CANARY ISLAND SPICY POTATOES

I found this recipe in Gourmet magazine and I *love* it - a spicy vinegar based potato salad that has a great kick and nice flavor.

Canary Island Spicy Potatoes image

Steps:

  • In a saucepan, cover the unpeeled potatoes with enough cold water to cover them by 1 inch.
  • Bring to a boil and simmer for 15 to 20 minutes, or until just tender.
  • In a bowl, combine olive oil, vinegar, garlic, cumin, paprika and red pepper flakes and whisk until blended.
  • Drain potatoes, pat them dry, and toss with dressing, scallions and parsley.
  • Cut potatoes into smaller chunks if desired.
  • Add salt and pepper to taste.

1 lb red potatoes
1/4 cup olive oil
1/4 cup white wine vinegar
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon sweet paprika (preferably Hungarian)
1/4 teaspoon hot red pepper flakes
2 whole scallions, sliced thin
1/4 minced fresh parsley (optional)
salt, to taste
pepper, to taste

COUNTRY FRIED POTATOES WITH HATCH CHILES

Spice up your life and kick up your breakfast potatoes a notch by adding Hatch chiles. I used fresh-frozen charred Hatch chiles, but you can use canned if fresh are not in season.

Country Fried Potatoes with Hatch Chiles image

Steps:

  • Place Hatch chiles directly on the grates of a gas stove over medium heat. Cook, flipping with tongs occasionally, until blackened and charred, about 5 minutes. Place in a sealed plastic bag and allow to cool, 7 to 8 minutes. Peel off charred skins, remove seeds, and slice chiles.
  • Slice potato using a mandoline.
  • Heat oil in a large skillet over medium-high heat until shimmering. Add potato slices and fry undisturbed until starting to brown and soften, 8 to 12 minutes. Add onion slices and chiles. Season with seasoned salt and black pepper. Stir to combine. Cook until onions are translucent and potatoes are fully softened and browned on the second side, 5 to 8 minutes.

THE IRISH POTATOES

My sister gave me this recipe years ago and it has become a staple of our holiday or 'company is coming' type of dinner. It's easy to assemble and can be prepared ahead of time. It pairs well with beef, ham, or chicken. Leftovers, if there are any, reheat well. Everyone always loves 'The Irish Potatoes.' Yes, I know 'The Irish Potatoes' are fattening, but without the butter, whipping cream, and half and half it is just not as good. Substituting margarine or frozen hash browns would be a travesty.

The Irish Potatoes image

Steps:

  • Place the potatoes into a large pot and cover with salted water; bring to a boil. Cook the potatoes at a boil for 10 minutes; drain. Set potatoes aside to cool.
  • Once potatoes are cool enough to handle, slide the skin from the potatoes and discard; refrigerate peeled potatoes until completely cold, about 1 hour.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Grease a 9x13-inch baking dish with 1 tablespoon butter.
  • Grate 2 of the potatoes into the bottom of the prepared baking dish. Sprinkle about 1/4 of the minced onion over the layer of potato; season with salt and black pepper. Repeat layering until all ingredients are used and dish is full.
  • Drizzle melted butter, whipping cream, and half and half over the potato mixture; season with paprika.
  • Bake in the preheated oven until the top is bubbling, about 30 minutes.
  • Garnish with chopped fresh parsley to serve.

In a small bowl whisk together the oil, the vinegar, the garlic, the cumin, the paprika, and the red pepper flakes until the dressing is combined well. Drain the potatoes, pat them dry, and in a bowl toss them with the dressing, the scallions, the parsley, and salt and pepper to taste.
