- In a small bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Spoon 1/4 cup pudding into each of four parfait glasses. , Layer each with 1/3 cup cookie crumbs and 1/4 cup pie filling. Top with the remaining pudding and cookie crumbs. Refrigerate for 1 hour before serving.

CHERRIES JUBILEE ICE CREAM PARFAITS

- In a saucepan over medium heat, combine the cherries, sugar, and orange juice. Bring it to a simmer. In a small bowl, stir together the cornstarch with 2 tablespoons water to make a slurry. Stir the slurry into the cherry mixture and simmer until it thickens, about 2 minutes. Remove from the heat and let cool.
- In parfait glasses, put a small scoop of ice cream, a spoonful or 2 of the cherry mixture, and some of the cookie pieces. Repeat 2 to 3 times to fill up the glass. Serve immediately.

- Make the Maraschino cherries:
- Set a mesh sieve over a medium bowl. Bring cherries, sugar, lemon juice, and 2/3 cup water to a simmer in a large saucepan over medium-low heat, stirring occasionally; cook until cherries have released their juices and are softened but still intact, 20-25 minutes. Pour cherries into prepared sieve, letting juices collect in bowl. Set cherries aside.
- Return juices to same saucepan and bring to a simmer over medium heat. Cook until liquid is reduced to 1 1/2 cups (it will be a thin syrup at this point), 15-20 minutes. Remove from heat, add reserved cherries, and stir in liqueur and almond extract. Transfer maraschino cherries to jar, cover, and chill at least 24 hours before using.
- To assemble:
- Whisk yogurt, sour cream, powdered sugar, and salt in a large bowl until smooth; fold in meringue cookies.
- Layer maraschino cherries, fresh cherries, and yogurt mixture into 8 glasses, dividing evenly.
- Do Ahead
- Maraschino cherries can be made 2 weeks ahead. Keep chilled.

- Warm the wine in a small saucepan. Add the cherries and set aside for 30 minutes. Drain the cherries and spread them on paper towels to remove excess moisture.
- Place half the cherries in each of two large-stemmed goblets. Sprinkle with half the brown sugar.
- If using fromage blanc, beat it lightly to smooth it. With the cottage cheese, puree it in a blender or force it through a sieve to smooth it. Mix either cheese with the yogurt. Spoon the cheese mixture over the sugared cherries in the goblets, then add the remaining cherries and sprinkle with the rest of the brown sugar on top. Serve at once.

LOW-FAT CHERRY CHEESE PARFAITS
I took a cooking class many, many years ago when I got my food processor. This recipe is one of the gems that I got from that class. It was initially called a pie, but didn't have a crust. So I changed the presentation and called it a parfait. Don't let the cottage cheese in the recipe scare you. I absolutely hate cottage cheese, but this is a keeper. The name shown on the recipe is Helen Thorkelson. Cook time is chilling time.

Steps:
- Drain cherries, reserving liquid.
- Combine constarch and reserved cherry liquid in a small saucepan.
- Cook over medium heat, stirring constantly until very thick.
- Remove from heat and add cherries.
- Stir in 3 packets of sweetener and almond extract, then set aside.
- Soften gelatine in cold water, then cook over low heat until dissolved.
- In a food processor, process cottage cheese and vanilla extract until smooth.
- Add gelatine and remaining 6 packets of sweetener.
- Put a layer of gelatin in each of 8 parfait glasses, then add a layer of cherries.
- Repeat layers one more time.
- Chill at least 3 hours.
- Each serving is one fruit exchange and 1/2 serving protein.

Looking back in my book I found another good one from "Taste of Home Quick Cooking". I don't own parfait glasses so I use half pint canning jars instead; besides it comes with its own lid. This recipe will be very versatile in that you can change to most any flavor of pie filling. These would be great in the summer and there is no cooking so it won't heat the house!

- Combine 1 cup pie filling and 8 ounces of yogurt.
- Place about 2 tablespoons of mixture in each glass of 6 glasses.
- Top each with 1-2 tablespoons of the graham cracker crumbs.
- Next top that with about 2 tablespoons plain pie filling.
- Next top that with plain yogurt.
- Next top that with remaining graham cracker crumbs.
- Top that last of the pie/yogurt filling.
- If you do have any crumbs left over, you can use those over the top for garnish.
- You may or may not use all of the yogurt.
- I ate it.
