My family loves chicken, and this is a quick & tasty way to spruce up the everyday bird. We love this over all types of pasta.

Steps:
- Melt 3 tbs butter in a large skillet over medium heat.
- Add mushrooms and saute until tender.
- Remove with a slotted spoon and set aside.
- Sprinkle chicken with salt& pepper, dredge in flour, shaking off excess.
- Melt remaining 3 tbs butter in skillet.
- Add chicken and saute 5 to 6 minutes on each side or until golden brown.
- Transfer chicken to a serving platter (keep warm).
- Add broth to skillet, scraping up browned bits.
- Bring to a boil, reduce heat and simmer until reduced to approximately 3/4 cup.
- Stir in cream and lemon juice.
- Cook over medium heat until slightly thickened.
- Stir in mushrooms, white pepper& salt to taste.
- Add chicken and simmer for 15-20 minutes or until sauce is a medium thick consistency.
- Serve over rice or noodles.

- Preheat the oven to 350°. In a small dry skillet, toast the coriander, cumin and fennel seeds over moderate heat until golden and fragrant, about 3 minutes. Transfer to a spice grinder and let cool. Grind the seeds to a fine powder.
- Spread the shredded cucumber on several layers of paper towel and blot dry with more paper towels. Transfer the cucumber to a bowl and stir in the yogurt, lemon zest, garlic, cayenne and 1 teaspoon of the spice mixture; season the raita with salt and pepper.
- Brush the chicken with 2 tablespoons of the olive oil and season with salt and pepper. Sprinkle the remaining spice mixture all over the breasts. Heat 2 large ovenproof skillets over moderately high heat and add 1 tablespoon of olive oil to each. Add 3 of the breasts to each skillet, skin side down, and cook until golden, about 4 minutes. Turn the breasts and continue cooking for another 3 minutes. Transfer the skillets to the oven and bake the chicken for about 8 minutes, or until just cooked through. Serve the chicken warm, with the raita.

Steps:
- Placed prepared cucumbers in colander.
- Sprinkle with salt and toss.
- Let drain 1 hr then pat cucumbers dry with paper towel.
- Melt 3 tablespoons butter in heavy skillet over medium heat.
- Add cucumbers and saute until light brown.
- Set aside In small cup, mix 1 tablespoon flour and 1 tablespoon butter to smooth paste.
- Set aside.
- Place remaining 1/2 cup flour in shallow baking dish.
- Add white pepper and season with salt.
- Coat chicken with flour mixture.
- Shake off excess.
- Melt remaining 3 tablespoons butter with oil in another heavy skillet over high heat.
- Add chicken breasts and saute until brown, about 2 minutes per side.
- Add 1/2 cup stock.
- Reduce heat to medium, cover and simmer until chicken is cooked through, about 4 minutes.
- Remove chicken to platter.
- Add remaining 1/2 cup stock to same skillet.
- Increase heat to high and boil until reduced to 1/4 cup, about 3 minutes.
- Add cream and bring to boil.
- Whisk in flour/butter paste.
- Return mixture to boil, stirring constantly.
- Reduce heat and simmer until thickened to sauce consistency, stirring frequently, about 2 minutes.
- Stir in lemon juice and 1 tablespoon dill.
- Season to taste with salt and white pepper.
- Add chicken and cucumbers to sauce and heat through.
- Transfer chicken to plates.
- Spoon sauce and cucumbers over chicken.
- Sprinkle with remaining 1 tablespoon dill.

- For the Chicken: Preheat an oven to 450 degrees F.
- Heat a large ovenproof skillet over medium-high heat. Add the olive oil and swirl to coat the skillet. Season the chicken breast with salt and pepper on the smooth side of each breast. Place in the skillet seasoned side down and cook without disturbing until brown and crisp, about 3 to 4 minutes. Season the top side of the chicken and flip. Cook 1 minute over the burner; then transfer the skillet to the oven until chicken registers 165 degrees F on an instant-read thermometer, about 6 to 8 minutes more. Place on a cutting board and let rest for 5 minutes before slicing.
- For the sauce: smash the garlic clove, sprinkle with the salt, and with the side of a large knife, mash and smear the mixture to a coarse paste. Transfer to a blender with the parsley, mint, pepper, lemon zest, and juice. Pulse until coarsely chopped and then slowly drizzle in the olive oil. Pour into a small bowl and adjust seasoning. Deglaze pan with the sauce, if desired, and serve with the chicken.

