- Preheat oven to 400 degrees F (200 degrees C).
- In a medium bowl, combine the sausage, cheese, and dry baking mix. Mix together, and shape mixture into walnut-sized balls. Place on a foil-lined cookie sheet.
- Bake for 12 to 15 minutes. Serve hot.

- Preheat oven to 425°. In a large skillet, cook and crumble sausage with onion, red pepper and garlic over medium-high heat until no longer pink, 4-6 minutes. Stir in cheese; cool slightly. , Place one sheet of phyllo dough on a work surface; spritz with cooking spray. Layer with two additional phyllo sheets, spritzing each layer. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.) Cut phyllo crosswise into three strips (about 4-1/2-in. wide)., Place a rounded tablespoon sausage mixture near the end of each strip. Fold end of strip over filling, then fold in sides and roll up. Place on an ungreased baking sheet, seam side down. Repeat with remaining phyllo and filling., Bake until lightly browned, 8-10 minutes. If desired, tie bundles with chives. Serve warm.

- In a large skillet, cook bacon until crisp; remove to paper towels. Reserve 2 tablespoons drippings. Saute onion in drippings until tender. Stir in the sauerkraut, sausage, brown sugar, garlic salt, caraway and pepper. Cook and stir for 5 minutes. Remove from the heat; add bacon. Set aside to cool. , In a large bowl, combine contents of the roll mix and its yeast packet. Stir in one egg, water and butter to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 5 minutes. Cover dough with a large bowl; let stand for 5 minutes. , Divide dough into 16 pieces. On a floured surface, roll out each piece into a 4-in. circle. Top each with 1/4 cup filling. Fold dough around filling, forming a ball; pinch edges to seal. - Uncase and separate sausage.
- Brown sausage in a skillet over medium-high heat.
- Drain off excess drippings.
- Combine cheese, chillies, green onions and sausage in a medium bowl.
- Spoon 1 round teaspoon of sausage mixture near 1 corner of wonton wrapper.
- Brush opposite corner with water.
- Roll up "jelly roll" style.
- Moisten ends of roll with water.
- Bring ends together to make a "bundle" overlapping slightly and pressing firmly.
- Repeat with remaining filling and wrappers.
- Heat deep fryer to about 365.
- Fry bundles a few at a time for about 2 minutes or until golden brown.
- Drain on paper towel and serve.

EASY SAUSAGE EGG & CHEESE BREAKFAST QUESADILLA
This is a fairly easy and tasty recipe. To save time I cook the breakfast sausage in advance and freeze 1/2 cup portions in small baggies and just take one out the night before making. Feel free to add or omit anything you like but keep in mind the more items inside the heavier it is and not as easy to flip in the frying pan. I like it just the way it is but you might like to serve with hot sauce or salsa. Cook & prep times are approximate. Hope you enjoy!

- Brown the sausage, drain & set aside.
- Scramble & cook the eggs, set aside.
- Grate the cheese while heating the oil in a large non-stick pan.
- Place one tortilla in the pan with 1/2 the cheese spread out evenly.
- Add the scrambled eggs spreading out evenly and then the sausage.
- Season with salt & pepper to taste.
- Add remaining cheese spreading out evenly (the cheese is the glue that holds this together) and top with the other tortilla.
- Cover with lid and cook for about 5 minutes or until browned then flip and brown the other side.
- Remove to a plate and cut into 6 pieces and eat with fingers!

- Place the diced pork in the freeze for about 45 minutes to get it to a temperature of 32 degrees F (0 celsius). Grind the pork and fat through a 1/4 inch (6mm) die. Grind the meat quickly into the bowl of a stand mixer (ideally have the bowl set atop an ice bath to keep the meat cold) and then grind it all a second time. Chill the meat in the refrigerator while you assemble the spice mixture.In a small bowl combine all the spices.
- Remove the ground meat from the fridge and place it on the stand mixer fitted with a paddle attachment. Add the spice mix, dry milk powder and the ice water.Mix the meat mixture with the paddle for 3-4 minutes until threads begin to appear in the meat: If you take a clump of meat and pull it apart with your fingers you will see tiny threads pulling apart. When you see this your meat is ready. If the meat mixture is too dry and stiff, add a little more ice water. Stir the diced Cheddar into the meat mixture and chill it in the fridge while you prepare the sausage stuffer.*This is also the time to taste your sausage mixture so you can adjust the seasonings if needed. To do this, take a bit of the meat mixture, fry it up in a pan, taste it and adjust the seasonings if needed.
- Thread the sausage stuffer with the prepared hog casings, fill the sausage stuffer with the meat mixture, and stuff the casings being careful to avoid air gaps while also being careful to not over-stuff the casings. Twist the sausages into links (about 6 inches each according to personal preference). Use a sausage pricker to prick any air bubbles out of the links.For best results chill the sausages overnight.
- Smoke the Sausages: Preheat your smoker to 175-185 degrees F. Smoke the sausages until their internal temperature reaches 160 degrees F (try to avoid exceeding 160 F or you run the risk of the fat melting and ending up with shriveled sausages). Add a handful of wood chips twice throughout the smoking process. Hickory wood chips and apple wood chips are both great choices for pork.
