MEDITERRANEAN CHICKEN
Steps:
- Cut a two inch pocket into the thickest part of each chicken breast. Stuff each pocket with spinach and feta cheese and seal with a tooth pick. Season each breast well with salt and pepper. Heat oil over medium high heat and saute the breasts until golden brown on all sides. Remove chicken to a plate and cover with tin foil. Add onion to remaining oil in pan and cook for 2 minutes. Stir in garlic and cook for 30 seconds. Stir in white wine and bring to a simmer. Stir in tomatoes and basil. Bring to a simmer and return chicken to the pan and cover. Simmer for 10 minutes. Remove lid and season sauce to taste. Serve with butter noodles tossed with parsley.
MEDITERRANEAN CHICKEN
Steps:
- Preheat oven to 200°F. Heat 3 tablespoons oil in large skillet over high heat. Sprinkle chicken with salt and pepper. Working in 2 batches, add chicken to skillet. Cook until brown and just cooked through, about 3 minutes per side. Transfer to ovenproof plate and place in oven to keep warm. Discard oil from skillet.
- Add 3 tablespoons oil to same skillet over high heat. Add mushrooms; sauté until wilted and beginning to brown, about 3 minutes. Add broth; boil until almost all liquid evaporates, about 5 minutes. Add olives, plum tomatoes, garlic, shallot, and capers. Sprinkle with salt and pepper. Reduce heat to medium and simmer until liquid is reduced by half, about 7 minutes. Add butter; stir until melted. Mix in teardrop tomatoes. Season to taste with salt and pepper.
- Spoon mushroom mixture over chicken. Sprinkle parsley and pine nuts over. Garnish with caper berries, if desired, and serve.

- Preheat oven to 400 degrees F (200 degrees C).
- In a medium bowl, combine the egg and heavy cream and beat together well. In a separate medium bowl, combine the cracker crumbs, cheese, basil, garlic powder and salt and pepper to taste.
- Rinse chicken and pat dry. Dip each piece into the egg wash and then dredge liberally in the cracker crumb mixture. Heat the olive oil in a large skillet over medium high heat. Fry the chicken in the oil for 5 minutes per side, or until both sides are golden brown and crusty. Place chicken in a 9x13 baking dish and cover with foil.
- Bake, covered, at 400 degrees F (200 degrees C) for 15 minutes, then remove foil and bake, uncovered, for 15 to 20 more minutes, or until chicken juices run clear.

MEDITERRANEAN CHICKEN

- Combine the flour and cayenne in a shallow bowl. Heat the olive oil in a medium skillet on medium flame until hot.
- Dredge the chicken in the flour mixture, shaking off any excess flour. Place the chicken in the hot skillet and cook until lightly golden, about 3 minutes.
- Turn the chicken over, add the lemon juice, lemon slices, garlic, olives, 1 1/2 tablespoons of the parsley, and the salt and pepper. Cook for 8 to 10 minutes, shaking the pan occasionally and stirring the olive mixture gently to avoid burning the garlic.
- Add the butter to the pan, shaking to combine the sauce.
- Place the chicken breasts on a serving plate, then pour the olive mixture over the top. Garnish with the remaining 1 1/2 tablespoons of the fresh parsley.

Steps:
- Shake chicken thighs in a plastic bag with flour, salt and pepper. Keep unused flour in the bag.
- With a medium heat, saute chopped bacon in 2 T olive oil until lightly browned in a frying pan. Remove bacon pieces and place in a crock pot. Keep oil in the pan.
- Saute chicken pieces in the same frying pan 3 minutes each side until lightly browned. Do not overcook. Remove chicken pieces and place in a crock pot.
- In the same frying pan, saute leek, green pepper, celery, and garlic for 2-3 minutes. Add remaining flour from the bag. Saute 2 more minutes. Place the mixture into the crock pot.
- Add sliced green olives, diced tomatoes and green chilies (Rotel tomatoes), canned fire roasted tomatoes or canned chopped tomatoes, lager beer, basil, paprika, sugar, 1 tsp salt, and Parmesan cheese.
- With a microplane grater or grater, grate 1/2 orange peel into the crock pot. Pare and section oranges and place the sectioned oranges into the crock pot.
- Cover the crock pot. Cook for 4 hours on medium heat (I'm using a slow cooker and the heat is higher). With regular crock, cook for 6 hours.
- Skim any fat floating on the surface.
- Serve over cooked white rice or simply serve with crusty well buttered country bread.

- Preheat oven to 475 degrees. Toss tomatoes, olives, capers, and 2 tablespoons oil together in a medium bowl. Set aside.
- Rinse chicken, and pat dry. Season both sides with salt and pepper. Heat a large ovenproof skillet over high heat until hot. Add remaining tablespoon oil; heat until hot but not smoking. Place chicken in skillet, skin sides down; cook until deep golden brown, about 4 minutes. Turn chicken over. Add tomato mixture to skillet.
- Transfer skillet to oven. Roast until chicken is cooked through and tomatoes have softened, about 18 minutes.
CHICKEN MEDITERRANEAN FOR TWO
I found this while doing a search in the Southern Living website. I printed it out in 2005. At first glance this recipe doesn't look as quick and simple as it is. The 2 hour preparation time is the minimum marinade time of the chicken in the fridge. In fact, this can marinade for up to 24 hours. Also, the cook time doesn't include cooking the pasta because both the chicken and pasta cook about the same time. The chicken can be cubed or sliced. I slice the chicken because that is my family's preference. To prepare four servings, just double all the ingredients listed here except the tomatoes and prepare the same way. I've doubled it and it retains all of its flavor.

- Combine first 3 ingredients in a heavy-duty zip-lock plastic bag. Seal and chill 2 hours.
- Cook this chicken mixture (don't drain it) in a large skillet over medium-high heat for about 8 minutes or until the chicken is done; remove from skillet and set aside.
- To the empty skillet, add the tomatoes and their juice, olives, parsley, basil, and oregano. Reduce heat, simmer, stirring often for about 7 minutes.
- Return chicken to skillet. Sprinkle with the feta cheese, remove from heat. Cover and let stand for 5 minutes so the cheese can melt a little.