- Preheat the oven to 400 degrees F.
- Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.
- Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.
- Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

In this recipe, which Pierre Franey brought to The Times in 1992 in one of his 60-Minute Gourmet columns, two teaspoons of lemon zest are added to a simple sauce of lemon juice, thyme, garlic and shallots. It is, at once, lively and elegant. To round it out, it needs a sturdy accompaniment. Mr. Franey suggested mashed potatoes with garlic and basil, with just a little olive oil swirled in.

- Season flour with salt and pepper, and dredge the chicken all over. Remove the excess flour.
- Heat the oil in a heavy skillet large enough to hold the chicken pieces in one layer. Add chicken and cook, uncovered, over medium heat for 5 minutes or until lightly browned.
- Flip the chicken and cook for 5 minutes more, or until cooked through. Carefully remove the oil from the skillet, leaving the chicken. Discard the oil.

- Season the chicken breasts all over with the salt and pepper. Transfer the chicken to a gallon-size resealable freezer bag. - Soak bamboo skewars for atleast 30 minutes or overnight.
- Heat oil in small saucepan. Combine shallots, garlic, ginger, lemon grass and jalepeno and saute for 5 minutes on medium low heat. Put remaining marinade ingredients in a seperate bowl and add cooked mixture. Let cool. Cut chicken breast into 16 slices (appoximately 1 oz each). Pour over chicken and refrigerate atleast 1 hour.

- To Marinate: Combine chicken and lemon juice in a large resealable plastic bag. Squeeze out air and seal bag. Refrigerate to marinate overnight, turning once.

- Place a chicken breast between a layer of parchment paper or plastic wrap and use a mallet, rolling pin or the flat side of a heavy knife to pound to a thickness of about 1/2 inch. Repeat with remaining breasts.
- Season chicken with salt, pepper and paprika. Place in a bowl and toss with lime zest, garlic and oil. Cover and marinate at room temperature for 30 minutes or overnight in the refrigerator.

LEMON CHICKEN WITH CUCUMBER SALSA

- 1. For chicken and marinade, rinse chicken and pat dry with paper towels. Trim any excess fat from chicken. Zest lemons to measure 1 Tbsp. zest. Juice lemons to measure 1/2 cup juice. Place zest and juice in bowl. Press garlic into bowl. Add oil, oregano, paprika, salt and black pepper - whisk together. Remove 2 Tbsp. of the marinade and reserve for use in the salsa.
- 2. Place chicken and remaining marinade in resealable plastic food storage bag, turn to coat. Marinate in refrigerator 2-4 hours, turning occasionally.
- 3. Meanwhile, for salsa, coarsely chop cucumber and onion. Slice olives. Dice bell pepper. Place vegetables in small bowl. Add reserved 2 Tbsp. marinade and mix gently. Cover and refrigerate until read to serve.
- 4. Removed chicken from marinade. Discard plastic bag with marinade. Place chicken, skin side up, on broiler pan. Broil until chicken registers 180 degrees F in the thickest part of the thigh portion and juices run clear.
- Serve salsa with chicken.

SPICE-CRUSTED CHICKEN BREASTS WITH LEMON-CUCUMBER RAITA

- Preheat the oven to 350°. In a small dry skillet, toast the coriander, cumin and fennel seeds over moderate heat until golden and fragrant, about 3 minutes. Transfer to a spice grinder and let cool. Grind the seeds to a fine powder.
- Spread the shredded cucumber on several layers of paper towel and blot dry with more paper towels. Transfer the cucumber to a bowl and stir in the yogurt, lemon zest, garlic, cayenne and 1 teaspoon of the spice mixture; season the raita with salt and pepper.
- Brush the chicken with 2 tablespoons of the olive oil and season with salt and pepper. Sprinkle the remaining spice mixture all over the breasts. Heat 2 large ovenproof skillets over moderately high heat and add 1 tablespoon of olive oil to each. Add 3 of the breasts to each skillet, skin side down, and cook until golden, about 4 minutes. Turn the breasts and continue cooking for another 3 minutes. Transfer the skillets to the oven and bake the chicken for about 8 minutes, or until just cooked through. Serve the chicken warm, with the raita.
