  • Whisk together the garlic, mustard, vinegar, lemon juice, honey, hot sauce, salt, and pepper in a large bowl. Slowly whisk in the olive oil until the dressing is emulsified. Alternatively, you can combine all the ingredients in a blender or a food processor and puré until smooth.

This sauce has a great flavor for almost any meat. It is a little sweet and a little spicey. Not hot, but more like honey mustard in taste. It is fabulous on ham or hot dogs. I got this recipe from my mom and don't know where she got it. Very easy to make. Hardest part will be finding Champagne wine vinegar although more stores are starting to carry it now.

Grilled Salmon in Champagne Sauce image

Steps:

  • Heat grill to medium heat.
  • Paint each fillet on both sides with olive oil; salt and pepper.
  • Place on grill and cook for approximately 3-7 minutes on each side, depending on your choice of doneness.
  • Remove to heated platter and cover.
  • Heat 1 teas. olive oil in saute pan over medim heat; add shallots.
  • Saute about 1 1/2 minutes to soften.
  • Reduce heat to med-low.
  • Stir in Champagne, mustard, salt(if desired) and tarragon.
  • Blend well.
  • Remove from heat, stir in sour cream.
  • Place half of sauce on heated serving plate; top with salmon fillet and garnish with very light sprinkle of tarragon.
  • Serve.

Bring to a boil, then reduce heat to medium. Stir in cream and let simmer until sauce starts to thicken, about 3 minutes. Add chicken back into the pan. Simmer gently until chicken is heated through and sauce has thickened, about 5 minutes. Taste test and adjust salt and pepper, if desired. Serve chicken with sauce.

CHAMPAGNE-MUSTARD SAUCE 1 T minced shallots 1 T oil ½ c dry champagne 2 T butter 2 T flour 1 c half and half 1 T Dijon mustard 2 T butter, softened Sauté shallots in hot oil until tender; add champagne. Bring to a boil, and boil until mixture is reduced to ¼ cup. Strain liquid, discarding shallots, set aside.
