FAIREST WHEELS (CHICKEN PINWHEELS)
I had these at a girlfriends bridal shower and I just had to get the recipe from her sister, these are the tastiest little things. I could have eaten half the tray myself! Great little party snack or appetizer!

Steps:
- In medium bowl, combine chicken, lettuce, cheddar cheese, green onions and red pepper.
- Set aside.
- In small bowl, beat together cream cheese, sour cream, and red pepper jelly on low speed of electric mixer.
- Spread 1/3 cream cheese mixture over one side of tortilla.
- Sprinkle with 1/3 chicken mixture, leaving 1/2 inch border at top just covered with cream cheese mixture (so you can seal it closed.) Roll up tightly, jelly roll style.
- Wrap tortilla roll in plastic wrap.
- Repeat with remaining tortillas and filling.
- Refrigerate for 2 hours.
- Trim off the ends and cut each roll into 8 slices, serve cold.

CHICKEN PINWHEELS
This is a different twist on a pinwheel than what I'm use to. It is very good! I had them at a New Year's party and asked for the recipe...here it is. :)

Steps:
- Combine chicken and broth in large nonstick skillet.
- Bring to a boil.
- Cover; reduce heat.
- Simmer 8 to 10 minutes or until chicken is done.
- Drain; cool slightly.
- Shred chicken or cut into thin strips.
- Spread each tortilla with cream cheese to within 1/2 inch of edges.
- Sprinkle evenly with garlic pepper and cayenne.
- Top evenly with chicken, slaw mix and chopped pepper.
- Press lightly to flatten.
- Roll tightly.
- Wrap each roll in plastic wrap.
- Refrigerate until ready to serve.
- Remove plastic wrap from rolls and cut each into 6 pieces.
- Use wooden picks for serving.
- Serve with salsa on the side.
- Refrigerate leftovers.

CHICKEN AND HONEY MUSTARD PINWHEELS

- Mix the chicken, arugula, cheese, honey, mustard and lemon zest in a medium bowl until smooth. Sprinkle with salt and pepper.
- Divide the mixture in half and spread over the breads, leaving a 1/2-inch border. Starting at the longest edge, tightly roll up the breads like a jelly roll. Cut each sandwich into eight 1 1/2-inch-thick pieces using a serrated knife and serve.
CHICKEN PINWHEELS

- Place chicken in between plastic wrap and pound out until 1/4-inch thick. Place 1 slice of ham and 1 slice of bacon onto each breast of chicken. Lightly scramble the eggs and let cool. Divide eggs evenly over chicken and spread out. Top with diced pickles and roll into pinwheels. Once chicken is rolled, tie with string to secure. Heat the butter in a saute pan and brown chicken rolls. Remove chicken rolls from the pan and set aside. Add flour to the same saute pan, and cook until light brown. Add the chicken stock, making sure to stir out any lumps. Return chicken to pan and place in a preheated 350 degree oven for 1 hour. Remove from oven and sprinkle with chopped tarragon. Slice each breast into 4 pieces and serve with 2 tablespoons of sauce.
CHICKEN HAM PINWHEELS

- Flatten chicken to 1/4-in. thickness. Combine 1/8 teaspoon basil, salt, garlic salt and pepper; sprinkle over chicken. Top each with a ham slice. , Roll up jelly-roll style; place seam side down in a greased 11x7-in. baking dish. Drizzle with lemon juice and sprinkle with paprika. Bake, uncovered, at 350° for 30 minutes or until chicken juices run clear. - Mix reduced-fat cream cheese and shredded cheese in medium bowl until blended. Stir in all remaining ingredients except tortillas.
- Spread onto tortillas; roll up. Wrap individually in plastic wrap. Refrigerate 2 hours.

- Pound chicken breasts with a meat mallet to 1/4-in. thickness; layer with prosciutto and mozzarella. Roll up chicken from a short side; secure with toothpicks., Place eggs and bread crumbs in separate shallow bowls. Dip chicken in eggs, then roll in crumbs to coat. - Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry sheets on a lightly floured surface to a 9x12-inch (23x30 cm) rectangles.
- Spread the pesto sauce over the sheets using a spatula or spoon. Top with the shredded chicken, Parmesan, and salt.
- Starting from a short end, carefully roll up the puff pastry to form logs.
- Slice the logs into ½-inch (1 cm) rounds and arrange them on the prepared baking sheet, spacing 1 inch (2 cm) apart. Brush with egg wash.
