- Preheat oven to 425 degrees.
- Pour 2 teaspoons olive oil nto baking dish large enough to hold 6 chicken pieces. Rub oil over dish with your fingers so it's completely but lightly coated. Set aside.
- Rinse chicken in cold water and pat dry.
- In wide bowl or plate, season flour with salt and pepper. Dredge each piece of chicken through flour so it's completely coated. Tap chicken against bowl to jar loose excess flour and set pieces aside. Discard flour.
- Crush corn flakes by placing them in large resealable plastic bag, carefully pressing bag to push out air. Seal up bag and run over flakes with a rolling pin. Open bag and pour crushed flakes into a wide bowl or plate.
- In large bowl, mix buttermilk, mustard, ground mustard, red pepper, paprika, sage and sesame seeds. Give each floured chicken piece a good buttermilk bath and then roll in corn flake crumbs.
- Arrange chicken pieces in oiled baking dish and slide the dish into hot oven. Cook for 15-20 minutes, lower heat to 375 and cook for another 25-30 minutes until cooked through and crispy. Juices should run clear when meat is pierce with a knife. Serve.

CRISPY BAKED CHICKEN
For pull-apart tender chicken with crisp, deeply spiced skin, rub it with a spicy-sweet mix and roast it low and slow while you're doing something else. Because this chicken is cooked at a moderately low temperature, the spices will bloom but not burn, and the chicken fat will render slowly and completely (which means you don't need any oil). The smoky rub in this recipe will turn the chicken skin into what tastes like a barbecue potato chip, but you can use other spice blends, too, like garam masala or Montreal steak seasoning. Just be sure your mix includes sugar for browning and salt for accentuating flavors. Whole chicken legs (with the thigh and drumstick attached) provide a more generous portion of juicy meat and skin that shatters, but a mix of drumsticks and bone-in thighs work, too.

- Heat the oven to 325 degrees. In a small bowl, stir together the brown sugar, paprika, salt, black pepper and cayenne with a fork or your fingers. Rub the spice mix all over the chicken. (You can do this step 1 to 12 hours ahead. Refrigerate uncovered, then bring to room temperature before cooking.)
- Place the chicken on a parchment-lined baking sheet, skin side up. Bake, without flipping, until the chicken is cooked through and the skin is crisp, 1 hour to 1 hour 15 minutes. Eat the chicken with pan drippings spooned over top.
BAKED FRIED CHICKEN
This is just a variation of the way my dad used to make fried chicken. Frying at high temperature for a short period of time (just enough to brown the outside) and then baking it to finish makes for incredibly tender and juicy chicken.

- Heat oil on medium high heat in large skillet or frying pan (375 degrees).
- Preheat oven to 300 degrees.
- Combine dry ingredients.
- Moisten chicken pieces with water (if necessary).
- Dredge chicken in flour and crumb mixture.
- Quickly fry chicken on all sides until browned and crisp.
- Place in covered baking dish and bake at 300 degrees for 30 minutes.
- Remove cover and bake additional 20-30 minutes to re-crisp chicken, serve.

- Add 1/2 tsp of the poultry seasoning to the milk.
- Combine all the other spices with the cornflake crumbs and place in a plastic bag.
- Wash chicken and pat dry.
- Dip chicken in the milk and shake to remove excess, then quickly shake in the bag with the seasonings and crumbs.
- Refrigerate up to 1 hour.
- Preheat oven to 350°F.
- Remove chicken from the fridge and sprinkle with paprika for colour.
- Evenly space chicken on greased baking pan.
- Cover with aluminum foil and bake for 40 minutes.
- Remove foil and continue baking for an additional 30-40 minutes or until the meat can be easily pulled from the bone with a fork.
- Drumsticks may require less baking time than breasts.
- (DO NOT TURN CHICKEN DURING BAKING).
- Crumbs will form crispy skin.

- Pat chicken dry with paper towels. Mix cinnamon, salt and pepper in a small bowl, then rub all over the chicken pieces.
- Using a deep, 12" wide skillet, heat the oil until it shimmers (if you have a smaller pan, make 2 batches, using half the oil for each). Add the chicken pieces, being careful not to overcrowd, and cook until very brown, 4-5 min per side.
- Mince 3 cloves of garlic. Reduce heat to medium-high and add minced garlic and onions. Saute until onions soften and begin to brown, about 5 minute Deglaze with 1/2 c water or broth, using a wooden spoon to scrape up any browned bits from the bottom of the pan.
- When the deglazing liquid has evaporated to nearly dry, add the remaining 1 1/2 c water or stock, the tomato paste, the Italian seasoning and the remaining 2 cloves of garlic, minced.
- Return the chicken to the pan, nestling it down in the sauce. If the sauce does not come 3/4 of the way up the side of the chicken pieces, add more water or broth. Cover and simmer over medium-high heat until tender, about 30-40 minutes. Season the sauce with salt and pepper. Sprinkle with Parmesan cheese. Serve with cooked orzo or rice.
