CHEESEBURGER MEATLOAF

- Preheat the oven to 350 degrees F. Spray a broiler pan with nonstick spray.
- Mix together the bread and milk in a bowl and set aside.
- Add the ground beef, bacon, eggs, chopped red onion, 2 tablespoons ketchup, 1 tablespoon mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large bowl. Add the soaked bread and mix with your hands, trying to keep the mixture light. Gently mix in the cubed Cheddar, making sure to distribute it evenly throughout the meat.
- Form the meat mixture into a loaf approximately 6 to 8 inches wide and 1 1/2 inches thick on the prepared pan. Mix the grated yellow onion with the remaining 1 cup ketchup, 1/4 cup mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper in another bowl. Spread half of the sauce on top of the meatloaf. Tent the pan with foil and bake for 1 hour.
- Remove the foil, add the rest of the sauce and continue baking until the internal temperature reaches 160 degrees F and the meatloaf is no longer pink in the middle, another 35 to 40 minutes. Sprinkle on the grated Cheddar and return to the oven for 5 minutes to melt. Let the meatloaf rest for 10 minutes before removing to a platter.
- Slice and serve with the sliced red onions and dill pickle chips.

- Preheat oven to 350 degrees F.
- Mix all ingredients together, except the bread slices and Sauce. Shape into a loaf. Line a 1 1/2-quart loaf pan with the bread slices. Place meatloaf on top. Bake loaf for 1 hour and 15 minutes. The bread absorbs the grease and should be discarded after loaf is removed from oven.
- For the sauce: Heat the soup and milk over medium heat; add the cheese. Add the chopped onions and parsley to the sauce, if desired. Pour Sauce over the meatloaf or pass at the table.

- Preheat oven to 350*.
- Cut each of three cheese slices into four strips; set aside.
- In a large bowl combine egg and tomato juice; stir in oats, onion, Worcestershire sauce, bouillon granules, garlic powder and pepper.
- Add ground meat; mix well.
- In a shallow baking dish shape half of the meat mixture into an 8x4-inch loaf. Make a 1/2 inch indentation down center of meat mixture.
- Arrange cheese strips in indentation.
- Shape remaining meat mixture over chees strips, pinching edges to seal.
- Bake about 1 hour or until done (160*F). Cut remaining cheese slices in half diagonally. Place on top of meat loaf. Bake until cheese is melted.
- If desired, garnish with tomato and parsley.

This meatloaf is extremely juicy, and the potential variety of different flavors is as big as your imagination. I've done American cheese with ketchup and mustard on top and served with dill pickle chips. Another one might be Swiss cheese and mushroom topping.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper, and mix well. Pat out meat mixture into a 14x18 inch rectangle on a piece of wax paper. Spread cheese over the meat, leaving a 3/4 inch border around the edges. Roll up jelly roll fashion to enclose the filling and form a pinwheel loaf. Press beef in on both ends to enclose the cheese. Place in a 10x15 inch baking dish.
- Bake in the preheated oven 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

- Heat oven to 350°F. Line 9x5-inch loaf pan with foil; spray foil with cooking spray.
- In large bowl, mix bread and milk. Let stand 5 minutes to absorb milk. Add beef, all but 2 tablespoons of the bacon, the shredded cheese, relish, onion, garlic and egg. Mix until well combined. Shape mixture into 8x4-inch loaf. Place in pan.
- In small bowl, stir together Topping ingredients. Spread on top and sides of loaf. Top with reserved 2 tablespoons crumbled bacon.
- Bake uncovered 1 hour to 1 hour 15 minutes or until meat thermometer inserted in center of loaf reads 160°F. Cool 10 minutes.
- Cut meatloaf into slices to serve. Top with desired burger toppings, such as pickle relish, ketchup and mustard.

- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. When cool, crumble into a large bowl.
- Mix ketchup and mustard in a bowl.
- Thoroughly combine 1/4 the ketchup mixture, ground chuck, Cheddar cheese, eggs, bread crumbs, mayonnaise, Worcestershire sauce, salt, and black pepper with crumbled bacon in bowl; pat the mixture into a 5x9-inch loaf pan. Spread remaining ketchup mixture evenly over top of meatloaf.
- Bake in the preheated oven until the meatloaf is no longer pink inside, about 45 minutes. Spread French-fried onions over the top of the loaf and return to oven until onions are browned and an instant-read meat thermometer inserted into the center of the loaf reads at least 160 degrees F (70 degrees C), 10 to 15 more minutes.

- In a bowl, combine 1/4 cup ketchup, egg, bread crumbs and onion powder. Crumble beef over mixture and mix well. On a large piece of waxed paper, pat beef mixture into a 10x6-in. rectangle. Spread remaining ketchup over meat to within 1/2 in. of long sides and 1-1/2 in. of short sides. Top with mustard and relish., Place four cheese slices on top; set remaining cheese aside. - Preheat oven to 350°F degrees. In a large bowl, combine bread cubes, milk, and egg, using a fork to break up the bread cubes. Add onions, salt, and pepper, and mix well. Add ground beef, incorporating the egg mixture and onion with a fork or hands. On a parchment-lined baking sheet, place half the beef mixture on the sheet and shape into a 4.5-inch by 9.5 inch rectangle. Top the beef with 10 pickles and 3 cheese slices. Add the remaining beef mixture on top of the pickles and cheese, smoothing with a fork or hands and sealing the sides to prevent the cheese from melting out. Bake in a preheated oven for 1 hour and 10 minutes (or until inserted meat thermometer reads 165F degrees). Once the meatloaf reaches the desired internal temperature, add the remaining pickles slices and American cheese to the top of the loaf and bake an additional 3-4 minutes or until the cheese is melted. Simply wrap the loaf in plastic wrap and store on a plate or platter in the fridge until you are ready to bake it. Serving suggestion: Serve the meatloaf with lettuce salad and crusty bread with sesame seeds.
