OVEN ROASTED SHRIMP WITH TOASTED GARLIC AND RED CHILE OIL

Oven Roasted Shrimp with Toasted Garlic and Red Chile Oil image

Steps:

  • Preheat oven to 500 degrees F.
  • Place the shrimp in a cazuela or an ovenproof casserole and season with salt and pepper, to taste. Drizzle olive oil over shrimp, add crushed garlic, and toss to coat. Roast in the oven until pink and cooked through, about 4 to 5 minutes. Drizzle generously with Red Chile Oil and sprinkle with thyme and Toasted Garlic Chips. Serve with crusty bread.
  • 1 cup olive oil
  • 6 dried chiles de arbol, lightly toasted and crushed
  • 6 cloves garlic, finely chopped
  • Pinch salt
  • 3 sprigs fresh thyme, leaves removed
  • Blend all ingredients including the thyme leaves in a blender until smooth.. Strain through a fine mesh strainer into a bowl.
  • 1 cup olive oil
  • 8 cloves garlic, thinly sliced
  • Salt
  • Heat the oil in a small skillet until it begins to shimmer. Add the garlic and cook until the slices begin to brown and curl. Remove with a slotted spoon to a plate lined with paper towels and season with salt.

24 large shrimp, shelled and deveined
Salt and freshly ground pepper
Extra-virgin olive oil
2 cloves garlic, crushed
Red Chile Oil, recipe follows
1 tablespoon fresh thyme leaves

ROASTED SHRIMP IN CAZUELA image

Steps:

  • Preheat the oven to 400 degrees F. Toss together the oil, chiles, thyme, garlic and some salt and pepper on a baking sheet. Roast until the oil is fragrant, about 10 minutes. Remove the baking sheet from the oven and add the shrimp, tossing with tongs to coat in the mixture. Roast until the shrimp are pink and just cooked through, about 8 minutes. Remove and drizzle with a splash of sherry vinegar and garnish with parsley. Serve with baguette slices.

5 sprigs fresh thyme
4 cloves garlic, thinly sliced

Steps:

  • Peel the shrimp, discarding head and tail. Put the oil, garlic, and chili in a small flameproof ramekin. Put it on the heat until the oil is very hot. Add the shrimp and cook just until they turn pink and curl slightly, about two minutes. Remove from heat, add the paprika and serve immediately, while still sizzling, accompanied by bread to soak up the flavorful sauce.

In tapa bars this is usually prepared in individual servings. The tiny earthenware ramekin (cazuela) is placed directly on a gas or electric burner. It can be made in a larger quantity, but never sizzles quite so satisfactorily.

A Cuban-American friend of mine in Jersey City got this off of a website dedicated to Cuban cuisine....it's been a year since I made this, but intend to try it again, it was so delicious. You try it and let me know. It's more convenient to use cooked (not canned!) shrimp. You can also use half-crab and half-shrimp or lobster as well! Enjoy!

Cuban Shrimp Casserole (Caserola De Camarones) image

Steps:

  • Saute the onion, garlic and green pepper in the butter.
  • Add the shrimp, salt and pepper.
  • Stir in the canned tomatoes.
  • Add the cooked rice.
  • Place in casserole dish and bake at 375oF for 30 minutes.
  • If desired, sprinkle cheese on top.
  • Let cool for five minutes, then serve.
