A few years ago, I put together a special cookbook for folks who cook for themselves. This is one of my favorite recipes in the book.-John Davis, Mobile, Alabama

Herbed Rice image

Steps:

  • In a small saucepan, cook rice and onion in butter until onion is tender. Add the seasonings; cook for 1 minute. Add broth and salt if desired; bring to a boil. Cover and simmer for 15 minutes or until liquid is absorbed and rice is tender.

Nutrition Facts :

1/4 cup uncooked long grain rice
1 green onion with top, cut into 1-inch pieces
1 tablespoon butter
1/8 teaspoon each dried tarragon, thyme, basil, parsley flakes, and pepper
1/2 cup chicken broth
Salt to taste, optional

SAVORY HERB RICE

"I got this recipe from the mother of one of my college roommates many years ago and filed it away," writes Suzy Mercker of Lawrenceville, Georgia. "I found it one night by accident and made it for dinner. Now it's a staple that I often serve with chicken, beef, pork...or even fish."

Savory Herb Rice image

Steps:

  • In a large saucepan, combine the water, butter and bouillon. Bring to a boil. Add remaining ingredients. Reduce heat; cover and simmer for about 15 minutes or until liquid is absorbed and rice is tender.

1 tablespoon butter
1 teaspoon chicken or 1/2 vegetable bouillon cube
1 cup uncooked long grain rice
2 tablespoons reduced-sodium soy sauce
1 teaspoon dried minced onion
1/2 teaspoon onion powder
1/4 teaspoon dried basil
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme

Herbed Basmati Rice image

Steps:

  • Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) Turn off the heat and allow the rice to sit covered for 5 minutes. Add the parsley, dill, scallions, and pepper. Fluff with a fork, and serve warm.

1 cup uncooked long-grain (white) basmati rice (recommended: Texmati)
1 3/4 cups water
3/4 teaspoon kosher salt
1 tablespoon unsalted butter
2 tablespoons minced fresh curly parsley leaves
1 tablespoon minced fresh dill leaves
1 tablespoon minced fresh scallions, white and green parts
Pinch freshly ground black pepper

Turmeric Chicken with Herbed Rice image

Steps:

  • 1. Preheat oven to 375 with a rack about 8 inches from heat source. Heat oil in a deep, large, broiler safe skillet over medium-high. Sprinkle chicken skin evenly with pepper, turmeric and 1/4 teaspoon of salt. Place chicken, skin side down, in hot oil. Cook, undisturbed, until skin is crisp and golden brown, about 10 minutes.
  • 2. Meanwhile, working with 1 lemon at a time, cut top & bottom off fruit, exposing segments. Put fruit cut side down on work surface, then cut away peel and white pith, completely exposing segments. Chop flesh, discarding seeds.
  • 3. Transfer chicken from skillet to a plate; reserve 2 Tbs. drippings in skillet. Reduce heat under skillet to low. Add shallots and cook, stirring often, for about 2 minutes. Stir in 1 1/2 cups water, rice, herbs, cumin, chopped lemons, and remaining tsp. salt. Nestle chicken, skin side up, in rice mixture. Bring to a simmer over medium-high. Cover skillet, and transfer to preheated oven. Bake until rice is tender, about 20 minutes.
  • 4. Remove skillet from the oven. Increase oven temperature to broil. Uncover skillet, scatter asparagus around chicken, burying some asparagus in the rice. Broil until chicken skin is crisp again and asparagus is cooked, about 5-7 minutes. Garnish with additional herbs.

1 1/2 teaspoons Olive Oil
4 pieces Chicken thighs, bone in (7 oz.) w/ skin
3/4 teaspoon Black Pepper
1/2 teaspoon Ground Turmeric
1 1/4 teaspoons Kosher Salt
2 pieces Lemons, small
4 pieces Shallots, small - quartered lengthwise
1 cup Basmati Rice
1/2 cup Chopped mixed fresh tender herbs (mint and/or dill) + some for garnish
2 teaspoons Cumin Seeds
8 ounces Asparagus, trimmed & sliced diagonally

EASY HERB RICE

This is an easy staple to add to a variety of different meals, added to a stir-fry, or just have a few veggies thrown in. Save money by buying rice in bulk and adding your own seasonings rather than buying it boxed and pre-mixed. The required ingredients are shown in the photo.

  • Place the chicken thighs in a large bowl. Sprinkle the dry rub over the chicken and, with clean hands, toss the chicken to evenly coat; set aside.
  • Pour a glug or two of olive oil into a large braiser or Dutch oven and bring the heat to medium-high. Place the chicken thighs into the skillet, skin-side down, and cook for 2-3 minutes or until the chicken skin has crisped and is golden in color. (If using skinless, just place face-side down and cook until slightly golden—about 2-3 minutes.) Flip the thighs over, and cook for another 2-3 minutes. Remove the thighs and set them aside on a plate. The thighs won't be cooked through, we just want a nice golden sear at this point.
  • Bring the heat down to medium and add the garlic, onions, mushrooms, and fresh herbs to the pan. Simmer for about a minute or two, or until fragrant and tender, and add a splash of chicken stock. Bring the stock to a simmer and deglaze the pan by scraping the pan bits left behind from the chicken using a spatula or wooden spoon.
