GRILLED CHICKEN WITH BOK CHOY, SHIITAKE MUSHROOMS, AND RADISHES
This recipe purposely gives you more chicken than you'll need for one sitting. Reserve the leftovers, plus a cup of the Mango-Sesame Dressing, to make quick work of Noodle Salad With Chicken and Snap Peas a few days later.

Steps:
- Arrange all vegetables on large rimmed baking sheet. Brush vegetables lightly on both sides with 1/3 cup Mango-Sesame Dressing; sprinkle with salt and pepper.
- Arrange chicken on sheet of foil. Brush both sides of chicken with 1/3 cup dressing, then sprinkle with salt and pepper.
- Do ahead
- Vegetables and chicken can be prepared 2 hours ahead. Let stand at room temperature.
- Coat grill rack generously with nonstick spray and prepare barbecue (medium-high heat). Grill vegetables until just tender, turning occasionally, about 8 minutes for onion rounds and 4 minutes for mushrooms, radishes, bok choy, and pepper strips. Return all vegetables to same baking sheet.
- Grill chicken until cooked through, 5 to 6 minutes per side. Transfer chicken to cutting board. Let stand 5 to 10 minutes. Cool 2 chicken breasts; wrap and chill for Noodle Salad.
- Arrange remaining 4 chicken breasts and vegetables on platter. Serve with remaining dressing.

CHICKEN, MUSHROOM, AND BOK CHOY KEBABS
Steps:
- Marinate chicken:
- Mince and mash garlic to a paste with a pinch of salt.
- Boil soy sauce, Sherry, and brown sugar in a small saucepan over medium heat, stirring occasionally, until reduced to about 2/3 cup, 5 to 7 minutes. Stir in garlic paste, ginger, and sesame oil, then cool to room temperature.
- Pour half of marinade into a large sealable bag and chill remainder for basting. Add chicken to bag and marinate, chilled, turning bag occasionally, at least 3 hours.
- Make kebabs:
- Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas).
- Meanwhile, halve bok choy lengthwise and blanch in a large pot of boiling salted water (2 Tbsp salt for 5 qt water) until crisp-tender, about 2 minutes. Immediately transfer with tongs to an ice bath to stop cooking. Pat bok choy very dry, then, bending leaves, thread 3 or 4 halves (through bulb and leaves) onto each of 3 or 4 skewers. Put on a tray.
- Toss mushrooms with vegetable oil. Thread mushrooms (through sides) and chicken (discard marinade) onto remaining skewers, alternating them. Put on another tray.
- Oil grill rack, then grill chicken-and-mushroom skewers, covered only if using a gas grill, 6 minutes. Turn over and baste with some of remaining marinade, then grill, turning and basting occasionally (but not during last 3 minutes), until chicken is just cooked through and mushrooms are tender, 6 to 8 minutes more.
- Lightly brush bok choy with oil and grill, covered only if using a gas grill, turning once, until grill marks appear, about 2 minutes total.
HOISIN CHICKEN AND BOK CHOY KEBABS

- Preheat a grill to medium high and brush the grates with vegetable oil. Combine 2 tablespoons vegetable oil, the soy sauce, ginger, five-spice powder and white pepper in a large bowl. Add the chicken and toss to coat. Thread the chicken onto four 10-inch skewers. Thread the peppers and bok choy onto 4 more skewers.
- Grill the chicken, covered, turning occasionally, until well marked, 10 to 12 minutes, brushing with the hoisin sauce during the last minute of grilling. Sprinkle with sesame seeds and scallions.
- Meanwhile, brush the vegetable kebabs with vegetable oil and season with salt. Grill until the vegetables are charred, about 3 minutes per side. Serve with the chicken kebabs.
STEAMED CHICKEN WITH BLACK MUSHROOMS AND BOK CHOY
Steps:
- Soak shiitakes in boiling-hot water in a bowl until softened, about 30 minutes. Cut out and discard stems, then squeeze excess liquid from caps and discard soaking liquid.
- Hack each chicken thigh crosswise through bone into thirds with cleaver.
- Stir together soy sauce, rice wine, cornstarch, sesame oil, and salt in a large bowl until smooth, then add chicken, mushroom caps, scallions, and ginger and toss well to coat. Marinate at room temperature, stirring occasionally, 30 minutes.
- Put rack into wok and add enough water to reach just below it. (If using a steamer insert, use approximately 4 inches of water.) Cover wok (or skillet) and bring water to a boil. Transfer chicken mixture to pie plate and put in wok (or skillet), then steam, covered, stirring once, until chicken is just cooked through, about 25 minutes.
- While chicken is steaming, cook bok choy, uncovered, in a 4- to 6-quart pot of (unsalted) boiling water until just tender, 7 to 9 minutes, then drain in a colander.
- Carefully remove pie plate from wok. Arrange bok choy around edge of a large deep platter and spoon chicken and sauce in center.

