FRY BAKES(CARIBBEAN-SAINT LUCIA)

A Caribbean breakfast treat called "Bakes." They are soft, doughy, and almost impossible to put down. Bakes are most enjoyed in the morning - think Sunday morning brunch. Despite the name, bakes are only occasionally baked. More often than not, Bakes are fried discs of dough. Enjoy plain or split open with anything from jam, cheese, meat, salt cod salad, or whatever works for you. Everyone has their own version. Cook time will vary with heat. Enjoy!

Fry Bakes(Caribbean-Saint Lucia) image

Steps:

  • Add all ingredients to the bowl of a stand mixer fitted with dough attachment, OR you can do this by hand.
  • Mix until a soft dough forms.
  • If you can stand to wait thirty minutes to an hour, let the dough rest and rise. If you can't wait, these bake up great even if you cook them right away. But they do become rather lovely little plump pillows once they do puff up.
  • Right before cooking, pat them down into relatively thin discs (about 1/4 inch thick).
  • Fry in a 1/4 inch of oil on both sides until puffy, browned, and cooked through. Try your heat set to medium and this should be about perfect. You might need to play around with your temperature to get it to cook through on the inside before the outside gets too dark.
  • Note:.
  • You could eat them straightforward, or with a lot of icing sugar or you can put raisins, dried currants, little pieces of apple, etc. in the dough before frying for a nice variation.

2 teaspoons salt
2 teaspoons yeast
2 teaspoons baking powder
1 1/2 cups water (or as needed to bring the dough together)

This recipe is so quick and easy to make, yet it adds a wonderfully tasty protein to many of my vegetarian meals. Add some steamed brown rice and sauteed broccoli with garlic for a filling and delicious meal in minutes!

Tofu Cutlets image

Steps:

  • Slice the low-fat tofu into 1/4 inch thick slices. Set aside.
  • Using a non-stick frying pan, spray the pan with olive oil cooking spray and pre-heat pan over a medium heat. (Be careful not to turn the heat up to a high setting because the cooking spray will begin to smoke in the pan - and that's not good).
  • Combine the Nutritional Yeast, Curry Powder and Thyme into a plastic sandwich bag with a zip closure and zip and shake to mix the dry ingredients.
  • Open the bag and add a tofu slice, seal the bag and shake well to coat completely.
  • Remove the coated slice of tofu from the bag using a fork and place it carefully into the heated frying pan.
  • Repeat steps 4 and 5 until all of your tofu slices are in the pan.
  • While the slices are sauteeing on one side, spritz the slices with the liquid aminos.
  • Use a spatula to flip the slices after about 2 to 3 minutes.
  • Continue cooking for another 2 to 3 minutes or until uniformly brown.
  • Remove from heat and enjoy!

Caribbean Baked Tofu Cutlets image

Steps:

  • Press tofu slices between two pans for one to two hours to squeeze out the wanter and compress the tofu.
  • While tofu is draining, combine remaining ingredients. Mix well and set aside.
  • Preheat over to 350 degrees.
  • Lightly oil a 7 X 11 inch baking pan.
  • Spoon about a third of the sauce into prepared pan. Place pressed tofu on sauce and top with remaining sauce.
  • Bake uncovered, 45 minutes.
  • NOTE: preparation time does not include the one - two hours to compress the tofu.

  • Pikliz (Haitian Pickled Vegetable Relish) Much like the Scandinavians, Haitians use these pickles to help balance out a rich dish. Wonderfully colorful, they contain cabbage, carrots, shallots, and Scotch bonnet peppers.
  • Banana Ketchup. Tomato ketchup is sweetened, and mango is used to sweeten BBQ sauce, so banana ketchup isn’t as odd as it sounds. The truth is, this is not the ketchup you’re used to.
  • Caribbean Three-Bean Salad. I think that vacation food often sticks in our minds for so long because it’s often so colorful. Three-bean salad is a summer favorite at many BBQs, but this version has to be the best.
