Steps:
- Whisk the chicken broth, soy sauce, cornstarch, and ginger together in a small bowl; reserve.
- Heat oil in a large skillet or wok. Cook and stir chicken and garlic in the oil until chicken is cooked through, 8 to 10 minutes. Stir in mushrooms, water chestnuts, and reserved chicken broth mixture. Cook until sauce begins to thicken, 3 to 5 minutes.
- Stir snow peas into the pan and cook until tender, 3 to 5 minutes. Transfer to a platter and sprinkle with sesame seeds before serving.

Steps:
- Remove all visible fat from chicken and cut into bite size pieces.
- Marinate in cornstarch, one teaspoon soy sauce and sherry.
- Slice mushrooms.
- Remove stems from pea pods.
- Heat oil in wok.
- Add snow peas and stir fry until covered with oil.
- Add chicken stock.
- Cover and cook about 30 seconds until jade green.
- Remove and drain.
- Stir fry chicken until no longer pink.
- Add mushrooms and bamboo shoots and stir fry for one additional minute.
- Add back snow peas and toss to heat.
- Make well in center of wok or skillet and add sauce mixture.
- Stir until it starts to thicken, then mix in chicken and vegetables.
- Serve over rice.

CHICKEN WITH FRESH MUSHROOMS & SNOW PEAS
AKA as "Moo Goo gai pan". Found this recipe about 20 + years ago in a local grocery store flyer. I tweaked it a bit & came up with this.....

Steps:
- Lay each chicken breast flat on the cutting board & slice as thin as possible. (This is much easier if they're slightly frozen OR ask your butcher to do it.).
- In a large bowl, toss the chicken & cornstarch until well coated.
- Add the egg whites, cooking sherry, ginger & 1 teaspoons salt & mix thoroughly.
- Snap off the tips of the snow peas, if need be.
- Have everything within easy reach when ready to cook.
- Heat a 10-12 inches skillet over high heat for 30 seconds.
- Pour in 1 T. cooking oil & swirl around pan & heat for another 30 seconds.
- TURN DOWN HEAT IF OIL STARTS TO SMOKE.
- Add the mushrooms, snow peas & ½ teaspoons salt.
- Cook for 2-3 minutes, stirring often.
- Transfer the vegetables to a warm platter & set aside.
- Add 3 T. cooking oil to the pan & heat for 30 seconds.
- Add the sliced chicken &stirring constantly, cook for 2-3 minutes or until chicken is firm & white.
- Return the vegetables to the pan & combine with the chicken.
- Serve over hot rice.
- ENJOY!
CHICKEN WITH CREAMY MUSHROOMS AND SNAP PEAS

- Preheat the oven to 200 degrees F. Heat a large skillet over medium-high heat. Season the chicken with salt and pepper. Add 1 tablespoon oil to the skillet. Dredge 2 chicken cutlets in flour, shake off any excess and place in the skillet. Cook until golden, about 1 1/2 minutes per side; transfer to a baking dish. Repeat with the remaining 1 tablespoon oil and the other 2 chicken cutlets. Cover the dish loosely with foil; place in the oven while you prepare the vegetables.
- Add the butter to the hot skillet, then add the scallions and mushrooms; cook, stirring occasionally, until the mushrooms brown, about 4 minutes. Pour in the broth and bring to a boil, scraping up any browned bits with a wooden spoon. Cook until the liquid is reduced by half, about 3 minutes. Add the cream and boil until the sauce thickens slightly, 3 to 4 more minutes. Stir in the snap peas and heat through; season with salt and pepper. Serve the chicken topped with the creamy vegetables.

SESAME CHICKEN WITH SNOW PEAS
Skip the take-out and make your own version of this popular sweet-and-savory Chinese-American dish. We've lightened our version up by giving the chicken a quick marinade in soy and honey instead of coating and deep-frying it as most restaurants do. Steamed snow peas and brown rice round out the meal.