- In a medium bowl, combine the chicken broth with soy sauce, wine, sugar, dissolved cornstarch and water, sesame oil and crushed red pepper. Whisk until smooth.
- In a large skillet, heat 2 t. oil until hot and add the onion wedges. Cook for about 6 minutes. Add mushrooms and continue to cook for another 6 minutes. Transfer onion and mushrooms to a plate.
- Add another 2 t. oil to the skillet and season chicken with salt and pepper and add to the skillet and cook over med. high heat until golden about 4 minute each side. Transfer to the plate with onions and mushrooms.
- Add 1 T. oil to the skillet and add the bok choy and red pepper pieces. Cook on medium high heat until crisp tender about 3 minutes. Transfer to the plate with the onion, mushrooms, and chicken.
- Add the remaining oil to the skillet and cook the ginger and garlic until fragrant about 1 minute. Return the chicken and vegetables to the skillet. Whisk the sauce in the bowl, and add to the skillet. Bring to a boil and simmer stirring until slightly thickened, about 1 minute. Transfer to bowls and serve.

- combine honey, soy sauce, sherry, 5-spice, ginger, garlic, salt and pepper and creyene pepper with the oil in a small jug.
- place chicken in a med bowl with half of the honey mixture, toss to coat chicken in the marinade, cover, refrigerate for 10 minute.
- meanwhile cook mushrooms and bok choy, in batches, on a heated oiled grill plate (or barbecue) until just tender. cover to keep warm.
- drain chicken but keep the marinaded honey.
- cook chicken on the same oiled plate until browned on both sides. cover and stand for 5 min, then slice thickly.
- meanwhile, combine the remaining honey mixture in a small saucepan with the stock.
- bring to the boil, stir in blended cornflour with the water, cook stirring, until sauce boils and thickens slightly.

