CASA D'ANGELO SALAD II

This recipe is based on Cyclone Momma's recipe, but I always substitute anchovy paste for the whole ones. Posting it so I don't have to remember how much paste is equal to whole anchovies! I also use Splenda most of the time, but you can use real sugar! This comes from my neighbor's favorite restaurant while she lived in Indiana...and our favorite family salad now!

Casa D'angelo Salad II image

Steps:

  • Toss lettuces, peppers, bacon, mozzarella, and 1/4 cup parmesan cheese into large mixing/salad bowl, set aside.
  • To prepare dressing, combine anchovy paste, vinegar, oregano, salt, pepper, garlic, sugar, cornstarch, and 1/4 cup parmesan cheese into blender (or use an emulsion blender).
  • Mix in blender; slowly adding 1 cup oil.
  • Refrigerate until ready to use.
  • Combine salad, croutons, and dressing, serve.

12 ounces iceberg lettuce
12 ounces romaine lettuce
1 red pepper, chopped
1 green pepper, chopped
4 slices bacon, cooked and crumbled
1 cup garlic-flavored croutons
1/4 cup parmesan cheese, shredded

Japanese Egg Salad Sandwich (Tamago Sando) image

Steps:

  • Place eggs in the bottom of a saucepan. Add 1/4 inch of water. Heat over medium-high heat and bring to a boil. Cover and steam for 11 minutes. Turn off the heat and drain water carefully; pour cold water over and let cool.
  • Mix mayonnaise, salt, sugar, mustard, hot sauce, lemon juice, and vinegar for Kewpie-style mayonnaise together. Cover with plastic wrap and refrigerate until needed.
  • Peel eggs. Mash in a shallow bowl with the side and back of a fork until desired texture is reached. Add salt, sugar, cayenne, heavy cream, and 3 tablespoons Kewpie-style mayonnaise. Stir to combine. Wrap and refrigerate until well chilled, at least 1 hour. Taste and adjust seasonings.
  • Butter bread slices and use 1/2 of the egg salad on each sandwich. Cut crusts off before serving if you're fancy.

Steps:

  • Combine the cabbage and carrot in a large bowl and pour the boiling water over the mixture. Allow the mixture to steep for 5 minutes; drain well. Return the cabbage and carrots to the bowl. Steps:

  • Dissolve yeast and 1 teaspoon sugar in 1/4 cup warm water; set aside.
  • In small bowl, beat eggs until thick.
  • Put flour in large bowl, making a well in the center. Into the well add yeast, eggs, 1/2 cup sugar, melted butter, milk, 1 cup water, and salt. Beat thoroughly to form a soft, smooth dough. Cover, let dough rise until doubled.
  • Heat oil to 375 degrees F (190 degrees C). Drop dough by big teaspoonfuls into oil, fry until golden brown. Drain on paper towels, shake in a bag of sugar to coat, and serve hot.

Steps:

  • Brown chicken in skillet.
  • While chicken is browning dice tomato, green pepper and shred cheese. Once chicken is no longer pink, add Tabasco sauce and pepper to taste (we like it slightly hot). After chicken has browned put in dish.
  • Put one tortilla on medium high skillet and add some cheese, tomato, green pepper on the tortilla. Next add some salsa and finish off with some cheese. Top off this with another tortilla.
  • Brown and then flip. Cook a little longer on that side until brown.
  • Cut into 4 pieces and enjoy!
