CARAMELIZED POTATOES

A very different potato recipe. It's definitely on the sweet side but very yummy! The recipe comes from a junior league cookbook.

Caramelized Potatoes image

Steps:

  • In a large covered saucepan, cook potatoes in boiling water until tender. Drain and let cool. Peel potatoes, if desired, halve any large potatoes.
  • In a large frying pan, combine butter and brown sugar, and 1/2 teaspoon salt. Cook over medium heat until melted and mixture is thickened and bubbly, stirring constantly. Reduce heat and carefully add the potatoes. Stir gently until potatoes are coated and heated through.

Caramelized Potatoes image

Steps:

  • Cover potatoes with salted cold water by 1 inch in a 3-quart heavy saucepan and bring to a simmer. Simmer, uncovered, until just tender, about 15 minutes. Drain potatoes in a colander and cool slightly. When potatoes are just cool enough to handle (but are still very warm), peel and cut into 1/2-inch-wide wedges.
  • Cook sugar in a 12-inch heavy skillet, undisturbed, over moderate heat until it begins to melt. Continue to cook, stirring occasionally, until sugar melts into a golden caramel. Add butter and salt, stirring until butter is melted. Add potato wedges, stirring gently with a wooden spoon or heatproof rubber spatula from bottom of skillet to coat potatoes with caramel (caramel will seize and form small clumps), and cook, uncovered, stirring occasionally, until potatoes are heated through and any clumps of caramel have melted to coat potatoes evenly, 10 to 12 minutes.

1 1/2 pounds small (1 1/2- to 2-inch) white boiling potatoes
3 tablespoons sugar
1 1/2 tablespoons unsalted butter
1 1/4 teaspoons salt

Can you imagine growing up eating sugar-coated potatoes? Sounds good to me! Be careful when preparing and eating this recipe, as the syrup is very hot. You may want to let them cool a bit before serving. Posted for ZWT 6.

Caramelized Scandinavian Potatoes image

Steps:

  • In a nonstick skillet, over medium-high heat, heat the sugar, water and salt until the sugar has melted and the mixture forms a light brown syrup, 5-7 minutes, stirring constantly. Reduce the heat to low, then add the potatoes, coating them with the syrup. Heat for 6-8 minutes or until the potatoes are heated through and evenly coated, stirring constantly.

1/2 cup sugar
1 tablespoon water
1/4 teaspoon salt
2 (14 1/2 ounce) cans whole potatoes, drained and dried with paper towels

CARAMELIZED NEW POTATOES

I finally got around to making these and they definitely have a different, interesting taste. I would probably decrease the sugar next time and use lemon juice instead of orange. They tasted great right out of the pan, but once they sat too long in the sauce, the taste was overpowering. I plan to make them again and tweak the recipe a little more to my tastes. If anyone has any ideas, I'd love to hear them : )

Caramelized New Potatoes image

Steps:

  • Cook potatoes in boiling water for 10 minutes or until almost tender. Drain.
  • Melt the sugar in a skillet over low heat.
  • Add butter and orange juice to pan, stirring the mixture as the butter melts.
  • Add potatoes to skillet, turning them until they are coated completely. Cook until tender.
  • Sprinkle the parsley or cilantro over potatoes and season with salt and pepper.

Caramelized Potato and Onion Salad image

Steps:

  • In a large frying pan, heat the 4 tablespoons oil.
  • Add the onion and cook gently over low heat for 20 minutes, occasionally shaking the pan.
  • In boiling, lightly salted water, cook the potatoes until tender, about 10-15 minutes. Drain; rinse in cold water, then peel.
  • Add potatoes to the onions in the frying pan with a little extra oil if necessary. Turn up heat, sprinkle sugar over and allow to caramelize.
  • Add a few tablespoons vinegar to soften the caramel, then remove from heat.
  • Sprinkle with salt, pepper and freshly chopped rosemary.
  • Serve warm or cold.
