This is a quick and easy burger to make with a great taco taste. Finish off with your favorite toppings.

- Mix ground beef and taco seasoning together in a bowl. Set in the refrigerator for 30 minutes to let taco mix infuse into the beef.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Remove meat from the refrigerator and make 6 very thin patties. Place a slice of Cheddar cheese into the center of 3 patties. Place the remaining patties on top of the cheese patties and seal together by pinching the ends.
- Cook on the preheated grill for 6 to 7 minutes. Flip and continue cooking until no longer pink, 6 to 7 minutes more. Place on hamburger buns.

- Preheat a grill or grill pan to medium-high heat.
- In a medium bowl, mix together the chuck, salt, cumin and paprika. Divide into 4 even patties and drizzle with a touch of olive oil. Grill the burgers until deep brown and just barely cooked through, 3 to 4 minutes per side.
- Pile a bed of lettuce on the bottom of each bun. Top with a patty, some cheese and a slice of tomato. Top with pickled jalapenos and sour cream if desired.
KIDS CAN MAKE: TACO CHEESEBURGER
Here are two things children (and adults!) love in a fun little package. For little kids: Let them help tear the cheese and measure the salsa. For big kids: Let them help shape and season the beef patties and shred the lettuce. Everyone can assemble his or her own taco. The generous amount of taco seasoning on the burgers, plus cooking them in a cast-iron skillet, gives them a crispy, flavorful crust.

- Preheat the oven to 400 degrees F.
- In a small bowl, combine the chili powder, cumin and 1 teaspoon salt. Stir until well mixed.
- Divide the ground beef into 4 equal sections, about 6 ounces each. Gently form the meat into thick disks, then place on a piece of wax paper. Press the patties until they're about 1/2-inch thick and 6 inches in diameter. Sprinkle each patty on both sides with the spice mix, using about 1/2 tablespoon per burger. Cut each patty in half, giving you 8 pieces.
- Heat a 10-inch cast-iron skillet over medium heat for 3 minutes. When the skillet is hot, add 1 tablespoon of the oil and 4 of the patties. Cook until the meat is browned half of the way up the side, 2 1/2 to 3 minutes. Flip and cook on the other side. Place a half-slice of cheese (torn into a few pieces so it fits on the burger) to cover the patty and melt over the top. Cook until the patty is well-browned on the bottom, another 2 1/2 minutes. Remove the burgers to a plate, tent with foil, to allow the juices to redistribute, at least 5 minutes. Scrape out any crusty bits on the bottom of the skillet and pour off the extra grease. Add the remaining tablespoon of oil and repeat the process for the remaining 4 patties.
- If using hard taco shells, place them on a baking sheet and warm in the oven for about 5 minutes. If using soft tortillas, wrap the stack of 8 in foil and warm for 5 minutes.
- Line the center of each taco with some lettuce, insert a patty and 2 tomato slices, then top with 1 teaspoon salsa and some sour cream, and serve.

After I moved to Oklahoma, I quickly discovered most every burger joint has their version of an onion burger. My version takes the Oklahoma onion burger south of the border. Top with lettuce, cheese, avocado slices, black olives, and Mexican crema.

- Mince enough onion to get 1/4 cup. Set remaining onion aside.
- Melt butter in a skillet over medium heat. Add 1/4 cup minced onion and 1 teaspoon taco seasoning. Cook until onion is translucent and fragrant, about 5 minutes.
- Transfer onion to a medium bowl; add ground beef, 2 teaspoons taco seasoning, and garlic powder. Mix well and shape into 4 hamburger patties.
- Pour tomato sauce into a large skillet over medium-high heat. Add salsa and remaining 1 teaspoon taco seasoning. Mix to combine.

- Separate ground beef into 4 equal parts (4 ounces each); form each part into 4 thin half moon shape patties. Try to shape each patty to fill half of a tortilla.
- Heat a 10-inch non-stick skillet (or use a square, deep-walled non-stick electric skillet) over medium high heat.

- Put the ground beef into a mixing bowl, empty the contents of your taco seasoning envelope into roughly 1/2 cup of water (you may add more water, by the tablespoon, to make the mixture moist enough to blend well). Stir the seasoning into the water, until blended, pour into bowl with meat.
- Blend the ingredients together with your hands, the way you mix meatloaf.
- Heat up your George Foreman grill, and form the meat into 4 patties while you're waiting.
- When the grill is ready, put the burgers on it, and close the cover. Press gently but firmly on the cover. Grill 5 to 7 minutes, open the grill and turn the burgers over; grill another 5 minutes (the top part of this grill is not as hot as the bottom, you do need to turn).
- Toast your buns while the meat is grilling.
- Put a nice pinch of shredded cheddar on the bottom half of the buns.
- Place the burgers on top of the cheese,.
- add salsa or taco sauce, a slice of tomato, and a slice of onion, and then a pinch of shredded lettuce. Add the bun tops.
- Serve with corn chips and Corona -- Ay Yi Yi!

EASY CHEESEBURGER TACOS
My 7-year-old daughter requested cheeseburger tacos for dinner one night, so I created this and all the kids loved it! - Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat. Cook and stir beef with black pepper, salt, and garlic powder in the hot skillet until meat is browned and crumbly, 5 to 7 minutes; drain and discard grease. Reduce heat to low and mix 1/2 cup ketchup into beef.
