CAPPUCCINO MUFFINS
These are my favorite muffins to serve with a cup of coffee or a tall glass of cold milk. Not only are they great for breakfast, they make a tasty dessert or midnight snack. Steps:
- In a food processor, combine the spread ingredients; cover and process until well blended. Transfer to a small bowl; cover and refrigerate until serving., In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, combine milk and coffee granules until coffee is dissolved. Add the butter, egg and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips., Fill greased or paper-lined muffin cups two-thirds full. Bake at 375° for 17-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm with espresso spread.

CAPPUCCINO CUPS
Steps:
- Place the non-tempering chocolate in the top of a double boiler over hot, but not quite simmering, water. Melt the chocolate, stirring until it is smooth. Remove the boiler from the heat. Pour the chocolate into 1/2-inch circular molds and prepare the molds as directed on the chocolate packaging (reserve some melted chocolate for making the handle as directed below). Once hardened, pop the cups out of the mold.
- To make the handle of the coffee cup, put some melted chocolate in a pastry bag. Using a fine-point tip, pipe out a "C" for each mug on a piece of waxed paper. Allow the chocolate to harden.
- Using a fine point tip, pipe out a dollop of melted chocolate onto each pastille and place a cup on each to glue them together, making a coffee cup shape. Do the same for each handle and allow to harden.
- Place the 3 ganaches in 3 different pasty bags. Using a circular motion, pipe 1/3 of the Cognac Caramel Ganache in the bottom of each mug. Next, pipe the Coffee Ganache up to the top of the mug. Then, pipe the White Chocolate Ganache on top. Dust each cup lightly with cocoa powder and serve.
- 1/4 cup water
- 1 1/2 tablespoons corn syrup
- 2/3 cup sugar
- 1/2 cup heavy cream
- 2 tablespoons Cognac
- Heat a medium saucepan over high heat. Add the water, corn syrup, and sugar and bring the mixture to a boil. Do not stir the mixture once the sugar begins to boil. When the sugar begins to caramelize on the sides, remove the pan from the heat and slowly stir until the color is a medium brown. Carefully add the heavy cream and stir; then add the cognac and stir until well blended. Store the ganache at room temperature until ready to use.
- 1/2 cup heavy cream
- 1 tablespoon instant coffee
- 1 cup chopped white chocolate
- 1 tablespoon coffee liqueur
- 1/2 teaspoon coffee extract
- Heat a medium saucepan over medium-high heat. Add the heavy cream and instant coffee and slowly bring to a simmer. Put the white chocolate in a bowl and pour the hot cream over the chocolate and stir. Add the coffee liqueur and stir well; then add the coffee extract and stir until it is blended. If you need to melt the chocolate more, use a double boiler (as described above).
- 1/2 cup heavy cream
- 3/4 cup chopped white chocolate
- Heat a medium saucepan over medium-high heat. Add the heavy cream and slowly bring to a simmer. Put the white chocolate in a bowl and pour the hot cream over the chocolate, stirring until it is melted.
CAPPUCCINO MUFFINS
My kids have declared these "phenomenal!" The muffins are good in their own right but the spread gives them an incredible extra dimension. Please note, it is a cream cheese spread and not a sweet icing. The chocolate chips will not change form much. Perfect with a big, cold glass of milk or cup of coffee!

CAPPUCCINO KISS MUFFINS
A delicious cappuccino muffin with a chocolate surprise! They are best served within at least one day of baking. They get a little 'rubbery' after that. Also, the kiss pretty much sinks to the bottom so I think you could put the batter in the muffin tins and then push the kiss down into the center about halfway instead of having to add the batter in two steps.

- In a large bowl, combine the flour, sugar, baking powder, cinnamon, salt and baking soda.
- In another bowl, beat the egg, buttermilk, oil, coffee granules and vanilla until coffee granules are dissolved. Stir into dry ingredients just until moistened.
- Spoon 2 Tbls. batter into greased muffin cups. Place a chocolate kiss in the center of each; top with remaining batter.
- Combine sugar and cinnamon; sprinkle over batter.
- Bake at 425°F for 16-20 minutes or until toothpick inserted into muffin comes out clean.
- Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

- Heat oven to 400°F
- Line 14 muffin cups with paper baking cups.
- In large bowl, combine quick bread mix, contents of nut packet, cocoa and coffee granules; mix well.
- Stir in toffee bits and chocolate chips.
- Add buttermilk, oil and eggs; stir just until dry particles are moistened.
- Divide batter evenly into lined muffin cups.
- Bake at 400°F for 19 to 23 minutes or until toothpick inserted in center comes out clean.

CAPPUCCINO CHOCOLATE CHUNK MUFFINS.
I bake muffins daily for my partner to snack on mid morning. If you're a lover of a good Cappuccino, you really want to try these. Moist, fluffy, and loaded with great flavour, really, they're too good not to try! If you're out of sour cream just use milk, if you've only got instant coffee to hand, no worries use that, either way these are super tasty. (Incidentally, I often halve this recipe with equally good results).

- Preheat oven to 190C/375F/Gas 5.
- In a small dish mix 1 tablespoon brown sugar with 1/4 teaspoon cinnamon. (This is to sprinkle over muffin tops prior to baking).
- Chop chocolate into small chunks and set aside.
- Bring milk, egg and sour cream to room temperature.
- Melt butter in a medium sized bowl (I give it a blast in the microwave) and set aside to cool a little.
- Into a large mixing bowl sift flour, baking powder, salt, cocoa powder and cinnamon. Whisk together, add sugars and whisk together again. Make a well in the centre and set aside.
- In a measuring jug combine milk and sour cream, mix in espresso powder then vanilla extract. Whisk in egg and finally melted butter.
- Pour into flour etc and mix with a gentle hand until batter is lumpy.
- Finally fold in chocolate chunks.
- Spoon into muffin cups and sprinkle with cinnamon sugar.
- Bake for 22 - 25 minutes or until toothpick comes out clean.

- Preheat oven to 375. Paper or grease 15 muffin cups.
- In a mixing bowl, combine first seven ingredients.
- In a smaller bowl, whisk egg, milk, melted butter and vanilla. Stir into dry ingredients in other bowl, just until moistened. Add cup of choc. chips.
