CENTRAL AMERICAN ROASTED CHICKEN

I use a traditional sauce used in central american to roast chicken or turkey with. Add only enough sauce to cover the chicken because if you add too much sauce to the roasting pan, you will end up braising the chicken in sauce instead of roasting it.

Steps:

  • Preheat oven 350°F.
  • Put all veggies, tomato sauce and chicken bullion in blender and blend until smooth.
  • Wash chicken and pat dry. Season chicken with salt, pepper and cumin. Place in a roasting pan and using your hands, rub butter in the pockets underneath the chicken skin. Pour enough sauce over chicken to cover it completly but not so much that it pools up at the bottom of the roasting pan. Cover with foil.
  • Bake about 1 hr and take foil off. Baste chicken with pan juices and let cook about 20 more minutes or until chicken is brown and cooked thru (usually about 170-180 f. with a meat thermometer).

1/2 cup mayonnaise
1 whole large chopped tomato
1/2 chopped green bell pepper
1/2 chopped white onion
1 chopped celery
4 sprigs cilantro
1/2 cup tomato sauce
3 -4 tablespoons butter
1 tablespoon chicken bouillon powder
1 whole roasting chicken
salt, to taste
pepper
cumin

CENTRAL AMERICAN YELLOW RICE AND CHICKEN

Delicious AUTHENTIC rice recipe from an experienced AUTHENTIC central american cook! I use this side dish for family gatherings and special occasions. This recipe was handed down to me from my grandmother and hope you enjoy it as much as I do! It calls for PARBROILED rice not regular long grain rice. It is better to use parbroiled as it will not become all mushy and pasty as regular rice does when you make the mistake of adding too much water (as many of us rice cooks do!). I reccomend using chicken breast and not any other dark chicken meat because when you shred dark meat, you get really ugly dark parts and it looks kinda disgusting when served with rice (or any other side dish for that matter). Chicken breast comes out white and clean. When it comes to adding the curry powder, I usually add about 3 tablespoons because I like my rice to come out a nice darker yellow color and I enjoy the taste of curry but it may not suit your palate. You should taste the rice broth as you add the curry to determine if you have added enough curry to suit your taste buds. Don't forget to salt your rice DURING cooking time! If you notice that the water that you added to cook the rice has absorbed and the rice is still a little hard then don't worry and add another 1/4 cup water and extend cooking time about 10 min or until water has been absorbed. You can also add small shrimp to this recipe to give it a little seafood twist (it also tastes great!).

PERUVIAN-STYLE ROAST CHICKEN WITH TANGY GREEN SAUCE

This cumin- and paprika-spiced number gets added punch from an addictively tangy green sauce and a crisp, bright avocado and cucumber salad. Spatchcocking-an easy and fun technique that involves removing the backbone to "flatten" the bird before cooking-makes for quick roasting and produces juicy results.

Steps:

  • Roast the chicken:
  • Arrange rack in middle of oven; preheat to 400°F. Mix garlic, cumin, oil, paprika, pepper, oregano, 1/2 tsp. salt, and finely grated zest from 1 lemon in a medium bowl. Quarter zested lemon; set aside 2 quarters. Squeeze juice from 1 whole lemon and remaining 2 quarters to yield 2 Tbsp. juice; stir into spice mixture.
  • Place chicken breast side down on work surface. Spatchcock chicken by cutting along both sides of backbone with kitchen shears. Remove backbone; reserve for stock. Turn chicken breast side up and splay open. Press down on breastbone with palms until you hear it crack and chicken is as flat as possible. Pat chicken dry with paper towels. Rub chicken all over with 2 reserved lemon quarters. Squeeze juice over bird, then rub skin all over with inside of rinds.
  • From both edges of cavity, loosen skin from breasts and thighs, being careful not to tear skin. Using your fingers, gently spread 2 heaping Tbsp. spice mixture under skin (reserve remaining spice mixture), then season chicken all over with remaining 1 tsp. salt. Transfer chicken, spread flat and skin side up, to a roasting pan or large skillet.
  • Roast chicken 20 minutes, then brush with spice mixture and pan juices. Continue roasting, basting with spice mixture and pan juices every 20 minutes, until juices run clear when thigh is pierced with a fork or an instant-read thermometer inserted into thickest part of thigh registers 165ºF, 50-60 minutes total.
  • Transfer chicken to a cutting board and let rest 15 minutes, reserving pan juices.
  • Make the green sauce:
  • Purée cilantro, jalapeños, garlic, oil, lime juice, and salt in a blender until combined. Add mayonnaise and purée until well blended. Transfer to a small bowl, cover, and chill until ready to use.
  • Make the salad:
  • Gently toss cucumbers, avocado, scallions, lime juice, oil, salt, and 1/2 cup cilantro in a large bowl. Sprinkle with more cilantro.
  • Carve chicken and transfer to a platter; baste with reserved pan juices. Serve with green sauce and salad alongside.
  • Do Ahead
  • Green sauce can be made 5 days ahead. Cover and chill.

