5-Ingredient Fix Contest Entry. Converted a chicken and pasta gratin dish into this quick and easy casserole dish using hash browns instead of noodles. It actually may be better than the noodle version! If you are planning ahead of time, you can actually prepare the casserole a day or two beforehand and just bake it when you are ready. I found that this actually makes the flavors blend together and intensifies the flavor of the entire dish!

Steps:

  • 1. In a medium non-stick saucepan, sauté the chicken until cooked through.
  • 2. Add 2 cans of condensed mushroom soup and the frozen green peas until the soup is heated through.
  • 3. In a 2-½ quart casserole, combine the shredded hash browns and soup mixture from #2.
  • 4. Sprinkle mozzarella cheese on top. (You can store in the refrigerator at this point and bake a day or two later.).
  • 5. Bake the casserole for 25 to 30 minutes in a preheated 400 degree F oven until bubbly.

Steps:

  • In a large bowl, combine the hash browns, cheese, onion, salt and pepper. In another bowl, combine the sour cream and soup. Pour over potato mixture and mix gently to combine. Transfer to a 3-qt. baking dish coated with cooking spray. Toss cornflakes and butter; sprinkle over the top. Bake, uncovered, at 350° for 45-55 minutes or until heated through. Sprinkle with parsley.

CHICKEN AND POTATO GRATIN WITH BROWN BUTTER CREAM

This gratin is decidedly autumnal, inspired by a recipe from one of my favorite food writers, Richard Olney. Olney's chicken gratin calls for making a savory custard, but here you'll combine brown butter and heavy cream with aromatics for a flavorful and easy sauce instead. It's still a luxurious dish. The breadcrumbs for the topping get toasted separately, so they stay crisp and the chicken (ideally seasoned a day in advance so the salt has time to work its way into the meat) and vegetables can get nicely browned and crisp too. I love that this gratin can reinvent itself based on what's available at the market (or in my fridge). In the spring, you might make it with asparagus and young onions; in summer, with tomato wedges, swapping in olive oil for the cream. I recommend serving this fall version with lemon wedges for squeezing over to cut the richness of the dish. A brightly dressed arugula salad would also do the trick.

Chicken and Potato Gratin With Brown Butter Cream image

Steps:

  • Season chicken all over with 4 tsp. salt. Place in an airtight container and cover. Chill at least 1 hour and up to 1 day.
  • Place a rack in middle of oven; preheat to 425°F. Toss potatoes, shallots, and 2 tsp. salt in a large bowl.
  • Melt 4 Tbsp. butter in a small saucepan over medium heat and cook, stirring often, until butter foams, then browns, 5-8 minutes. Immediately remove from heat (it will continue to darken) and stir in cream, garlic, pepper, nutmeg, and remaining 1½ tsp. salt. Set saucepan over medium-low heat and cook, stirring, until salt is dissolved and mixture is warm to the touch. Stir in thyme and sage; remove from heat.
  • Heat remaining 1 Tbsp. butter in a large stainless-steel skillet over medium-high until melted and bubbling. Working in 2 batches, cook chicken, skin side down, until golden underneath, about 5 minutes. Transfer chicken to a 13x9" or 3-qt. baking dish and arrange skin side up. Set skillet with pan drippings aside. Nestle potatoes and shallots around chicken (don't place on top). Pour brown butter cream over chicken and vegetables, making sure herbs and spices are evenly dispersed and tucking herbs into vegetables so they don't get too crispy when they bake.
  • Bake gratin until cream is mostly reduced and chicken and vegetables are dark golden brown, about 40 minutes. Let gratin cool 5-10 minutes.
  • Meanwhile, pulse bread in a food processor until pieces are about oat-size (you should have about 1¼ cups). Toss breadcrumbs in pan drippings in reserved skillet to coat. Cook over medium heat, scraping up browned bits with a spatula, until deep golden brown, 5-7 minutes. Let cool.
  • To serve, top gratin with breadcrumbs. Serve lemon wedges alongside for squeezing over if desired.

7½ tsp. kosher salt, divided
1 lb. small potatoes (such as fingerling or baby Yukon Gold), halved lengthwise
8 oz. small or medium shallots, halved through root ends

EASY BREEZIE HASHBROWN CASSEROLE #5FIX

5-Ingredient Fix Contest Entry. Easy as can be and simple few minutes and done. Can eat alone as meal with bread or added to breakfast as side item with eggs and you are set to go. Back when I was working with Weight Watchers I was craving Cracker Barrell hashbrown casserole and figured out a way that I could still have this with out all the calories. By subing 2% milk fat cheese products and olive oil instead of regular oils and low fat soup I still enjoyed the item as much as I did Cracker Barrell and it freezes well too.

  • since product is fridgerated all you have to do is put a lil bit of oil in skillet to brown off the shreds with about 1/4 cup should be enough.
  • In large skillet start with diced onion and diced or cubed ham and oil, allow the onions and ham to sautee until onions are transparent in color and ham is slightly browned then adding the potatoe shreds to the onions and ham mixture and continue to brown slightly to a golden color and still a bit flexable not hard and crunchy, won't work if it hard and crisp. Once you have slight browning done then take and drain on paper towel covered plate long enough to rid all the pototes mixture of all the excess oil and helps to pat them off too. In a large baking pan about a 13 x 9 should work sprayed heavy with Pam. Mix soups with 1 bag of shred cheese and mix in large bowl big enough to hold the potatoes mixture and soup mixture. Mix well enough that all pototoes are covered well and layer this in baking pan with shreds until you have topped out with last layer being shredded cheese. Place in 350 degree oven for about 30 minutes to allow all cheese to melt all the way through.

Hash Brown Crusted Stuffed Chicken Breasts #5FIX image

Steps:

  • Preheat oven to 375 degrees F. Rinse chicken breasts and pat dry. Remove any excess fat.
  • Using a sharp knife, cut a large pocket into the chicken breasts, cutting horizontally and lengthwise into the chicken, but not cutting through the back or sides.
  • Place the vegetables into a small bowl, add 1/2 cup of cheese and toss to mix. Divide mixture into 4 equal portions and put into the chicken pockets.
  • Use seasoned salt to sprinkle evenly over both sides of the chicken pieces.
  • In a small bowl, mix the Simply Potatoes® Shredded Hash Browns with 1 cup cheese. Use half of the mix to cover the bottom of a baking dish large enough to accommodate the 4 chicken breasts with no excess space between or around them. Lay the chicken breasts on top of the hash browns, then, using the remaining hash brown mixture, patting equal amounts onto the tops of each piece of chicken.
