CANELAZO - SPICED CINNAMON RUM DRINK
Canelazo is a drink that will warm you up on a cold night high in the Ecuadorian mountains. It's made from brown sugar, cinnamon and cloves, orange and lime juice, and the fiery concoction known as aguardiente (or "fire water"). Aguardiente is a broad term for high alcohol content beverages distilled from different things. The kind they enjoy in South America is made from cane sugar, so rum makes a great substitute if you can't find aguardiente.

Steps:
- Bring the water, sugar, lime juice, salt, cinnamon sticks and cloves to a boil. Simmer for 5 to 10 minutes.
- Remove from the heat, and stir in the orange juice. Add the aguardiente or rum (to taste).
- Reheat, without boiling. (If it boils, the alcohol will boil away). Strain and serve hot.

SANCOCHO QUITENO - ECUADORIAN BEEF AND VEGETABLE SOUP
This is a typical Ecuadorian soup that is quite delicious. Yucca is also known as manioc or cassava. It is sold in the freezer section of markets that sell latin food products. You can use frozen whole corn cobs for this, but fresh is better. Recipe is from Cocinemos con Kristy - Tomo II.

Steps:
- Place 2 qts water in large soup pot, with beef, onion, garlic pepper and cumin. Bring to a boil and then reduce heat to med-low. It needs to simmer for at least one hour for meat to get tender.
- Cut the corn into 2" rounds. Set aside.
- Peel the yucca and remove the fibrous string in the center. Cube & set aside.
- When the meat is tender, add rice, peas, peeled plantain in one piece, carrots and the yucca.
- When the yucca is soft, after about 20-30 minutes, add salt to taste, the last 1/2 quart water and a whole stem of cilantro and a whole stem of parsley. Cook for 5 minutes.
- Remove the parsley and cilantro stems and discard.
- Remove the meat, cut up into bite-size pieces and return to the soup.
- Remove the plantain, cut up into bite-size pieces and return to the soup.
- Mix the finely chopped onion and cilantro for garnish and sprinkle on top of the soup when served.
SWEET MIXED NUTS
I started out making this just for the holidays makes a nice gift. Brown sugar,cinnamon, allspice, nutmeg and cloves. Its easy enough to do whenever, one batch in the microwave makes 1 1/2 cups.

- Slect power high.
- In a 2 quart casserole or microwave safe dish combine sugar, water and spices.
- Heat 1 to 1 1/2 minutes til sugar is melted.
- Stir in nuts.
- Place nuts on a microwave safe plate heat on high for 3 1/2 minutes or until syrupy.
- Becareful to spread the nut mixture evenly on the plate and watch closely not to burn.I find not all microwaves act the same way.
- Place nuts on wax paper to cool completely.
- Break into pieces store in air tight container.

SACK POSSET (WARM SHERRY DRINK)
This recipe is not for the cholesterol conscious nor if you are sugar intolerant but it is oh so good- Think of it as amedicinal nightcap - Good night Irene. Wonderful on a cold winter night. Because you bring the sherry to a boil most of the alcohol has burned off so it is not a high alcohol drink.

- Put the sherry, sugar& nutmeg into a saucepan, bring to a boil and stir until the sugar melts In another saucepan scald the milk (watch you do not scorch the milk).
- Put the egg yolks into a bowl and beat about 1/2 cup of the milk into them, then slowly add the rest of the scolded milk beating all the time Return mixture to the saucepan, mediem-low heat and cook until the mixture coats the back of a metal spoon Gradually add the sherry mixture, mix well but do not beat.
- Heat through, remove nutmeg& serve.

- In a small mixing bowl, cream together butter and brown sugar until light and fluffy. Beat in milk, cinnamon and salt. Spread entire top of lightly toasted bread with butter mixture. Place on a cookie sheet and broil briefly until mixture bubbles. (Watch carefully as these will burn quickly.) Cool slightly on a rack; cut into triangles, and serve warm for breakfast toast. Cover and refrigerate remaining butter mixture for future use.
