SOUR CREAM CHEESE CASSEROLE
This casserole combines the flavors of sour cream, cream cheese and creamy chicken and mushroom soups, all topped with buttery, round crackers. Super easy to make - not the prettiest looking dish, but tastes great and kids love it! My sister-in-law gave this to me a few years back.

Steps:
- In a large saucepan over medium low heat combine the chicken, cream of mushroom soup, cream of chicken soup, cream cheese, sour cream and 2/3 of the cracker crumbs. Mix well and cook until all blended together and cream cheese has melted.
- Preheat oven to 350 degrees F (175 degrees C).
- Transfer casserole mixture into a lightly greased 9x13 inch baking dish and top with remaining cracker crumbs.
- Bake at 350 degrees F (175 degrees C) for about 15 minutes or until crackers turn golden brown. Spoon into bowls and enjoy!

SOUR CREAM NOODLE BAKE

- Preheat the oven to 350 degrees F.
- Brown the ground chuck in a large skillet. Drain the fat, and then add the tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, and then simmer while you prepare the other ingredients.
- Cook the egg noodles until al dente. Drain and set aside.
- In a medium bowl, combine the sour cream and cottage cheese. Add plenty of freshly ground black pepper and a pinch of red pepper flakes. Add to the noodles and stir. Add the green onions and stir.
- To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, and then sprinkle on half the grated Cheddar. Repeat with noodles, meat and then a final layer of cheese. Bake until all the cheese is melted, about 20 minutes.
- Serve with crusty French bread.
- To freeze: Assemble the Sour Cream Noodle Bake in a disposable aluminum oven-proof pan and seal the top of the container with the lid or heavy foil. Seal the edges to prevent freezer burn and place in the freezer.
- To cook from frozen: Place directly in a 375-degree F oven and bake, covered, for 45 minutes. Remove the lid and bake until lightly brown and bubbly, about 20 minutes more.
SOUR CREAM CASSEROLE
This is a family favorite. My mom found this in a Catholic school cookbook. Even our exchange student from Finland loved it - he made my mom write down the recipe so his mom could make it when he went back home. Today, my children love it. My 5 year old says it is his favorite dish. If you want to make it healthier, you can use low sodium and low fat/no fat ingredients.

- Brown ground beef and onion, drain off excess grease.
- Boil noodles according to package directions.
- Combine soups, corn and sour cream in a casserole dish.
- Add ground beef mixture and noodles.
- Stir until well combined.
- Bake for 1 hour at 350ºF.
SOUR CREAM POTATOES CASSEROLE
My grandmother has made this every holiday since I was 10 or so -- it is my very favorite holiday dish, and I now make it to take to my DH's family events! It's best if you refrigerated it OVERNIGHT before baking; the most time-consuming active part is the actual grating of the potatoes -- I use a large-hole grater.

- Boil whole potatoes for 15 minutes.
- Cool; peel and grate into large bowl.
- (I grate the onion while the potatoes boil).
- Add remaining ingredients to potato/onion mixture; mix well.
- Place in greased 9x13 baking dish, or equivalent, and cover.
- Refrigerate overnight.
- Bake uncovered at 350 degrees for 45-60 minutes, until brown& bubbly.

- Cook 6 medium potatoes in boiling salted water to cover.
- Peel and slice.
- Pack in layers in a buttered 6 cup baking dish.
- Melt 2 tablespoons butter in a small saucepan, add onion and cook until golden.
- Off the heat, add 1 cup sour cream with salt and pepper.
- Pour the sour cream mixture over the potatoes and sprinkle with 1/2 cup Cheddar or Swiss cheese.
- Bake at 375°F about 30 minutes, or until the scallop is hot and bubbly and the topping is browned.

LAWRY'S SOUR CREAM TORTILLA CASSEROLE
This recipe is an inexpensive but filling side dish that was served at Lawry's California Center before closing its doors. It's from "Dear S.O.S. Thirty Years of Recipe Requests to the Los Angeles Times". It isn't low cal by any means, but every dieter needs a day off once in a while--and this is a splurge that is worth every bite! Heck, I'll run an extra mile for this!

- Saute 1/2 cup onion until tender.
- Add tomatoes, seasoning mix, and chile salsa.
- Simmer 15 to 20 minutes.
- Set aside to cool.
- Fry tortillas lightly in small amount of oil, just until soft.
- Pour 1/2 cup sauce into bottom of 13x9-inch baking pan.
- Arrange layer of 4 tortillas over sauce (tortillas can overlap).
- Top with 1/3 of remaining sauce, 1/3 of remaining onions, and 1/3 of cheese.
- Repeat layering procedure twice.
- Combine sour cream and seasoned salt, spread over cheese to edge of pan.
- Sprinkle lightly with seasoned pepper.
- Bake at 325 degrees for 25 to 30 minutes.
- Cut into squares.
