BRIE OR CAMEMBERT IN PUFF PASTRY

This is a really yummy, easy appetiser. Looks impressive too! Cooking time doesn't include 20-30 mins setting time. Serves 4 as part of a larger cheese platter, or selection of appetisers.

Brie or Camembert in Puff Pastry image

Steps:

  • Place brie on the pastry, draw a circle round it with a knife (about 1/2 inch larger than the cheese) and cut out the circle.
  • Do the same again.
  • Cut a strip of pastry about 1/2" wide that's long enough to wrap around the brie.
  • Place the brie on one circle of pastry and tuck the sides up, place another circle on top of the brie and tuck the sides down, then wrap the pastry strip round it to tidy it all up.
  • You can press the edges down with a fork if you want it to look REALLY neat, then decorate it with pastry scraps cut into nice shapes.
  • Brush it over with a beaten egg so it will have a nice glaze when cooked.
  • Bake at 180 degrees for around 20-25 minutes.
  • Let it settle for around 20-30 mins then cut into thin wedges and serve.

125 g brie cheese or 125 g camembert cheese, round
1 sheet frozen puff pastry

Camembert or Brie Bundle image

Steps:

  • Preheat oven to 325.
  • Open crescent roll dough, take half of roll and pinch seams together to make one solid square piece. (put other half aside for another use). Place in oven-proof dish.
  • Wrap cheese in crescent roll,bringing the ends on top of cheese and pinching the ends neatly.
  • Melt butter in sauce pan.
  • When melted, add crushed garlic cloves, and sautee for 5 minutes. (Do not burn Garlic)
  • Add honey to butter and garlic and stir until blended through.
  • Pour butter/honey over wrapped cheese.
  • Bake for 13 minutes, or until a nice golden brown.
  • Enjoy on crackers or toast rounds.

Another dish I would never have thought of posting because I don't think of it as a 'recipe'. Well, I've broken it down in steps and hope you'll try it. It is delicious.

Brie or Camembert Appetizers image

Steps:

  • Dip the wedge of brie or camembert in milk and dredge in flour.
  • Then dip in egg and breadcrumbs.
  • Let cheese'sit' for 10-15 minutes to allow coating to set.
  • Melt butter in a large skillet.
  • When hot, add as many brie/camembert slices as will fit without crowding.
  • Fry until golden-brown, turn over carefully and fry on other side.
  • Put a handful of the lettuce chiffonade on each serving plate.
  • Centre a golden brie/camembert slice on the plate.
  • Top with a spoonful of fruit chutney or preserves (or serve the chutney on the side); Cranberry Sauce is WONDERFUL with this!
  • Serve immediately with plenty of crusty bread to spread the molten cheese on.
  • Enjoy!

Grilled Camembert Sandwiches (Or Brie) image

Steps:

  • Heat olive oil and cracked pepper over low heat. Turn off heat and let infuse for 10 minutes.
  • Place sliced cheese on half of the bread slices (making sure the cheese comes to the edge of the crust). Place top slice on each sandwich and put them together so they are crust to crust. Cover all the sandwiches with a layer of plastic wrap and place a medium cutting board on top of sandwiches to gently weigh them down for 15 minutes.
  • Using a pastry brush, thoroughly brush surface of both faces of the sandwich with the pepper oil.
  • Preheat a Panini griddle on low or a medium saute pan over low heat. Wipe surface with a little oil. Place sandwiches in griddle or pan and cook until lightly browned, 2-3 minutes per side until cheese is melted. Keep heat low so bread doesn't burn.
  • Serve with tomato soup.

  • Add two cups of the flour to a large bowl of the bowl of a stand mixer fitted with a kneading hook. Add salt and combine. Warm milk to lukewarm. Stir in yeast and let stand a few minutes. Add yeast mixture to bowl, along with the vegetable oil or melted butter. Mix and add additional flour in 1/4 cup increments until a smooth dough forms. Knead until smooth. Transfer dough to an oiled bowl. Cover with plastic wrap and let rise until doubled, about 1 hour.
  • Cutting/shaping dough: Turn dough out onto a lightly floured cutting board. Using a sharp knife or bench scraper, cut the dough into 32 equal pieces, about 1-inch diameter. (I cut in half, then each piece in half, then repeat cutting each piece into equal parts until I have 32 small pieces). If starting with thawed roll dough, cut each roll into 3 pieces. Shape each piece into a small ball by pinching the edges together underneath.
