- Preheat oven to 350 F (175 degree C).
- In a medium size bowl, toss apples with sugar, flour, cinnamon, lemon juice, and water; spread evenly into a 8x8 inch pan. In another bowl, mix together flour, brown sugar, oats, and butter; spoon mixture evenly over apples.
- In a heavy sauce pan over low heat, melt the caramels with the evaporated milk. Heat , stirring frequently, until mixture has a smooth consistency. Drizzle the caramel sauce over the top of the crumble.
- Bake in preheated oven for about 45 minutes (apple mixture will bubble and topping will be golden brown).

- For the topping:
- Pulse together flour, sugar, butter, salt, and extracts in a food processor until some large clumps form.
- Set aside 1/4 cup for filling and transfer remaining topping to a bowl. Stir in almonds.
- For the filling:
- Cook sugar in a dry 2-quart heavy saucepan over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a wooden spoon, until sugar is melted into a deep-golden caramel.
- Remove from heat and carefully add apple juice, butter, and salt (caramel will harden and steam vigorously). Cook over moderately low heat, stirring, until caramel is dissolved.

CARAMEL BAKED APPLE CRISPS

Recipe from Pillsbury. Baking apples are best. I would use something like Granny Smith, Cortlands, Jonathans, Empires, Yellow Delicious, Honey Crisp, Ida Reds or Winesap (Winesap are my favorite and are usually found late season during October). I would avoid such apples as Red Delicious or Macintosh. They are great for eating but fall apart when cooked. And one of my secrets is to make a blend of baking apples, so the flavors are more well rounded and less one dimensional. Some apples, such as the Granny Smith, have that nice bite to them but are short on sweetness other apples have and aren't that great by themselves.

- Preheat oven to 350 degrees F.
- Grease a 9x13" baking pan using nonstick cooking spray.
- Sprinkle apples with a light dusting of cinnamon.
- In a bowl, combine the oats, flour, brown sugar, cinnamon, nutmeg, and cloves. Once mixed together, cut in the cold butter. Press half of the oat mixture into your greased pan.
- Top with half of the sliced apples and half of the jar of caramel.
- Sprinkle 1 cup of the remaining oats on top.
- Repeat layers, layering the remaining apples, remaining caramel sauce, and remaining oats. Pour 1/2 cup of the apple juice all over the crisp.

THERE ARE MANY WAYS TO SHOW OFF APPLES in desserts, but warm apple crisps are always a favorite. Nine varieties of apple are grown in Washington State, including Gala, Braeburn, Cripps Pink, and Granny Smith. Use a mixture of your favorite apples, including one sweet variety, such as Fuji or Jonagold, and a more tart variety, such as Granny Smith or Cripps Pink. If you'd prefer to make one large crisp, use a 9 × 13-inch baking dish.

- Preheat the oven to 350°F.
- To make the topping, combine the brown sugar, flour, oats, cinnamon, and 1/2 teaspoon salt in a medium bowl. Using a fork, cut in the butter until the mixture resembles coarse crumbs. Set aside until ready to use.

- Once the sugar is completely melted, raise the heat to high and boil it for 6 to 10 minutes, or until the mixture turns the color of straw. Reduce the heat to medium and continue to cook for 2 minutes, or until the syrup is a deep amber color. (Pay close attention during these last 2 minutes of cooking so the syrup does not burn.)
- Remove the pan from the heat and carefully pour about one-third of the hot cream into the caramel. The mixture will bubble vigorously. Let the bubbling subside and add the remaining hot cream and the vanilla, whisking until smooth. Serve warm.
