CHICKEN SCAMPI PASTA
Chicken takes the place of shrimp in this dish inspired by the Olive Garden classic -- making it even more weeknight friendly. Serve over angel hair pasta and you'll be in and out if the kitchen in less than 30 minutes. Molto bene!

- Bring a large pot of salted water to a boil for the pasta. Sprinkle the chicken with some salt. Heat a large skillet over medium-high heat until hot, then add the oil. Working in 2 batches, brown the chicken until golden but not cooked through, 2 to 3 minutes per batch. Remove the chicken to a plate.
- Melt 4 tablespoons of the butter in the skillet. Add the garlic and red pepper flakes and cook until the garlic just begins to turn golden at the edges, 30 seconds to 1 minute. Add the wine, bring to a simmer and cook until reduced by half, about 2 minutes. Remove from the heat.
- Meanwhile, cook the pasta until very al dente, reserving 1 cup of the pasta water. Add the pasta and 3/4 cup pasta water to the skillet along with the chicken, lemon zest and juice and the remaining 4 tablespoons butter. Return the skillet to medium-low heat and gently stir the pasta until the butter is melted, adding the remaining 1/4 pasta water if the pasta seems too dry. Remove the skillet from the heat, sprinkle with the grated cheese and parsley and toss before serving.

- SCAMPI SAUCE: Heat butter over low heat; add the garlic, Italian seasoning, crushed red pepper and black pepper. Cook for about 2 minutes on low heat. Add the wine and chicken broth. Stir until combined and simmer about 30 minutes. WHITE SAUCE: Heat 1 tablespoon butter in a sauce pan, add 2 tablespoons flour and cook for 2 minutes on medium heat stirring constantly. Slowly add 3/4 cup hot milk. Set aside. Keep the white sauce hot until you add to the scampi sauce. In a large skillet, saute chicken in two batches in a little olive oil and butter until almost done. You want the outside nicely browned. If using, add the peppers and saute for 2 minutes. Return all chicken to the skillet. Add 1 tablespoon of butter and increase heat to medium high. Add lemon juice and broth and boil for 1 minute, stirring constantly. Turn off heat and add the zest. Once the scampi sauce has simmered for 30 minutes, add the white sauce and cook till slightly thickened. Reserve about 1/2 cup of the sauce and toss the remaining sauce and pasta together and place in a large serving plate. Arrange chicken on top, pouring over any remaining pan juices. Serve with reserved sauce and parmesan.

- 1. Pound the chicken breasts to an even thickness, no more than 1/2" thick. Then melt the scampi butter over medium heat in a large skillet. Press the chicken into the bread crumbs and sauté until lightly browned on both sides, about 6 to 8 minutes. Slice in strips or keep whole. Remove the chicken from the skillet and turn the heat to low. Add the heavy cream and lemon juice, stirring to combine, until the mixture thickens slightly. To serve, arrange sliced chicken breast or a whole breast over linguini and pour the cream sauce over the chicken.
- 2. SCAMPI BUTTER: 1/4 pound unsalted butter, softened 1 tablespoon minced garlic 2 tablespoons minced red onion 1 tablespoon chopped fresh parsley leaves 1/2 teaspoon garlic powder 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper Dash white pepper Dash Worcestershire sauce 1 lemon, juiced 1 tablespoon white wine
- 3. In a bowl, whisk all ingredients until thoroughly combined. Refrigerate until ready to use.

- Bring a large pot of lightly salted water to a boil; cook the linguine at a boil until tender yet firm to the bite, about 11 minutes; drain.
- Heat butter and 1 tablespoon olive oil in a skillet over medium heat; cook and stir onion, mushrooms, and garlic in the hot oil-butter mixture until slightly softened, 2 to 3 minutes.
- Heat 1 teaspoon olive oil in a separate skillet; cook and stir chicken in the hot oil until no longer pink in the center, about 10 minutes. Transfer chicken to onion mixture.
- Pour white wine into chicken-onion mixture; bring to a simmer. Add tomatoes, parsley, red pepper flakes, and linguine; mix well. Simmer until heated through, 3 to 5 minutes. Squeeze lemon halves over mixture; toss.

- Bring a large pot of water to a boil to cook pasta (cook according to directions on package, to al dente. I find it's best to start cooking the pasta in the boiling water when the wine is reducing just before step 7).
- Dab chicken pieces dry with paper towels. Toss with flour, Italian seasoning and salt and pepper (I use about 3/4 tsp salt 1/4 tsp pepper).
- Meanwhile melt 3 Tbsp butter with 1 Tbsp olive oil in a 12-inch non-stick skillet over medium-high heat.
- Add chicken in a single layer and let sear until browned on bottom, about 4 minutes, turn and let cook through about 2 - 3 minutes.