For the chicken:
3 garlic cloves, finely chopped
1 tablespoon ground cumin
1 tablespoon olive oil
1 tablespoon paprika
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
1 1/2 teaspoons kosher salt, divided
2 lemons
1 (4-4 1/2-pound) whole chicken
For the green sauce:
1 cup (packed) cilantro leaves with tender stems
1-2 medium jalapeños, coarsely chopped
1 garlic clove, finely chopped
1 tablespoon extra-virgin olive oil
2 1/2 teaspoons fresh lime juice
1/4 teaspoon kosher salt
1/3 cup mayonnaise
For the salad:
1 English hothouse or 2 Persian cucumbers, cubed
1 firm-ripe avocado, cubed
3 scallions, thinly sliced
1 tablespoon plus 1 teaspoon fresh lime juice
1 tablespoon extra-virgin olive oil
3/4 teaspoon kosher salt
1/2 cup cilantro leaves with tender stems, coarsely chopped, plus more for serving

CENTRAL AMERICAN TACOS

Wonderful authentic tacos I first tasted in Guatemala at a taco stand. May be a little different to the American taste, but the green sauce is the crowning touch. The flavors are the subtle flavors of Central America.

Steps:

  • Place potatoes into a large saucepan, and fill with enough water to cover. Bring to a boil, and cook until tender, about 10 minutes. Drain.
  • While the potatoes are cooking, crumble the ground beef into a skillet over medium-high heat. Cook for a few minutes, then stir in the onion. Cook until meat is no longer pink, and the onion is tender. Drain excess grease, and gently stir in the potatoes. Season with salt and pepper to taste.
  • Place the tomatillos, garlic, jalapeno, and cilantro into a blender. Squeeze avocados out of their skins into the blender. Process until smooth.
  • Heat tortillas in a skillet until warm and flexible. Spoon on some of the meat mixture, and top with the sauce. Roll up, and enjoy.

  • Costa Rica. If you're traveling to Costa Rica for the first time, you're probably curious about Costa Rican food. Fortunately, food in Costa Rica isn't that different from food in the United States with a few notable exceptions like chilera (a spicy dressing made with pickled onions, peppers, and other vegetables) and tres leches cake (a cake soaked in three kinds of milk).
  • Honduras. On the Caribbean coast or in the Bay Islands, seafood and anything made of coconut dominate Honduran cuisine. No travel taste test of Honduran food is complete without fresh fish, shrimp, lobster, or the endlessly versatile conch (caracol in Spanish).
  • Panama. Because of Panama’s diverse Spanish, American, Afro-Caribbean, and indigenous influences, Panamanian cuisine ranges from the familiar, like snow cones and tropical fruit, to the ultra-exotic, like carimanola—a fried yucca roll stuffed with meat and boiled eggs.
  • Guatemala. Guatemalan food and drink is primarily influenced by the country's Mayan and Spanish cultures. Nowadays, international influences are found in Guatemala's food as well, such as Chinese, American, and the vegetarian movement.
  • El Salvador. El Salvador's food and drink is particularly distinctive among the diverse cuisines of Central America as a blend of only two cultural influences: the indigenous and the Spanish.
  • Nicaragua. Nicaraguan cuisine is representative of the diversity of its residents. It is the results of years of Spanish, Creole, Garifuna, and Indigenous Nicaraguan cultures melting into one.
  • Belize. When it comes to diversity in Central American cuisine, Belize is the definite winner. Belize is the ultimate melting pot of cultures, including Creole, Mayan, Garifuna, Spanish, British, Chinese, and American (whew!).
