  • Toss chicken with seasoning blend. In a large nonstick skillet, heat 1 tablespoon oil over medium-high heat. Add chicken; cook and stir 5-7 minutes or until no longer pink. Remove from pan. In same pan, add remaining oil, pepper and onion; cook and stir 3-4 minutes or until crisp-tender., Stir in chicken; sprinkle with cheese. Remove from heat; let stand, covered, until cheese is melted.

Steps:

  • Cut onions in half lengthwise; peel. Cut off ends; cut lengthwise into 1/4-inch-thick pieces.
  • Coat a 13-inch skillet with cooking spray, and set over medium heat. Add onions, and cover. Cook, stirring occasionally, until softened and translucent, about 15 minutes.
  • Add sugar; re-cover. Cook, stirring occasionally, until onions are deep golden, 20 to 30 minutes. Add 1/4 cup water; stir with a wooden spoon to dislodge any brown bits.
  • Cover, and cook until dark brown, 20 to 30 minutes. Add balsamic vinegar and another 1/4 cup water. Continue cooking until liquid has been absorbed, about 10 minutes. Transfer to a bowl to cool. Store, refrigerated, in an airtight container up to 1 week.

Chicken Breasts with Balsamic Onion Jam image

Steps:

  • Cut up the chicken into chunks, larger than bite size but not too large.
  • Mix the flour with the paprika, ginger, black pepper and 1 tablespoon brown sugar.
  • Coat the chicken with the flour mixture.
  • Fry the chicken in the olive oil in one layer, turning to brown both sides.
  • You may have to do this in batches, removing the browned chicken to a separate plate.
  • Add some fresh oil to the pot (you can leave in what's in there).
  • Fry the onions, constantly stirring, until caramelized.
  • Add the vinegar (stand back, the vapors can really get you).
  • Then add the water.
  • Keep cooking until the sauce is reduced to a jammy consistency.
  • Add the brown sugar and stir until dissolved.
  • Add the fried chicken pieces and stir to completely coat and heat through.
  • Serve with some plain rice or couscous.

1 kg chicken breast
1/2 cup flour

Chicken Breasts Filled with Onion Jam image

Steps:

  • Place each piece of chicken between two 12-inch squares of plastic wrap. Using a meat pounder, pound to a 1/4-inch thickness.
  • Spread 1/4 cup onion jam over each breast, and fold breast in half. Season both sides with salt and pepper.
  • Coat a saute pan with cooking spray, and set over medium-high heat. Place chicken in pan; cook until golden on bottom, about 2 minutes. Turn, and cook until the other side is golden, about 3 minutes.
  • Add wine, and cook 1 minute. Add stock; reduce heat to medium. Cover; cook until chicken has cooked through, 5 to 6 minutes. Transfer the chicken to a plate.
  • Add balsamic vinegar to pan; turn heat to high. Reduce liquid to 1/2 cup, 7 to 10 minutes. Drizzle sauce over chicken, and serve.

Barbecue Chicken with Onion-Bacon Jam image

Steps:

  • Make the chicken: Preheat a grill to medium high and oil the grates. Combine the brown sugar, chili powder, smoked paprika, mustard powder, garlic powder and cayenne in a small bowl.
  • Place the chicken between 2 sheets of plastic wrap and pound with a heavy skillet or the flat side of a meat mallet until an even 1/2-inch thickness. Rub the chicken with the sugar mixture; set aside while you make the onion-bacon jam.
  • Make the onion-bacon jam: Heat the olive oil in a medium dutch oven over medium heat. Add the bacon and cook until crisp, 5 to 7 minutes. Remove to paper towels. Pour out all but about 2 tablespoons fat, then add the onions and cook over low heat, stirring, until caramelized, 20 to 25 minutes. Stir in the thyme and bourbon; simmer 1 minute. Season with salt and black pepper. Stir in the bacon, brown sugar, cider vinegar, Worcestershire sauce and 1/4 cup water; simmer 2 more minutes.
  • Season the chicken with salt and black pepper and grill until browned and well marked, 2 to 3 minutes. Flip and grill until the chicken is cooked through, about 2 more minutes.
  • Top the chicken with the onion-bacon jam.

Chicken Breasts With Caramelized Onion Sauce image

Steps:

  • Dry chicken well.
  • Season chicken with salt, pepper, and thyme.
  • In a large skillet, melt butter and olive oil and brown the chicken.
  • Remove chicken and saute onions until almost caramelized, stirring occasionally, then add mushrooms and cook 3-4 minutes more.
  • Add wine, Tarragon, season again with salt and pepper.
  • Return chicken to pan and simmer, covered, 45 minutes or until done.
  • Transfer chicken breasts to a warm platter.
  • Boil pan juices 3 minutes.
  • Remove from heat and cool a few minutes.
  • Add sour cream and mix well.
  • Cook until heated through, stirring constantly.
  • *Do not allow the sauce to boil.
  • Pour sauce over chicken, top with sliced green onions and serve immediately.
