Steps:
- Whisk together the orange juice concentrate, chipotle pepper, balsamic vinegar, molasses, and mustard.
- Season chicken with salt and pepper and grill or broil 2 minutes.
- Turn chicken and brush with glaze. Cook 5 minutes longer, brushing occasionally with glaze.
- Turn chicken again and brush well with glaze. Cook until done - center of chicken should no longer be pink - 2-3 minutes longer.
HONEY GARLIC CHICKEN THIGHS
Steps:
- Mix together the honey, soy sauce, vinegar, thyme, pepper and garlic in a bowl. Reserve 1/4 cup of the marinade to use for basting later. Marinate the chicken with the remaining liquid in a resealable bag for 2 to 3 hours in the refrigerator.
- Heat one side of a gas grill to medium heat, keeping one side cooler. Grill the chicken thighs on medium for approximately 5 minutes on each side, taking care not to let the sugars burn. Move the thighs to the cool side of the grill and baste with the reserved marinade. Cover the grill and cook, basting every 3 to 4 minutes, until the thighs are cooked completely through, about 10 minutes more.
SLOW COOKER HONEY GARLIC CHICKEN
This easy slow-cooker chicken dish hits all the right notes with its sweet honey and punchy garlic flavor. We opted to use boneless, skinless thighs instead of leaner chicken breasts because they stay nice and juicy as they cook down in this irresistible sauce.

- Place the chicken thighs in an even layer in the slow cooker.
- Whisk together the honey, soy sauce, crushed red pepper, garlic, ginger, vinegar, brown sugar, sesame oil and a few good grinds of black pepper in a large glass measuring cup or a medium bowl until combined. Pour the mixture over the chicken. Cover and cook on low until the chicken is cooked through and fork-tender, 6 to 8 hours. (Alternatively, cook the chicken on high for 4 hours.)
- Turn the slow cooker up to high. Whisk together the cornstarch and 2 tablespoons cold water in a small bowl to make a slurry, then mix the slurry into the sauce until combined. Submerging the sauce in the sauce as much as possible. Cover and cook on high until the sauce is thickened to the consistency of a glaze, about 30 minutes.
- Transfer the chicken and sauce to a platter. Sprinkle with the scallions and toasted sesame seeds and serve with white rice.
HONEY GLAZED CHICKEN
I received this recipe from a friend of mine and have used this for years. My family requests this one often. It's a light meal that everyone will enjoy. Serve with steamed rice.

- Pull off as much of the yellow fat as possible from the chicken. Place chicken halves in a five- to six-quart pot along with the gizzard, neck and heart. Reserve the liver for another purpose. Cover with cold water, bring to a boil and allow to boil for five minutes, skinning off all the foam and scum that accumulates on the surface.
- Lower heat to simmer and add the vegetables, herbs and garlic. Stir in salt to taste - you may need as much as one tablespoon.
- Simmer gently for 1 hour 15 minutes, until the chicken is done. At no time should the liquid boil, which would cause the finished soup to be cloudy.
- When the chicken is done, remove it from the pot and set it aside, covered, to keep warm. Strain the soup through a fine strainer or through a clean linen napkin set into a strainer. Rinse out the soup pot and return the soup to the pot. The soup should be clear, golden and with very little fat on the surface. Chilling it overnight will allow all the fat to be removed if you wish.
- Finally, dice the carrot, half of the onion without the peel and half of the celery. Discard the rest of the vegetables and herbs.
- Boil the noodles in a separate pot of water until tender, then set aside, covered, to keep warm.
- Remove the skin from the chicken and cut the chicken into serving pieces.
- To serve, reheat the soup to a simmer and return the chicken to the pot. Simmer for five minutes. Place a couple of pieces of chicken in each of four deep bowls along with some of the noodles and diced vegetables. Ladle hot soup over each serving. Sprinkle with minced parsley and serve.

- Preheat oven to 450 degrees. In a 5-quart Dutch oven or heavy pot, combine broth and wine. Rub chicken all over with butter and season generously with salt and pepper. Tie legs together with kitchen twine. Place chicken in pot. Bake, uncovered, 30 minutes.

- Preheat oven to 450 degrees. Remove zest from preserved lemon and cut zest into small squares; save pulp for another use. Bring 1 cup water and the sugar to a boil, drop in zest and cook 1 minute; drain and set aside.
- Heat 2 tablespoons olive oil in a large skillet over high heat. Add vegetables and garlic, season with salt and pepper and sauté until brown on all sides. (If necessary, do this in 2 batches.) Spoon vegetables into a 4 1/2- to 5-quart lidded Dutch oven and stir in herbs and lemon zest.
- Return skillet to heat, add another tablespoon of oil and brown chicken on all sides, seasoning it with salt and pepper as it cooks. Tuck chicken into casserole, surrounding it with vegetables. Mix together the broth, wine and remaining olive oil and pour it over chicken and vegetables.
- Mix flour with enough hot water (about 3/4 cup) to make a malleable dough. On a floured surface, work dough into a sausage; place dough on rim of casserole. Press lid onto dough to seal casserole. Bake 55 minutes. To break seal, work the point of a screwdriver between pot and lid. If chicken is whole, quarter it. Chicken may be served in the pot or arranged with vegetables on a serving platter.
ORANGE CHIPOTLE CHICKEN WITH CILANTRO RICE

- In a small bowl, combine chile powder, cumin and 1/4 tsp salt. Heat oil in a large nonstick skillet to medium-high. Tilt skillet to coat bottom lightly. Season both sides of chicken with chile-cumin mixture and cook for 3 minutes per side or until no longer pink in center. Remove from skillet and set aside.
- Add orange juice and maple syrup to juice and bits left in skillet and cook for 1 minute to thicken slightly (until it measures 1/4 cup liquid), stirring constantly. - In a large glass bowl, combine water, vinegar, and salt, mixing until some salt is dissolved. Add chicken, cover, and refrigerate for 2-8 hours.
- In a medium bowl, combine eggs, milk, and hot sauce to create the egg wash.
- Add flour to bowl and set aside.
- Remove chicken from brine, place in bowl and season.
- Transfer chicken to egg wash then the flour, coating evenly.
- Fry chicken in a large cast-iron pan for 10-15 minutes on each side.
- Place chicken on drying rack and let cool for 5 minutes.
