Chewy Chewy Raspberry Almond Bars image

Steps:

  • 1. First pre-heat the oven to 375F. Then spray a 9 inch square baking pan with baking spary & dust with flour.
  • 2. Then in a large bowl mix the oats brown sugar & salt. Then cut in the butter with a fork or pastry blender until mixture looks like little coarse crumbs. Then reserve 1 cupof mixture for the topping. Then to the remaining mixture beat in the egg until just moist.
  • 3. Next press down the dough firmly & evenly into the bottom of the baking pan. Use your fingers or the bottom of a measuring cup. Then spread the jam on top & arrange the fresh raspberries over the jam. Then stir the almonds into the reserved crumb mixture & sprinkle evenly over the top.
  • 4. Then bake for about 30 to 35 mins or until top is golden brown. Let cool completely on a cooling rack. Then cut into 4 rowsby 4 rows.

1 1/2 c quick cooking oats
1 1/2 c all purpose flour
3/4 c brown sugar, lightly packed
1/2 tsp salt
3/4 c butter, cold
1 egg, beaten
3/4 c red raspberry jam, seedless
1 c raspberries, fresh
1/2 c almonds, sliced

Steps:

  • In a large bowl, combine the flour, sugar and salt; cut in butter until mixture resembles coarse crumbs. Stir in water and extracts until mixture forms a ball. , On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with floured 2-1/2-in. cookie cutters. From the center of half the cookies, cut out a 1-1/2 in. shape. Place 1 in. apart on parchment-lined baking sheets., Bake at 325° for 12-15 minutes or until edges are lightly browned. Cool for 2 minutes before removing to wire racks to cool completely., Spread 1/2 teaspoon jam over the bottoms of the solid cookies. Sprinkle cutout cookies with confectioners' sugar; place over cookies with jam.

Steps:

  • Preheat oven to 300°F with racks in upper and lower thirds. Line 2 large (17- by 12-inch) 4-sided sheet pans with parchment paper.
  • Pulse almond paste and sugar in a food processor until broken up, then add egg whites and pulse until smooth. Transfer to pastry bag and pipe 3/4-inch rounds (1/3 inch high) about 3/4 inch apart in pans. Dip a fingertip in water and gently tamp down any peaks.
  • Bake, rotating and switching position of pans halfway through, until golden and puffed, 15 to 18 minutes.
  • Wearing an oven mitt, rest 1 pan in sink at an angle. Lift top edge of parchment and slowly pour about 1/4 cup water between parchment and sheet pan so that all of parchment is lightly moistened (water will steam on pan, moistening bottom of cookies to help them stick together later). Repeat with remaining sheet pan. Cool cookies in pans on racks.
  • Peel cookies from parchment and sandwich bottoms of cookies together

Raspberry-Cream Sandwich Cookies image

Steps:

  • Preheat oven to 350 degrees. Whisk together flour, baking soda, and salt; set aside.
  • Mix butter and 1 1/2 cups sugar with an electric mixer on medium-high speed until pale and fluffy, 2 to 3 minutes. Add egg, extract, and vanilla seeds; mix until smooth. Reduce speed to low. Gradually mix in flour mixture.
  • Scoop batter using a 1-inch ice creamscoop; space 2 inches apart on bakingsheets lined with parchment paper.
  • Bake cookies 4 minutes. Remove from oven; gently tap baking sheets on counter to flatten cookies. Return to oven, switching positions of sheets; bake until cookies are just set, 4 to 6 minutes more. Let cool on parchment on wire racks.
  • Puree raspberries and remaining 2 teaspoons sugar in a food processor. Pour mixture through a fine sieve into a small bowl, pressing to extract juice; discard seeds. Set mixture aside.
  • Melt white chocolate in a heatproof bowl set over a pan of simmering water. Remove from heat; whisk in cream in a slow stream. Slowly whisk in reserved raspberry mixture. Refrigerate up to 30 minutes.
  • Spread 1 heaping teaspoon raspberry cream on the undersides of half the cookies. Sandwich with remaining cookies.

  • In a medium mixing bowl, whisk together the flour, baking powder, cinnamon, and cardamom, set aside. In a food processor, pulse together the almonds with 1/4 cup sugar until finely ground, set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and remaining 1/2 cup of sugar together until combined about 1 1/2 minutes. Mix in the egg yolks, one at a time, waiting until the previous is completely mixed in. Add the vanilla extract. Stop the machine, scrape down the sides and bottom of the bowl as necessary. Turn the mixer on to a low speed and add in the almond mixture, wait until completely mixed in, about 1 minute. Add the flour mixture and mix until combined. Form mixture into 2 evenly sized balls, flatten each into a 6-inch round disk and wrap each one separately in plastic wrap and refrigerate for at least 2 hours.
  • Position two racks near the center of the oven and preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone mat (I recommend using the mat as the cookies may spread on parchment), set aside. Dust work surface with flour, roll out one disk into 1/6-1/8 inch thickness. Cut using a linzer cookie cutter or a medium round or fluted cookie cutter, then using a smaller round, heart, or star shape to cut out the center. Carefully transfer to baking sheet. I used a very thin metal spatula to lift cookie dough to baking sheet. Place cookie about 1 - 1 1/2 inches apart from each other on baking tray. Place the baking tray in the fridge for 10 minutes or in the freezer for 5, cookies hold their shape better when cold. Also, refrigerate any leftover dough. Bake the cookies for 9-12 minutes until edges start to turn golden. Let cool on baking sheet for 5 minutes before transferiing to wire rack to cool completely. Spread cookies with raspberry jam over the whole round
