CANDIED FRUIT BREAD
This is a great bread for tea at Christmas time when you don't like to make fruitcake. It is an old recipe that belonged to my mother, and really good.

Steps:
- Grease an 8x5-inch loaf tin thoroughly. Preheat oven to 375 degrees F (190 degrees C).
- Beat eggs in a medium bowl. Add milk and melted butter; mix well.
- Sift together flour, baking powder, salt, and cinnamon into a large mixing bowl. Add sugar, prepared fruits and nuts, and mix well. Add egg mixture to fruit and nut mixture, stirring just enough to blend. Pour batter into the greased loaf tin. Let stand for 20 minutes.
- Place pan in center of oven on middle rack. Bake for 60 to 70 minutes. Turn out on wire rack, and allow to cool for several hours before slicing.

EGGNOG BREAD WITH FRUIT
I was looking for a way to use up the last of my Christmas Egg Nog. The original called for 1/2 c candied cherries, 1/2 c raisins, and 1/2 c nuts, but I used figs and apricots instead. I also used a little rum (just make sure rum, brandy, or extract, and nog together equals 1 cup). It is sort of like a pound cake--without the pound! Mix a little eggnog with some powdered sugar and drizzle over it for a more elegant presentation and flavor.

Steps:
- Combine flour, baking powder, and salt; set aside.
- Beat eggs, sugar, and butter in large mixing bowl.
- While continuing beating, add flour mixture alternately with egg nog into the mixing bowl, beginning and ending with flour mixture. Beat until moistened.
- Stir remaining ingredients into mixing bowl.
- Grease or spray a 8 1/2 x 4 1/2 x 3 inch loaf pan or 3 mini pans. Pour batter into prepared pan(s).
- Bake at 350 for 70 minutes (mini pans will take 40 to 45 minutes) or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Remove to wire rack and cool.

HOLIDAY BANANA BREAD
This ever-popular tea bread is made Christmas-pretty with the addition of colorful candied fruits. This bread may look like a fruit cake but the taste is pure banana-delicious! I like to use candied red and green cherries and yellow candied pineapple, which I coarsely chop, in this bread for the prettiest look.

- Preheat oven to 350 degrees F. Thoroughly grease a 5 x 9-inch loaf pan.
- Sift the flour, measure, and sift with the baking powder and salt onto a piee of waxed paper. Add the nuts, raisins and candied fruits, and mix until well coated with the flour.
- Cream together the butter and sugar until fluffy. Beat in eggs one at a time until lthik and pale-lemon colored. Alternate additions of flour and fruit mixture and the mashed bananas, stirring after each addition until well blended. Begin and end with flour mixture.
- Spoon into prepared loaf pan and bake in preheated oven for about 60 minutrs or until bread pulls away from the sides of the pan.
- Let cool about 20 minutes before turning out on a rack to cool well.

PANETTONE WITH CANDIED FRUIT

- Make biga:
- In bowl of standing mixer fitted with dough hook, combine 1/3 cup warm water (105°F to 115°F) and sugar. Stir in yeast. Let stand until yeast dissolves, about 5 minutes. Add flour and mix at low speed until smooth, about 2 minutes. Cover bowl with plastic wrap. Let rise in warm, draft-free place until tripled in volume, about 3 hours. (Can be made 5 days ahead. Stir down starter, cover and chill. Bring to room temperature before using.)
- Start dough:
- In small bowl, stir together 1/4 cup warm water (105°F to 115°F) and yeast. Let stand until yeast dissolves, about 5 minutes. Attach bowl containing biga to standing mixer fitted with dough hook, pour in yeast mixture, and mix at low speed until combined, about 2 minutes. Add egg yolks, sugar, and flour and mix at medium speed until shiny and smooth, about 5 minutes. Cover bowl with plastic wrap. Let rise in warm, draft-free place until tripled in volume, about 3 hours.
- Finish dough and bake bread:
- Attach bowl containing dough to standing mixer fitted with dough hook and add flour, egg yolks, milk, honey, 1/4 cup sugar, and 10 tablespoons butter. Mix at medium speed until blended, about 3 minutes, then add salt, vanilla, and remaining sugar. Mix at medium speed until well blended, about 5 minutes more.
- With mixer running, add remaining 10 tablespoons butter, 1 tablespoon at time. (Dough will become smooth and shiny and will pull away from sides of bowl.) Add candied fruit and raisins and mix until blended, about 1 minute. Form dough into ball and transfer to large bowl. Cover with clean kitchen towel and let rise in warm, draft-free place until doubled in volume, about 3 hours.
- Preheat oven to 350°F. Butter 2 (8-inch) or 8 (3 1/2-inch) paper panettone molds. Punch down dough, then turn out onto work surface. Divide dough into 2 pieces and form each into ball. (If using small molds, divide dough into 8 small balls.) Place 1 ball in each mold. Cover with clean kitchen towel and let rise in warm, draft-free place until dough has risen past the rim and springs back when poked, about 1 hour.
- Bake until golden brown, about 45 to 50 minutes. To cool, stick 2 skewers through base of each mold and suspend bread upside down by resting skewers on 2 containers taller than bread. (This helps keep bread from deflating during cooling.)
- When loaves are cool, wrap well in plastic wrap, then in parchment or tissue paper. Store at room temperature.
EGGNOG FRUIT BREAD

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
- Beat the butter, sugar, and eggs together in a mixing bowl. Stir in the flour, baking powder, and sat, alternating with the eggnog, just until the dry ingredients are moistened. Fold in the pecans, raisins, and cherries until evenly blended. Spoon the batter into the prepared pan.
- Bake in preheated oven until top is golden and springs back when lightly touched, about 70 minutes. Cool in pan 10 minutes, then turn out onto a wire rack to cool completely.
