- In small jar with tight-fitting lid, shake dressing ingredients.
- In medium bowl, toss greens with dressing; arrange on serving platter. Top with remaining salad ingredients. Serve immediately.

CHICKEN ASIAGO
A variation on Chicken Cordon Bleu or Chicken Parmesan, baked so lower in fat. Use your favorite jarred or canned sauce, or make your own. Serve with your favorite cooked pasta.

- Preheat oven to 325ºF. Coat an 8 x 8 inch baking dish with nonstick cooking spray.
- In a shallow bowl, beat egg with just enough water to thin it a little. Set aside.
- Place bread crumbs in another shallow bowl, and stir in dried basil. Set aside.
- Place 1 chicken breast between two sheets of plastic wrap and pound with a mallet until about 1/4 inch thick, being careful not to pound holes in chicken; repeat with 2nd breast.
- Remove plastic wrap and place 1 slice of ham on each breast.
- Place one piece of cheese on the narrow end of each breast. Roll breast up jelly-roll fashion, and secure ends with toothpicks.
- Dip breast in egg mixture and coat all sides. Roll in bread crumbs until well coated. Repeat with 2nd breast.
- Place in baking dish and LIGHTLY spray with cooking spray (or an oil mister). This will help coating brown.
- Bake for 30-35 minutes, until chicken is cooked through.
- Remove toothpicks and place on plates. Top with some heated pasta sauce and some shredded cheese to garnish; serve.

PEAR AND CHOCOLATE TART
My version of a recipe found on a free supermarket recipe card! It's chocolaty, juicy, and scrumptious. The tart is best served warm with creme fraiche.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Roll pastry out to 1/4 inch thickness and use it to line a 9-inch tart dish. Prick the pastry with a fork and then place into the freezer for 20 minutes to prevent pastry from rising during baking.
- Bake in the preheated oven for 10 minutes. Set crust aside. Reduce oven temperature to 325 degrees F (165 degrees C).
- Heat a saucepan about 1/3-full of water to a low simmer, about 5 minutes, then reduce heat to lowest setting. Place a heat-proof bowl over the pan in such a way that it does not touch the water. Add chocolate to the bowl and allow to melt. Limit stirring to an absolute minimum to prevent chocolate from separating.
- Mix ground almonds, eggs, sugar, and butter together in a bowl. Add warm melted chocolate and stir to combine. Pour chocolate mixture into the baked pastry crust.
- Arrange pears on top of the tart by pressing them into the chocolate mixture.
- Bake in the hot oven until pastry is golden and mixture is firm, 35 to 45 minutes.

- Preheat oven to 400°. On a work surface, unroll crust; roll to a 12-in. circle. Press crust onto bottom and up sides of an ungreased 11-in. tart pan with removable bottom. HOT PEAR, TOMATO AND ZUCCHINI SALAD WITH ASIAGO CHEESE & HE
I have had Tomatoes and Zucchini with Parmesan before , which I had on hand, the discovery of the pear that needed to be used and Asiago in the fridge, I figured maybe I could get a little creative. ;) The combination of flavors and textures were surprisingly enjoyable. Will make this again and ensure I post a picture... nice presentation and no more than 4 mins in the microwave!

- Wash, dry and prepare fruits as directed. (Yes they are technically all fruits. ;) ).
- Line a microwave-safe 10"+ plate with the zucchini in a circular (ring) fashion. Place the tomato slices just to the inside of the zucchini, then splay the pear slices on top of the tomatoes.(A glorified flower?!).
- Sprinkle with Herbes De Provence.
- Grate Asiago evenly over top.
- Microwave on high for no more than four minutes, depending on your microwave's wattage; I would check it after 3 minutes. Fruits will be just starting to steam and the cheese will be melted.
- Sprinkle with freshly ground black pepper.
- Serve immediately.