- Mix the all-purpose flour and the water very well by hand and knead until you make a smooth ball of dough.
- Knead the dough very well until the dough is quite flexible (about 5 minutes).
- Leave your dough in the bowl, covered, or in a plastic bag while you prepare the rest of the ingredients. You should not let the dough dry out or it will be hard to work with.
- Chop the onion, garlic, ginger, cilantro, bok choy, green onions, and mushrooms into very, very small pieces.
- Pre-cook the tofu and mushrooms, with the goal of cooking the water out of them. To do this, heat ¼ cup of cooking oil in a pan on high. Add chopped tofu and cook on medium-high for 2 minutes, until the edges are brown. Add the chopped mushrooms and cook another 3-4 minutes on medium high.
- Cool the mushrooms and tofu then mix very well with the other filling ingredients (if the mushrooms and tofu are not cooled, the green of the other vegetables will not come out correctly).
- Place the dough on a chopping board and use a rolling pin to roll it out quite thin, about ⅛ inch thick. It should not be so thin that you can see through it when you pick it up.
- After you have rolled out the dough, you will need to cut it into little circles for each momo.
- Method 1: The easiest way to do this is to turn a small cup or glass upside-down to cut out circles about the side of the palm of your hand. We use a cup 3 and ⅓ inches in diameter. That way, you don't have to worry about making good circles of dough, because each one will be the same size and shape. If you make circles this way, you may want to thin the edges of the circle a little bit before adding the filling by pinching your way around the edge of the circle. The idea is to make the edges thinner so that when you fold the dough there won't be a giant glob of dough in the folded places.
- Method 2: Of course, you can also make the circles by the more difficult traditional way. For this, first pinch off a small ball of dough. Next, use your palm to flatten out the ball. Then, flatten out the dough into a circle with a polling pin, making the edges more thin than the middle. This method is much harder to do and takes more time, though many Tibetans still use this method. In this case, the edges are pre-thinned so there is no need to thin them anymore.
- Now that you have a small, flat, circular piece of dough, you are ready to add the filling and make the mom shapes. These are many different choices for mom shapes, but for these veggie momos we will use a very common and pretty half-moon shape. This is one of the easier shapes to make.
- For this style, you begin by holding the flat circular dough in your left hand and putting about a tablespoon of veggie filling in the middle of the dough. It can be challenging if you put too much, so at first you may want to start with a little less filling.
- Beginning anywhere on the circle, pinch the edge of the dough together. Now you will fold in a small piece of dough from the "top" edge of the circle and pinch it down against the "bottom" edge of the circle. (Where the "bottom" half of the circle is the half facing you when the mom is in your hand.) The "bottom" edge of the circle-the edge nearest you-stays relatively flat and doesn't get folded. All the folding happens only on one side of the momo. Continue folding and pitching from the starting point, moving along the edge until you reach the other tip of the half-moon. The important point is to close all the openings well so that you don't lose the juice while cooking.
- As you are making your momos, you will need to have a nonstick surface and a damp cloth or lid handy to keep the momos you've made from drying out while you're finishing the others. You can lay the momos in the lightly greased trays of your steamer and keep the lid on them, or you can lay them on wax paper and cover them with the damp cloth.
- Boil water in a large steamer. (Tibetans often use a double-decker steamer to make many momos at one time.)
- Oil the steamer surface lightly before putting the momos in, so they won't stick to the metal. (We use spray oil.)
- Place the momos a little distance apart in the steamer and they will expand a little bit when they cook. They should not be touching.
- Add the momos after the water is boiling.
- With the water boiling on high heat, steam the momos for 10-12 minutes.
- As long as the dough is cooked, they are done, as the veggie filling hardly needs to cook more.
- Serve the momos right off the stove with the dipping sauce of your choice. At home, we mix together soy sauce and Patak's Lime Relish, which we get in Indian stores or the Asian section of supermarkets.
CHICKEN AND MUSHROOM KEBABS IN PITA BREAD

- Whisk first 6 ingredients in bowl to blend. Pour half of marinade into another bowl. Add mushrooms to first bowl; add chicken to second bowl. Toss to coat; let stand 30 minutes.
- Meanwhile, prepare barbecue (medium-high heat). Wrap 1 bacon piece around each chicken piece. Alternate 4 mushrooms and 3 chicken pieces on each skewer, piercing bacon to secure. Discard chicken marinade. Reserve mushroom marinade. Grill kebabs until chicken is cooked through, turning skewers and basting with reserved mushroom marinade, about 25 minutes. Grill pita breads in foil at edge of barbecue until warm.
- Unwrap pita breads. Place 1 kebab in center of each bread. Fold bread sides up around each kebab and pull out skewer.
CHEESY CHICKEN AND MUSHROOM BAKE
This recipe is a tasty blend of chicken breasts browned in butter, then topped with sauteed mushrooms and onions, and finally baked with grated Parmesan, mozzarella, and scallions. A favorite in my household.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a baking dish lightly.
- Sprinkle salt and pepper on chicken. Heat butter in a pan over medium-high heat. Add chicken and brown on all sides, 5 to 7 minutes. Remove chicken and place in the prepared baking dish.
- Stir mushrooms, onion, garlic, and flour into the remaining butter in the saucepan and saute over medium-high heat until softened, about 5 minutes. Add chicken broth and bring to a boil while scraping the "good stuff" off of the bottom of the saucepan, letting it add to the flavor. Cook until thickened to your liking; drizzle over chicken.
- Bake in the preheated oven for 30 minutes. Sprinkle with Parmesan cheese, mozzarella cheese, and scallions. Continue to bake until chicken is no longer pink in the center and cheese is melted, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
