- Rub garlic clove over the bottom and sides of a fondue pot; discard garlic and set pot aside. , In a large saucepan, combine the tomatoes, wine, butter, basil and cayenne; bring to a simmer over medium-low heat. Reduce heat to low. Toss cheese with flour; gradually add to tomato mixture, stirring after each addition until cheese is melted., Transfer to prepared fondue pot and keep warm. Serve with bread cubes and shrimp.

- Heat a medium, deep skillet over medium heat. Add oil and butter. When butter melts into the oil, add flour and combine. Gently cook, whisking flour and butter together, until smooth and flour has had a chance to cook, about 3 minutes. Slowly add milk while continuing to whisk. Gently bring milk to a bubble while stirring frequently. Allow the milk to thicken a bit, then stir in 2 cups of shredded Cheddar cheese a handful at a time. Season sauce with nutmeg and cayenne. Taste and add a little salt, if you like. Add cooked pasta to sauce and coat completely by turning over and over in the cheese sauce. Transfer to a flameproof baking dish and top with remaining cheese. Place baking dish under a hot broiler and brown the Cheddar cheese on top.

- Cook tomatoes and garlic in butter in a 4-quart heavy saucepan over moderately low heat, stirring occasionally, until most of liquid is evaporated, about 5 minutes.
- Stir together wine and cornstarch in a small bowl, then stir into tomatoes and simmer gently, stirring, 1 minute.
- Discard garlic.
- Add Cheddar by handfuls, stirring until completely melted.

TOMATO AND CHEDDAR TARTLETS

- Preheat the oven to 375 degrees F.
- Unroll 1 pie dough into a round. Arrange three 4 1/4-inch nonstick tartlet pans on the dough and use a paring knife to cut a circle of dough around each that is about 1/2 inch larger than the pan; these don't have to be perfect, but you want to make sure you cut enough excess dough to fill the pan and up the sides. Press the dough evenly into each pan; if any excess dough goes over the top, simply use the top edge of the tartlet pan to cut it away. Use a fork to dock the bottom of the pie crusts. Repeat this process with 3 more tartlet pans and the remaining pie dough. Place the 6 tartlet pans on a baking sheet and put in the freezer for 10 minutes.
- In a medium bowl, toss together the cherry tomatoes, garlic, salt and pepper. Let the tomatoes sit for 10 to 15 minutes for the flavors to combine.
- Bake the crusts until the dough is cooked part of the way through without any color and bubbles form on the bottom and sides, about 6 minutes. Let cool slightly.
- To each tartlet, add about 3 tablespoons of grated Cheddar and spread evenly over the bottom. Top the cheese in each with 8 tomato halves cut-side up, making sure to get some garlic with each tomato. Bake until the crusts are golden brown, the cheese is bubbling and the tomatoes are softened but have not burst, about 30 minutes. Let cool until cool enough to handle, 5 to 10 minutes. Remove the tartlets from the tart pans and garnish with small basil leaves.
- These tartlets can be stored in the refrigerator after they have cooled completely and reheated in the oven the next day for great leftovers!

CHEDDAR TOFU
We call this Cheddar tofu because of the texture. Imagine soft tofu, silky against your tongue, infused with a rich Cheddar flavor. It's pretty awesome stuff. You can use it in exactly the same way that you would real tofu. It happily sits center stage as the main component in a salad or soup, or it can be diced and incorporated into a dish much like gnocchi or small dumplings. We use both the high- and low-acyl gellans at a ratio of 0.2 percent of the weight of the other ingredients. The gellan makes it relatively heat stable, and it holds its shape beautifully when cut or molded.

- Preheat the oven to 200°F (95°C). Set a 9-inch square Pyrex baking dish in the oven to warm. (Warming the dish will prevent the hot Cheddar mixture from seizing when it is poured into the dish.)
- Put the milk and the cheese in a heavy-bottomed pot set over medium heat. Bring the mixture to a simmer and cook for 5 minutes, until the cheese is melted. Turn off the heat, cover the pot, and let steep for 20 minutes. Strain the mixture through a cheesecloth-lined strainer, pressing gently on the solids to extract the milk from the solids. Discard the solids. Weigh out 385 grams of Cheddar milk. Discard any extra.
- Put the Cheddar milk, tofu, and salt in a blender. Puree the mixture until it is silky-smooth. While the blender is running, sprinkle both gellans into the vortex to evenly disperse the hydrocolloids. This will take about 30 seconds.
- Pour the gellan mixture into a heavy-bottomed pot set over medium heat, stirring to prevent the mixture from sticking to the bottom of the pot. Continue to cook the mixture, stirring constantly, until it reaches 194°F (90°C). At this temperature the gellan will be fully hydrated.
- Quickly pour the mixture into the warmed baking dish. Pour the liquid as quickly as you can without splashing, keeping the flow as smooth and even as possible because the gellan sets rapidly once removed from the heat. Set the baking dish on the counter and let the Cheddar tofu cool in the dish.
- When the tofu is cold, remove it from the dish and trim off any rounded edges. Cut it into 1/2-inch (1.25-centimeter) cubes and reserve on a baking sheet in the refrigerator until ready to use. It can be kept, covered, in the refrigerator for up to 3 days.

- Heat oil in a large saucepan over medium heat. Add onion and garlic, and sauté until lightly softened, about 3 minutes. Stir tomato paste and flour into onion for 1 minute. Slowly whisk in milk and broth to avoid lumps. Stir in tomatoes and season lightly with salt and pepper. Bring to a simmer and cook, stirring occasionally, for 10 minutes.
- Using a hand blender, purée soup until smooth. Press through a fine mesh strainer to remove seeds. Return soup to pan and bring back to a simmer. Stir in Worcestershire sauce and 3/4 cup cheese until melted.
- Ladle soup into bowls. Garnish each with remaining cheese and fresh thyme leaves.
