the soup so much easier and the beans are always cooked just right. Be careful when adding salt, if the ham was salty the soup may not need any. Hope you like my recipe!!

Steps:

  • Add all ingredients but the beans to a kettle, cover with water and the broth. Cook on medium heat for 1 1/2 to 2 hours or until the barley and vegetables are tender. Remove the ham bone and cut any remaining meat from the bone and return the meat to the soup. Now you can discard the bone! Add the canned beans and the liquid in the cans to the soup and heat through. Enjoy with some crusty bread rolls and a glass of your favorite vino!

This is out of Chatelaine mag. It has low fat, protein and very healthy veggies and taste good too. This asks for black beans but I have used pinto (didn't have the black on hand)with fine results so I would say to use the beans you like the best. For ZWT this is in the Spanish devision because of the olive oil, garlic and tomato. This was a combo that my dad loved and used often, he was a grand Son of Spain who was born in Andalusia shortly before my grand parents moved to the U.S.

Cosy Ham-And-Bean Soup image

Steps:

  • Slice carrots into thin rounds, mince the garlic, and coarsely chop the onion.
  • Coat a large saucepan with oil and set over medium-high heat.
  • Add carrots, garlic and onion. Sprinkle with paprika, chili powder, oregano and salt.
  • Stir occasionally until onion is softened, about 5 minutes.
  • While onion is cooking, coarsely chop tomatoes.
  • Add ham to onion mixture and stir often until ham is lightly browned, about 2 minutes.
  • Add tomatoes, water, undiluted chicken broth and corn.
  • Using a wooden spoon, scrape up and stir in brown bits from pan bottom to add flavour.
