"THIS BREAD is the perfect accompaniment to a piping-hot bowl of chili. In addition to a garnish of cheddar cheese on the chili, which Mom often added, we had her wonderful bread, chock-full of cheese flavor. Sometimes I'll make the dough into rolls or soft breadsticks."

- In a large bowl, dissolve yeast in warm water. Add the cheese, chives, butter, sugar, salt, thyme and 3 cups flour. Beat on medium for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Shape into two loaves and place in greased 9x5-in. loaf pans. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 350° for 40-45 minutes or until golden brown. Remove from pans to cool on a wire rack.

- Preheat the oven to 400 degrees F and butter a 9-by-13-inch baking dish. Whisk the flour, cornmeal, baking soda and salt in a large bowl.
- Beat the butter in a large bowl with a mixer on medium-high speed until light and fluffy, about 2 minutes. Add the sugar and beat until well combined. Add the eggs, one at a time, beating well after each addition. Add the flour mixture in 3 batches, alternating with the buttermilk, beginning and ending with the flour mixture. Add the cheese, scallions and chives and beat until just combined.
- Transfer the batter to the prepared baking dish; smooth the surface. Bake until golden brown around the edges and a toothpick inserted into the center comes out clean, about 20 minutes. Serve warm or at room temperature.

IRISH SODA BREAD WITH CHEDDAR AND CHIVES

- Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
- Add the flour, baking powder, baking soda, salt, garlic powder, onion powder and pepper to a large bowl. Whisk to break up any lumps of flour. Add the Cheddar and chives. Stir to evenly combine the ingredients. Set aside.
- Add the buttermilk and egg to a 2-cup measuring cup. Use a fork to scramble the egg into the buttermilk.
- Add the buttermilk mixture to the bowl with the flour mixture and use a rubber spatula to mix the ingredients until a shaggy dough forms. Turn the dough out onto a lightly floured work surface. Lightly flour your hands and knead the dough until it comes together, about 1 minute. Flip the dough so that it is seam-side down and transfer it to the prepared baking sheet. Use a serrated knife to cut a 1/2-inch-thick X on the top of the dough.
- Bake until the bread is golden brown, 25 to 30 minutes.
- Let cool slightly on a wire rack before slicing.
DELICIOUS CHEDDAR CHIVE BREAD FOR THE BREAD MACHINE (ABM)
This is another quick and easy and delicious bread machine recipe! This recipe was given to me by my neighbor, who always is the beneficiary of loaves of bread from me! You can substitute 1 1/2 teaspoons bread machine yeast for the active dry yeast. Do not use the delay bake function for this bread. - Weigh out your flour; you'll find its weight by toggling to "ounces" at the top of the ingredient section above. Or measure it by gently spooning it into a cup, then sweeping off any excess. Combine the flour with the remaining ingredients and mix to form a shaggy dough.
- Knead the dough - by hand, mixer, or bread machine set to the dough cycle - until it forms a smooth, somewhat tacky ball, adding more flour or water if necessary.
- Place the dough in a lightly greased bowl, cover, and let it rise for 60 to 90 minutes, until it's puffy though not necessarily doubled in bulk.
- Lightly grease a 10-cup party bundt pan or other tube-style pan.
- Gently deflate the dough and form it into a large ball. Use your fingers to pierce a hole through the center of the ball and place the resulting dough ring into the prepared pan.
- Cover the pan with greased plastic and let the dough rise for 60 to 90 minutes, until it's puffy and starting to fill the pan. Towards the end of the rising time, preheat the oven to 350°F.
- Uncover the pan, and bake the bread for 25 to 30 minutes, until it's golden brown on top; a digital thermometer inserted into the center will read 190°F.
- Remove the bread from the oven, allow it to cool for 10 minutes in the pan, then turn out onto a rack to cool completely.
- While you're waiting for the bread to cool, cook and chop the bacon (we recommend baking it), and chop the chives.
- In a medium bowl combine the bacon with the cheese.
- Once the loaf has cooled, slice it down to within 1" of the base (you'll want the bottom to remain unsliced in order to maintain the ring), using the scalloped pattern as a guide if the loaf was baked in a party bundt pan, or cutting at 1" intervals if it was baked in another tube-style pan.
- Gently pull each section of the bundt away from its neighbor and fill the cavity with a heaping tablespoon of the bacon-cheddar mixture.
- Once all the cavities have been filled, sprinkle the chopped chives over the entire loaf.
- Tent the filled bread with foil, and return it to a 350°F oven. Bake the filled bread for 25 to 30 minutes, removing the foil for the final 5 to 10 minutes of baking, until the cheese has fully melted into the cavities.
- Remove the filled bread from the oven and allow to cool slightly before serving.
- Store any leftover bread in the refrigerator for a day or so; freeze for longer stor.

CHEDDAR AND CHIVE ROUNDS

- Stir together Cheddar, mayonnaise, onion, and salt and pepper to taste.
- Cut out a round from each bread slice with cookie cutter. Arrange 8 bread rounds on a work surface and divide half of Cheddar mayonnaise among them, spreading evenly to edges. Top each with a plain round. Cover sandwiches with plastic wrap and make more in same manner.
- Spread a thin layer of butter around cut edges of rounds and roll in chives, pressing with your fingertips.

- In a small saucepan, heat 3/4 cup of the milk until warm to the touch but not hot (about 105°F to 115°F on an instant-read thermometer). Transfer the warm milk to a large mixing bowl and sprinkle the active dry yeast on top. Set aside for about 10-15 minutes to activate the yeast.
- In a small saucepan, melt the butter. Let the butter cool, then transfer to a medium bowl. Add the eggs and beat together. Using your electric mixer, stir the egg mixture into the yeast mixture until combined. Slowly add the flour mixture and mix on low speed. (At this point, if you feel like the dough is too dry, you can add a 1/4 cup milk. You want the dough to be somewhat sticky). When well combined, gently fold in the cheddar cheese and chives. You can do this with your mixer or by hand.
- Remove your dough from the mixer and turn the dough onto a floured work surface and knead the dough for about 2-3 minutes only.
