- Preheat oven to 400 degrees F.
- In a large bowl, whisk together eggs, cream, Gruyere cheese, salt, and pepper until foamy. Melt butter in a cast iron pan over medium heat. Add the onion and potatoes and cook thoroughly. Pour the egg mixture over the top. Pull the edges away from the sides of the pan with a spatula so the eggs flow to the bottom of the pan. When the frittata is half set, add the ham.
- Transfer the pan to the heated oven. Bake for 10 minutes until puffed and golden. Shower with grated Parmesan and serve garnished with sour cream and chives.

- Preheat the oven to 400˚. In a large bowl, whisk the eggs, heavy cream, gruyere, a big pinch of salt and a few grinds of pepper until foamy.
- Melt the butter in a 10-inch cast-iron skillet over medium heat. Add the onion and the potatoes and cook, stirring, until the onion is translucent and the potatoes are fork-tender, about 12 minutes. Pour the egg mixture over the top. Pull the edges away from the sides of the pan with a rubber spatula so the eggs flow to the bottom of the pan. Cook until the frittata is half set, 2 to 3 minutes, then sprinkle in the ham.
- Transfer the skillet to the oven and bake until the frittata is puffed and golden, 10 to 12 minutes. Sprinkle with the Parmigiano-Reggiano and chives and serve with sour cream.

- Place potato and 3 tbs water in a small bowl. Cover with plastic wrap, vent and microwave 4 minutes or until tender, stirring once. Set aside.
- Heat a 10" skillet over med-high heat. Coat pan with cooking spray and add onion.
- Cover and cook 10 minutes or until lightly browned, stirring occasionally.
- Uncover and cook 10 minutes or until golden brown, stirring frequently. While onions cook, add 1/3 cup water, 1 Tbs at a time to prevent sticking.
- Stir in potato, sage, salt and pepper. Spoon into bowl and cool.
- Combine 1/4 cup cheese, milk, egg whites and eggs in a bowl.
- Add egg mixture to potato mixture and stir well.
- Preheat broiler.
- Pour mixture into skillet coated with cooking spray.
- Cook over medium heat for 7 minutes or until bottom of frittata is browned and top is almost set.
- Sprinkle remaining cheese on top and broil for 5 minutes or until cheese melts and top is set.

- Place butter and oil in a 23 cm (9 inch) non stick frypan over low heat and cook until butter has melted; add onions to pan.
- Cook onions, stirring occasionally, for 10-15 minutes or until onions are golden brown, soft and caramelized.
- Place eggs, cream and pepper in a bowl and whisk to combine; pour egg mixture over onions in frypan and sprinkle with cheese and thyme and cook frittata for 5-6 minutes or until it is almost set.
- To finish cooking, place frittata under a preheated hot grill for 1 minute; cut into wedges and serve with hot buttered toast or with a spicy chutney.
- Pumpkin Frittata - Add 1/2 cup mashed pumpkin or sweet potato when whisking eggs.

GOAT CHEESE, PROSCIUTTO AND CARAMELIZED ONION FRITTATA

- For the Onions:
- Remove the shoot and base of the onions. Peel off the onion skin and cut the onions from pole to pole.
- Cut the onion into 1/4-inch slices. Add the olive oil to a large saute pan over medium heat, then add the onions and season with the salt.
- Cook until the onions begin to wilt, about 30 minutes, stirring every 15 minutes to prevent sticking. Reduce the heat to low and continue to stir every few minutes as the onions reduce in size.
- If necessary, deglaze the pan with balsamic vinegar or water.
- Continue cooking until the onions are dark brown. Turn off the heat and scrape up any bits that are stuck to the bottom of the pan. Allow the onions to cool.
- For the Frittata:
- Preheat the oven to 350 degrees F.
- In a small bowl, add the eggs, milk, and salt and mix to combine.
- Remove the paper from the prosciutto and stack the slices. Chop the prosciutto into 1/2-inch pieces.
- Add the butter to an oven-safe 10-inch pan over medium heat. Once the butter has melted, add the olive oil and reduce the heat to medium-low.
- Pour the egg mixture into the pan. When the eggs start to set, about 10 minutes, add the Parmesan and prosciutto. Stir gently and dot the top with the goat cheese.
- Bake in the preheated oven until the frittata is set and the goat cheese is melted, about 15 to 20 minutes.
- Remove from the oven and using a rubber spatula, loosen the frittata from the sides of the pan. Slide it onto a cutting board and cut into wedges. Arrange the wedges on a serving platter and top with caramelized onions and thyme leaves before serving.

- Fry the onions very gently in half the olive oiluntil very soft and golden brown. This will take about 30 minutes. Sprinkle over the sugar and cook for a further 3-5 minutes, until caramalized. Leave to cool.
- Beat the eggs with the parmesan, thyme, parsley, salt & pepper. Stir in the onion.
- Heat the remaining oil in a heavy based frying pan. Pour in half the mixture, making sure it gets its proper complement of onion. Reduce the heat to moderate and cook until almost set through. Lift out of the pan and invert the fittata back into the pan, uncooked side down. Cook for a couple more minutes until the underneath is slighly brown.

- First boil potatoes in salted water for about 10 minutes; drain.
- Make the caramalized onions next. Melt butter in a medium skillet over medium heat. Add onions, 1/4 tsp salt, dash pepper and cook, stirring often, until onions are very soft and deep golden brown, about 12 to 15 minutes. Stir in vinegar and sugar and cook until onions are covered in a glaze, about another minutes. Cover and keep warm.
- Cut the potatoes into 1/2 inch slices, then coarsely chop.
- Heat oil in a large oven proof skillet over medium heat. Add potatoes, 1/2 teaspoon salt and 1/4 teaspoon and cook, uncovered, until potatoes are lightly browned on all sides about 12 to 15 minutes.
- Preheat the broiler.
- In a medium bowl, whisk together eggs, rosemary and about 1/2 teaspoon salt and 1/4 teaspoon pepper until well combined. Pour over potatoes in skillet and turn heat down to medium low. Once set, lift up the frittata at one side and tilt the pan to let uncooked egg get under cooked part. Cook until the top is almost set, about 5 minutes. Sprinkle with gorgonzola cheese, then put the skillet under the broiler until the top is puffed and set, about 1 minute.
- To serve, spread the caramelized onions on top of the frittata and cut into wedges. Can be served either hot or warm.

- Heat the grill to high. Put the oil and onions in a medium-to-large ovenproof non-stick frying pan and sweat on a low-medium heat with the lid on for about 10 mins, or until they begin to soften and brown a little at the edges. Reduce heat to low, add the honey, stir well, then leave to bubble for 1 min or so. Meanwhile, crack the eggs into a bowl and beat with a fork, then add some black pepper.
- Pour the eggs into the pan and cook for 5-6 mins until almost set. Break the goat's cheese into large chunks and dot over the top. Place the frittata under the hot grill for 3 mins, then shake to check that the egg is set firm and the cheese is soft and bubbling. Pop it back under the grill for 1 min or so more if needed.
- Mix the salad leaves and beetroot in a large bowl. Dress with the lemon juice and toss. Cut the frittata into quarters - cool then chill half for Frittata and salad (see 'goes well with'). Serve the rest warm with the salad on the side.

- Preheat the oven. Move the rack to the middle position on the oven and preheat to 400°F. Coat a 10-12" oven-safe skillet with olive oil spray.
