NIKKI'S CHICKEN AND SPINACH ALFREDO PIZZA
I was really craving some pizza and had always wanted to try my hand at alfredo pizza. So after some playing around came up with this. My mother-n-law said it was the best pizza she's ever had and that's really saying something to get a complement from her like that! My husband backed her up and he's extremely picky! lol Hope you enjoy and let me know what you think. NOTE: It may look like a lot of stuff but if you do it stages, it really isn't, such as using left over chicken and making the sauce ahead of time and just setting it to the side til you need it.

Steps:
- Dough: In a bowl, dissolve yeast in warm water.
- In a mixing bowl, combine flour, oil, salt and sugar.
- Add in yeast water and mix together, making a ball.
- Knead by hand 5-10 minutes, until when you press your thumb down the indention stays. *You could also use your hand/stand mixer if it has a kneading attachment for about 2-3 minutes or you could use your bread machine.*.
- Rub small amount of olive oil around dough, to keep it from sticking, and place in a large bowl, covering with plastic wrap.
- Place in a warm area to rise at least 30 minutes.
- Sauce: In a large skillet, melt 8 Tbs (1/2 cup or one stick) butter.
- Add garlic and saute' until garlic is fragrant, about 1-2 minutes, over medium heat.
- Add flour and stir until it make a thick paste.
- Add wine.
- Whisk in half and half and cook over medium heat until sauce has thickened.
- Add in parmesan cheese, and remaining 2 tbs butter and stir until melted.
- Season with salt and pepper.
- Add in spinach and stir until evenly distributed and heated through.
- Set to the side.
- Preheat oven to 400°F.
- Roll out dough to fit either your pizza stone or out on a baking sheet, curling edges, if you like, to make the crust.
- With a spoon, add a very thin layer of sauce on the dough and put in the oven to bake for 15 minutes or until dough is almost fully cooked.
- Remove from oven, place chicken pieces and tomatoes and cover with more sauce. (There will be extra sauce left).
- Return to oven for another 10 minutes or until dough is fully cooked.

Steps:
- Combine chicken with lemon juice, oil, garlic and half the mint in a bowl.
- Marinate chicken for at least 3 hours.
- Remove chicken from the marinade and keep the marinade.
- Cook chicken in a non-stick pan until browned on both sides.
- Do not overcook, it can still be a bit pink in the middle.
- Remove the breasts and cut into 1cm slices.
- Heat reserved marinade in same pan.
- Add the onion and cook until soft.
- Add undrained tomatoes and simmer uncovered for 10 minutes until thickened and saucy.
- Boil, steam or microwave the spinach until wilted and squeeze out excess liquid.
- Top the turkish breads evenly with tomato sauce mixture, spinach, chicken, crumbled feta and remaining mint.
- Bake in hot oven about 20 minutes until lightly browned and hot.
- Cut each bread into 3 pieces to serve 6 or into small squares or slices to make fingerfood.

- Heat oil in a skillet over high heat. Saute chicken pieces in hot oil for 6 to 7 minutes. Do not overcook!
- Preheat oven to 425 degrees F (220 degrees C).
- To Assemble Pizza: Spoon 1/4 of peanut sauce onto each pita. Sprinkle 1/4 of the browned chicken and 1/4 of the scallions on top of each. Top each 'pizza' with 1 slice cheese. Place on a lightly greased cookie sheet and bake in the preheated oven for 10 to 12 minutes, until the cheese is melted and bubbly. Let stand for 1 to 2 minutes outside of oven before you cut with a pizza cutter.

- Help the pizza dough rise. Ideally, take your pizza dough out of the fridge a few hours before, or the morning of, making this chicken and spinach pizza. It will stretch really easily if it’s at room temperature. If you have a window with sun that shines in, place the bag of dough there to watch it rise very quickly. If you’re short on time, allowing at least 30-60 minutes for fresh ready made pizza dough to rise ahead of time is ideal. And if you’re reading this 5 minutes before making the pizza, know you can make the pizza from cold dough, it just won’t stretch as easily or be as large of a pizza.
- Cook the bacon. Preheat the oven to 400 degrees F. Line a rimmedbaking sheet with parchment paper, then add the bacon. Bake bacon in the ovenfor 10 minutes, then flip it over and bake for another 5-10 minutes to yourdesired level of crispness. Pat dry, let it cool, then dice into 1” chunks.
- Prep for baking the pizza. Preheat the oven to 450 degrees F. Set out a large rimmed baking sheet lined with parchment paper. Brush half of the olive oil on the parchment paper. Add half the flour to the center of a large butchers block or flat surface. Put the other half off to the side.
- Stretch the pizza dough. Roll the raw premade pizza dough in the flour in the center of your work surface. Coat it all over in a light dusting of the flour. Begin stretching the ready made pizza dough by pinching the outside in a circular motion to spread out the crust. Then you can alternate between pinching the center of the dough with your fingers, pressing it out on your work surface, and using your knuckles to pull the dough from underneath in an outward motion. You’ll want to pick up some extra flour as you stretch the dough - which will help it hold a larger size. I don’t aim for a perfect square or circle - the most beautiful pizzas are au natural. - Melt 3 tablespoons butter in a saute pan over medium-low heat. Add garlic. Cook 30 seconds and add cream and parmesan. Continue cooking over medium-low heat until reduced and thickened. Salt to taste. Remove from heat and set aside.
- Take your pizza dough and let it rise for 30 minutes. Press out onto a large pizza pan, and poke holes in the crust with a fork.
- Pre-bake crust for approximately 10 minutes, or until it starts to get a lightly golden brown color on top.
