CHICKEN WITH GOAT CHEESE AND SUN DRIED TOMATO
Steps:
- Preheat the oven to 375 degrees F.
- Place the chicken breasts on a sheet pan. Loosen the skin from the meat with your fingers, leaving 1 side attached. Cut the goat cheese into 1/2-inch-thick slices and place 1 or 2 slices plus 1/3 of the julienned sun-dried tomatoes under the skin of each chicken breast. Pull the skin over as much of the meat as possible so the chicken won't dry out. With your fingers, rub each piece with olive oil, and sprinkle them very generously with salt and pepper. Bake the chicken for 35 to 40 minutes, until the skin is lightly browned and the chicken is just cooked through. Serve hot or at room temperature.
ROSEMARY AND GOAT CHEESE STUFFED CHICKEN WITH WILD MUSHROOM SAUCE
Steps:
- Preheat the oven to 450 degrees F.
- Remove the backbone and wings from the chicken. Press the chicken open like a book. Carefully remove the bones from the chicken leaving the whole chicken intact with the skin. You can ask your butcher to do this for you.
- In a small bowl, combine the goat cheese, rosemary, and olive oil. Season with salt and pepper and mash together with the back of a fork.
- Turn the chicken over so the skin side is up. Gently loosen the skin by inserting your fingers underneath it to make a pocket. Stuff the rosemary goat cheese under the skin evenly over the breasts and legs. Tuck the skin back over the chicken. Season both sides of the chicken well with salt and pepper. Drizzle a little olive oil over the chicken and rub well.
- Heat a large, ovenproof saute pan over high heat. When the pan is hot, add enough olive oil to coat the bottom of the pan. When the oil is hot and begins to shimmer when swirled, add the chicken, skin side down. Cook the chicken until the skin side is a deep golden brown, about 8 to 10 minutes. Carefully turn the chicken over and transfer to the oven. Roast for 10 minutes, or until the chicken is cooked through and the juices run clear.
- Remove the chicken from the pan and keep warm. Remove all but 2 tablespoons of the fat from the pan and return to the heat. Add 1 tablespoon of the butter and the shallots and saute for 2 minutes, scraping the bottom of the pan with a wooden spoon to loosen the browned bits. Add the mushrooms and season with salt and pepper. Saute for 2 minutes, or until the mushrooms begin to brown. Add the stock and bring to a simmer. Cook 5 minutes or until reduced by 1/3. Stir in the remaining tablespoon of butter and remove from the heat. Pour the sauce over the chicken and garnish with the chives. Serve immediately.

- For chicken: Preheat oven to 350°F.

- Combine cheese, green onions and basil in small bowl.

- Spread cheese mixture lengthwise over half of each chicken piece.

- Roll chicken up, starting at one long side, into tight cylinders.
- Tie ends with string to secure or secure with a toothpick (my preference).
- Dip chicken in egg, allowing excess to drip into bowl.
- Roll in breadcrumbs, shaking off excess.
- (Can be prepared 4 hours ahead. Refrigerate.) Place chicken in 8-inch square baking dish.
- Pour 2 tablespoons melted butter over.
- Bake until cooked through, about 30 minutes.
- For sauce: Meanwhile, melt butter in heavy large skillet over medium heat.
- Add mushrooms and sauté until tender, about 8 minutes.
- Add flour and stir until butter and flour are smooth.
- Add wine and simmer 3 minutes.
- Add stock and continue simmering about 3 more minutes, stirring occasionally.
- Season sauce with salt and freshly ground pepper.
- Remove string from chicken.
- Cut rolls crosswise into 1/2-inch-thick rounds.
- Top with sauce and serve immediately.

- Combine goat cheese, chives and 1 tablespoon chopped parsley in small bowl; stir mixture to blend.
- Using meat mallet or rolling pin, pound chicken breasts between sheets of waxed paper to scant 1/2-inch thickness, forming rectangles about 6 inches by 3 inches. Mound half of cheese mixture about 2 inches from 1 short end of each chicken piece. Fold short end over cheese mixture. Continue to roll up chicken, enclosing cheese mixture. Skewer packets closed with toothpicks. Sprinkle chicken generously with pepper.
- Heat oil in heavy small skillet over medium heat. Add chicken to skillet and cook until light brown on all sides, about 8 minutes. Transfer chicken to plates. Increase heat and boil pan juices until reduced to 1/3 cup, about 2 minutes. Pour sauce over chicken. Sprinkle with remaining 1 tablespoon parsley and serve.

- For chicken:

HERBED GOAT CHEESE SAUCE
This sauce is great over grilled chicken or grilled portabella mushrooms. Recipe came from a recipe swap years ago. If you cannot find herbed goat cheese, feel free to use plain goat cheese and throw in 1 tsp of mixed herbs including rosemary, thyme and basil.

- Heat olive oil in a skillet over medium heat and cook chicken breast halves until browned on both sides, 5 to 8 minutes per side. Pour in chicken stock, artichoke hearts, pearl onions, thyme, salt, and black pepper and bring to a boil. I really wanted my husband to try goat cheese, so the other night I asked him if he wanted scalloped potatoes in a cheese sauce; he said 'yes,' and this is what I made. Afterwards he said I would definitely need to make this again, as he had four helpings. When I told him that it was goat cheese all he could say was 'REALLY?' and kept eating. I would say this was a winner; how about you? Just pour finished sauce over your choice of pasta, potatoes, or whatever you like.

- Cover the beans with cold water; either soak them overnight or bring them to the boil. If boiling, boil them for one minute, remove the pan from heat, cover and let sit for one hour.
- Drain the beans and combine them in a pan with the stock, vegetables and seasonings. Bring to a boil, remove any scum and simmer for about one-and-a-half hours, partially covered, until the beans are tender but not mushy. Keep the beans warm while preparing the sauce and chicken.
- Prepare the sauce by simmering the wine and shallots in a saucepan until the liquid is reduced by half. Add the cream and again reduce by half. While the liquid is reducing, preheat the broiler. Pour the liquid into a blender and add the cheese, butter and pepper. Puree until smooth. For a perfectly smooth sauce, strain the liquid. Keep the sauce warm, covered, over very low heat.
- Season the chicken breasts on both sides and grill or broil about four or five minutes per side; do not overcook.
- Slice the breasts and pour the sauce over the slices. Serve with the beans to one side.