- Whisk 3 tablespoons soy sauce, 2 teaspoons sesame oil and the honey together in a medium bowl. Add the chicken, toss and marinate 20 minutes.
- Remove the chicken from the marinade using a slotted spoon. Heat 2 teaspoons canola oil in a nonstick skillet over medium-high heat. Cook the chicken in 2 batches, turning once or twice, until browned, 3 to 5 minutes (add 2 more teaspoons canola oil between batches). Transfer the chicken to a plate and wipe out the skillet.
- Heat the remaining 2 teaspoons canola oil in the skillet. Add the scallions, reserving some of the green parts for topping. Add the ginger and garlic and cook, stirring, 1 minute. Whisk the broth, sugar, cornstarch, vinegar, chili paste and the remaining 2 tablespoons soy sauce in a bowl; add to the skillet and cook, stirring, until thickened, 3 to 4 minutes. Stir in the remaining 2 teaspoons sesame oil.
- Meanwhile, cook the snow peas in a steamer basket set over a few inches of boiling water until crisp-tender, 2 to 3 minutes.
- Return the chicken to the skillet with the sauce and heat through. Serve the chicken and snow peas over brown rice, if desired. Top with the sesame seeds and reserved scallion greens.
CHICKEN WITH SNAP PEAS AND SHIITAKES
Steps:
- Marinate chicken in sesame oil, oyster sauce, cornstarch, 1 tablespoon garlic and 1 tablespoon ginger for 30 minutes. Blanch snap peas al dente in hot salted water followed by an iced bath. Keep the peas crisp. In a hot wok, coat bottom with oil and add remaining 1 tablespoon of garlic, 1 tablespoon of ginger and white scallions. Stir quickly to avoid burning. Season chicken and brown. After about 8 minutes, add chicken stock and reduce by half. Add mushrooms quickly stir for 1 minute. Add peas just to heat up and serve. Check for seasoning. Garnish with fresh cracked black pepper. Serve with rice.
HERBED CHICKEN WITH SNAP PEAS AND MUSHROOMS

- In a medium skillet over medium heat, cook the sesame seeds about 5 minutes, stirring frequently, until lightly browned. Remove from heat, and set aside.

- Snip off ends of pea pods; wash, leave in colander.
- Heat 2 Tablespoons of oil in wok; add pea pods and stir-fry for one minute then remove and set aside.
- Heat 2 Tablespoons oil in wok, add mushrooms and stir-fry for 30 seconds; add pea pods, salt, stock and sugar; stir-fry 2 minutes and serve hot!

CHICKEN STIR-FRIED WITH OYSTER MUSHROOMS AND SNOW PEAS
Steps:
- To make the marinade, in a large bowl, combine the salt, sugar, cornstarch, wine, and soy sauce and stir to dissolve the sugar and cornstarch. Add the chicken and mix to coat evenly.
- To make the flavoring sauce, in a small bowl, combine the sugar, white pepper, cornstarch, water, soy sauce, oyster sauce, and sesame oil and stir well.
- In a wok or large skillet, heat 1 tablespoon of the oil over high heat until hot but not smoking. Add the ginger and stir-fry for about 30 seconds, or until fragrant. Add the chicken in a single layer and cook, undisturbed, for about 1 minute, or until it begins to brown. Using a spatula, flip the chicken and stir-fry for 1 to 2 minutes, or until it has taken on color but is still slightly undercooked. Transfer to a plate.
- Add the remaining 1 tablespoon oil to the pan and heat until hot. Add the onion and stir-fry for about 1 minute, or until fragrant. Add the mushrooms, snow peas, carrot, and 2 tablespoons of the water. Stir-fry for 1 minute, or until the water has evaporated. Repeat with the remaining 2 tablespoons water.
- Return the chicken and its juices to the pan and stir-fry briefly to finish cooking. Add the flavoring sauce and stir-fry for 1 minute. Transfer to a serving plate and serve.
