CHICKEN TEQUILA SUNRISE
Not your 'typical' tequila-chicken recipe. This recipe uses bone-in chicken pieces and is baked in the oven - no marinating! You will love the succulent, juicy taste of this chicken - and the ease of preparation. NOTE: Please use bone-in chicken pieces as you won't have the same delicious results with boneless, skinless chicken.

Steps:
- Preheat oven to 425 degrees.
- Spray a shallow baking pan (with sides) large enough to accommodate the chicken in a single layer with non-stick cooking spray.
- Place unseasoned chicken pieces, skin-side up, in baking pan; place pan in preheated oven for 25 minutes to crisp skin and melt fat.
- Remove from oven and pour off fat.
- Place onion slices under chicken pieces.
- Combine remaining ingredients and pour over chicken.
- Return to oven for 20 minutes or until chicken is tender and crisp, and liquid thickens.
MANGO TEQUILA SUNRISE
Steps:
- Place 2 large ice cubes into a collins glass. Add the tequila, mango nectar and orange juice and stir. Carefully pour in the creme de cassis (it will settle at the bottom of the glass). Serve immediately (and do not stir).
TEQUILA SUNRISE
Steps:
- Fill a Collins or highball glass with ice. Add the tequila. Add enough orange juice to come almost to the top of the glass; the amount will vary depending on the size of the glass. Gently pour the pomegranate syrup into the glass and serve. Do not stir.
- For Syrup: Place the pomegranate juice, sugar and lemon juice in a 4-quart saucepan set over medium heat. Cook, stirring occasionally, until the sugar has completely dissolved. Once the sugar has dissolved, reduce the heat to medium-low and cook until the mixture has reduced to 1 1/2 cups, approximately 50 minutes. It should be the consistency of syrup. Remove from the heat and allow to cool in the saucepan for 30 minutes. Transfer to a glass jar and allow to cool completely before covering and storing in the refrigerator for up to 6 months.
- For Molasses: Place the pomegranate juice, sugar and lemon juice in a 4-quart saucepan set over medium heat. Cook, stirring occasionally, until the sugar has completely dissolved. Once the sugar has dissolved, reduce the heat to medium-low and cook until the mixture has reduced to 1 cup, approximately 70 minutes. It should be the consistency of thick syrup. Remove from the heat and allow to cool in the saucepan for 30 minutes. Transfer to a glass jar and allow to cool completely before covering and storing in the refrigerator for up to 6 months.

- For the Marinade: Place all ingredients, except chicken breast, in the bowl of a food processor or blender. Pulse until combined and well blended. Transfer marinade to a Ziploc bag and add in chicken. Seal and place in refrigerator overnight, turning often.
- For the Salsa: Place all ingredients in a large bowl and toss gently to combine. Taste and adjust for seasoning.
- Preheat Oven to 425 degrees F. Spray a large baking dish with nonstick cooking spray. Remove chicken from marinade and discard. Brush chicken lightly with oil and season to taste with salt and pepper. Place chicken breasts in baking dish and bake for 20-25 minutes, or until chicken registers 160 degrees F on an instant read thermometer. Remove chicken from oven and brush with glaze. Let chicken rest for 5-10 minutes.
