- Toss bananas with lemon juice; drain well and set aside. In a bowl, combine the cracker crumbs, sugar and butter. Press into a greased 9-in. springform pan., In a small bowl, beat the sour cream and pudding mix on low speed for 2 minutes. Fold in banana and whipped topping. Pour into prepared crust. Chill for up to 6 hours. Sprinkle with pecans.

- Purée the bananas with a stick blender and tip into a heavy-bottomed saucepan with the cream. Heat gently until steaming, stirring all the time. Meanwhile, whisk together the sugar and eggs. Pour the hot banana cream over the eggs and whisk well to combine, then tip everything back into the saucepan.
- Cook over a low heat, stirring continuously, until thick and the mixture reaches 78C on a digital cooking thermometer. You'll need to stir constantly, scraping the bottom of the pan so the eggs don't overcook or burn. Add the lime zest, whizz up again with a hand blender, pass the mixture through a sieve into a jug and pour into six serving glasses, ramekins or one large dish. Cover with cling film, then chill for at least 3 hrs, but preferably overnight, until set. Remove from the fridge and sprinkle with the dates, honeycomb, pistachios and banana chips to serve.

Steps:
- In a deep bowl, whip the cream and agave nectar with a handheld mixer for 2 to 3 minutes, until thick, fluffy, stiff peaks form. Mix in the bananas, then whip for 20 to 30 seconds to incorporate.
- Use immediately, spooning dollops over cupcakes. Or store in a glass Mason jar in the refrigerator for up to 3 hours and use before the bananas turn brown.

- Slice the dates in half & remove the pits then chop into large pieces. Cut the bananas into 1/2 inch thick rounds then cut the rounds in half.
- Whip the cream & sugar together with an electric mixer until stiff peaks are formed.
- Gently fold in the bananas and the dates. Separate into individual serving dishes and sprinkle with cinnamon. Chill for 30 minutes before serving.
