SWEET ROASTED CAMOTE
A twist on a traditional Thanksgiving or Easter side dish. Camote (sweet potato)is a delicious nutty, slightly sweet vegetable that can be used in place of chestnuts or yam.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Place camote in a large pot and cover with water. Add salt and bring to a boil. Cook over medium heat until crisp-tender, about 10 minutes; do not overcook. Drain and transfer camote to a 9x13-inch baking dish.
- Combine pineapple, brown sugar, butter, and cinnamon in a bowl; pour over the camote in the baking dish and toss to coat. Cover with aluminum foil.
- Bake in the preheated oven until soft and bubbly, about 1 hour. Remove aluminum foil and bake 15 minutes more.

AMARETTO YAMS
I had this dish years ago at an ex-boyfriend's house while I was there for Thanksgiving dinner and his mom shared her recipe. I am usually pretty traditional and old-fashioned with my Thanksgiving menu, but always make these because they are so good! My relationship didn't last, but this recipe continues to be a favorite, years later!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Mix crushed cookies with 1/2 cup butter in a bowl. Mash sweet potatoes with 1/4 cup butter in separate bowl; add brown sugar, marmalade, amaretto liqueur, and ginger to sweet potatoes. Mix well. Pour sweet potato mixture into a 9x9-inch baking dish; top with cookie mixture.
- Bake in the preheated oven until cooked through and bubbling, about 30 minutes.

Steps:
- Preheat oven to 250 degrees F (120 degrees C).
- Place yams in a large pot of lightly salted, boiling water and cook for about 10 minutes, or until tender. Drain.
- Arrange the yams in a lightly greased 9x13 inch baking dish. Cut a slit down the middle of each one and dab 1 tablespoon of butter in each.
- Bake in the preheated oven for 5 to 10 minutes, or until golden. Spoon 1 teaspoon honey into each yam, sprinkle each with sugar and serve.
