CHEF JOHN'S CARAMEL APPLE PIE
To me, this is the purest and most intensely flavored apple pie recipe there is. The interesting thing about this recipe is the way the caramel sauce is poured over the apples and the lattice crust. You know how with a traditional apple pie some of the apple juices will caramelize as it bakes and bubble out of the pie and bake into and onto the flaky crust? That's how this whole pie is.

- Preheat oven to 425 degrees F (220 degrees C).
- Combine butter, white sugar, brown sugar, water, cinnamon, and salt in a saucepan over medium heat. Bring to a boil, remove from heat and set aside.
- Roll out half the pastry to fit a 9-inch pie plate. Place bottom crust in pie plate; pour in apple slices.
- Roll out top crust into a 10-inch circle. Cut into 8 (1-inch) wide strips with a sharp paring knife or pastry wheel. Weave the pastry strips, one at a time, into a lattice pattern. Fold the ends of the lattice strips under the edge of the bottom crust and crimp to seal.
- Pour butter-sugar mixture over top of pie, coating the lattice, and allowing any remaining sauce to drizzle through the crust.
- Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake until the crust is golden brown, the caramel on the top crust is set, and the apple filling is bubbling, 35 to 40 more minutes. Allow to cool completely before slicing.

- In a large bowl, mix flour, sugar and salt; cut in butter until crumbly. Gradually add water, tossing with a fork until dough holds together when pressed. Shape into a disk and wrap in plastic. Refrigerate 1 hour or overnight., Meanwhile, preheat oven to 450°. In a Dutch oven, combine filling ingredients. Cook over medium heat 10-15 minutes or until apples are almost tender, stirring occasionally; remove from heat., On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice., Bake 8 minutes. Remove foil and weights; bake 5 minutes longer. Cool on a wire rack. Reduce oven setting to 375°., For topping, in a small bowl, combine flour, brown sugar and salt; cut in butter until crumbly. - In a large bowl, mix flour and salt; cut in lard until crumbly. Gradually add milk, tossing with a fork until dough holds together when pressed. Divide dough in half. Reduce heat; simmer, uncovered, 20-25 minutes or until mixture thickens slightly and turns a medium amber color. Remove from heat; cool completely., Preheat oven to 400°. When you want a change from the same old apple pie, these miniature apple pies are a nice alternative.I find the double crust and the smaller size of the pies a good balance for the sweetness of the filling.These are best served warm with a good quality vanilla ice cream.

- Combine apples, sugar, butter,juice, cream, spices, cornstarch and caramels in a skillet.
- Bring to boiling over high heat, stirring frequently, 8-10 minutes.
- Lower heat to medium; cook for another 2-3 minutes.
- Remove from heat.
- Preheat oven to 425 degrees.
- Roll pie crust out to 1/4" thickness.
- Cut out circles just large enough to fit 12 3" diameter muffin cups with a bit of overlap all around the edge.
- Cut slightly smaller circles for lids.
- Press dough on bottoms and up sides of muffin cups overlapping rim slightly.
- Fill each cup with a scant 1/4 cup of filling.
- Brush edges of smaller circles with egg.
- Place smaller circles on top of filled cups; pinch pastry edges together to seal.
- Pierce top of pie cups or cut out with miniature cutters before brushing on egg wash.
- Bake at 425 degrees for 15 minutes or until filling is bubbly.

- Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking pan with parchment paper.
- Combine flour, 1 cup butter, 3/4 cup white sugar, egg, baking powder, and 1/2 teaspoon salt in a food processor; pulse until crumbled and easily formed into dough when pinched. Pour 3/4 of the dough into the prepared pan; press down with your hands until crust is even and well packed.

- In a large bowl, combine the Oats, butter, brown sugar, honey, peanut butter, and Maple syrup, and blend until all ingredients are well mixed. Place butter on your fingers and press the Oat mixture into a muffin tin until all the Oat mixture has been used - about 16 - 20 muffin spaces. Place the muffin tin(in the oven at 400 degrees for about 10 minutes, or until the crusts are golden brown. - In the mixing bowl of a stand mixer, make the whipped cream: This is a stabilized whipped cream, so it won't fall or break down like other whipped cream does after a few minutes. Place the softened cream cheese, vanilla, and half of the powdered sugar, and mix just until blended. Add the rest of the powdered sugar, and mix until smooth and creamy. Scrape down the sides of the mixing bowl with a spatula, and mix on low to blend any unmixed ingredients. Add the heavy cream, and blend the ingredients together, just until mixed. Make sure all of the cream cheese mixture is blended with the cream before whipping the cream. Turn mixer on high, and whip the cream until stiff peaks form. When the cream is whipped, remove the mixing bowl from the stand, and place in the refrigerator until time to serve.
- Before serving, top the Apple Crisp Cups with the Whipped cream, drizzle with caramel, serve, and Enjoy!
