CUBAN CAPUCHINOS (CABEZOTES DE CAPUCHINO)

These spiced syrup soaked Cuban desserts are typically cone shaped, but this simple version is made in a cup cake tin.

Cuban Capuchinos (Cabezotes De Capuchino) image

Steps:

  • Make syrup.
  • Pre-heat oven to 375°F Place cupcake liners in cupcake mold. In medium mixing bowl, beat yolks, egg white and 2 tbsp sugar for 15 minutes or until you've accomplished a very thick consistency. Slowly add starch, carefully folding it into mix. Pour mix into a plastic pastry bag with nozzle and fill cups 3/4 of the way. Place cupcake tray on top rack of oven. Bake approximately 15 minutes or until the tops are golden in color. To prevent them from burning, place an oven safe bowl of water at the back of the oven. Once cooked, remove from oven. Let cool for 5 minutes. Remove from cupcake liner and transfer to serving platter.
  • In medium sauce pan, bring water to boil and add 3 cups sugar, Grand Marnier, cinnamon stick, anise seeds, peel from lime and a few drops of the lime juice. Stir once. and let cook for 3 minutes. Add in vanilla extract and stir one more time. Remove from heat and let cool before pouring over capuchinos.

French Vanilla Cappuccino image

Steps:

  • Using a saucepan, add 1 cup of milk and 1/2 tea spoons of vanilla.
  • On a medium heat warm the milk until it starts bubbling (stirring to prevent burning).
  • Remove the milk from heat and stir sugar in to taste (suggestion 1/2 tea spoons).
  • Using a hand Frother or Blender whisk milk until frothy (suggestion 60 seconds).
  • Half fill a cup with fresh hot coffee.
  • Add the hot milk to almost fill cup (spooning milk froth to top).
  • Dust the top of cup with cinnamon.

1 cup milk
brown sugar
1/2 teaspoon vanilla extract
1/2 cup fresh hot coffee
ground cinnamon

Steps:

  • Place sugar in airtight container. Bury vanilla bean pieces in sugar. Cover and let stand at room temperature 2 days. Stir mixture once a day. (Can be prepared 1 month ahead.)
  • Beat cream to soft peaks in large bowl. Gradually add 1/4 cup vanilla sugar and beat to stiff peaks.
  • Place filter in drip-type coffee maker. Fill with ground coffee. Bring 6 cups water to boil. Slowly ladle water over coffee. Let water drip through before adding more. Divide coffee among 4 glasses or coffee cups. Top each with dollop of cream.

Steps:

  • Place milk in a 1-cup microwave-safe measuring cup. Microwave, uncovered, on high for 1 minute or until milk is hot and small bubbles form around edge of cup., Place a metal whisk in cup; whisk vigorously by holding whisk handle loosely between palms and quickly rubbing hands back and forth. Remove foam to a small measuring cup as it forms. Continue whisking until foam measures 1/3 cup; set aside., Pour Easy Espresso into a mug; pour in remaining hot milk. Spoon foam over top and serve immediately.
