SPICY CHILI AND CORNMEAL CASSEROLE
This casserole has layers of big flavor from clever ingredients like spices, tomato paste, a chipotle pepper in adobo sauce and pickled jalapenos. That way we don't have to rely on too much cheese (which means extra fat) for a great-tasting dish.

- Preheat the oven to 400 degrees F. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the onions and cook, stirring, until soft, about 5 minutes. Lower the heat to medium; add the cumin, garlic, oregano, chipotles, adobo sauce, tomato paste and a few grinds of pepper and stir until combined. Add the turkey and cook, breaking it up with a spoon, until cooked through, about 8 minutes. Stir in the black beans, tomatoes and chicken broth and cook until the broth is reduced, 8 minutes more. Stir in 1/4 cup of the Parmesan. Remove from the heat and keep warm.
- Meanwhile, cook the polenta according to package instructions. Remove from the heat and stir in the Cheddar and chopped jalapenos. Spray a 3-quart flameproof casserole dish with cooking spray. Spread the chili in the bottom of the casserole and top with the polenta, spreading evenly to cover the chili completely. Sprinkle the top with the remaining 1/4 cup Parmesan. Cover with foil and bake until bubbling, 25 minutes. Remove the foil and broil until the top is nicely browned, 2 to 5 minutes. Serve hot, with toppings.

Steps:
- In a bowl, add the chili and tomato sauce and stir to combine.
- Add a layer of the chili mixture to the bottom of a 9x9-inch (23x23-cm) baking pan. Top with a layer of tortillas, a layer of chili, and sprinkle with cheese.
- Repeat until all ingredients are used, making sure the top layer is cheese.
- Cover and refrigerate for at least 3 hours, up to overnight.
- Preheat oven to 350˚F (180˚C).
- Remove the casserole from the refrigerator and let sit for 10 minutes on your counter.
- Poke three toothpicks in the casserole, and cover with tin foil, so that the foil doesn't touch the cheese layer.
- Bake for 30-40 minutes, or until cheese is melted.
- Cut and serve.

- Heat oven to 400°F. In 12-inch skillet, cook ground beef over medium-high heat, stirring occasionally, until thoroughly cooked; drain. Stir in salsa, kidney beans, tomatoes, corn, chili powder and cumin. Cook 3 to 4 minutes, stirring occasionally, until thoroughly heated.
- Meanwhile, make cornbread as directed on pouch, using milk. Spoon cornbread batter around outside edge of ungreased 12x8-inch (2-quart) glass baking dish. Spoon hot beef mixture into center. (Casserole will be full.)

- Cook macaroni according to package directions. CHILI BEAN CASSEROLE

Steps:
- Soak the beans in water and drain after some time. Wash them well under running water.
- Boil in high flame in fresh water for 10 minutes.
- Reduce heat and cook for 40 minutes, depending upon the freshness of the beans. It takes longer to cook older beans.
- Drain the water off and preserve the liquid for being used later.
- Place a pan on medium flame and add olive oil.
- Add onions and garlic and fry them.
- Add the cooked beans, chopped vegetables, basil, chili powder, cumin and cayenne powder. Cook for 5 minutes.
- Next, put in the tomatoes, tomato paste, bulgur wheat and 1 pint of the preserved stock.
- ring to a boil on a high flame. Reduce heat, cover the top and let it simmer for 30 minutes.
- Add lemon juice, red wine, salt and pepper.
- Add more stock if the consistency becomes too thick. Cook for a further 20 minutes.
- Serve hot.
BUSH'S CHILI BEAN CASSEROLE
My kids (all 4 of them, ages 9 month to 5 years) go absolutely crazy over this! Easy and quick. Great leftover, too.

- Brown ground beef. Preheat oven to 400 degrees.
- Mix beans and ground beef.
- Spray or grease sides of casserole dish.
- Pour beef and bean mixture into 2.2L - 2.6L casserole dish (I use glass).
- In a bowl make the corn bread as directed on the box.
- Either spread corn over beef and bean mixture, or mix it into the cornbread batter.
- Pour cornbread batter over beef and bean mixture (or corn if you spread it), and spread cornbread mixture evenly (making a little thin in the center is better, so it doesn't end up raw in the middle.
- Bake for about 35-45 minutes, check for doneness of cornbread (I generally tap it or go off the color -- if you use cream corn, a toothpick will have a hard time coming out clean).
- Let sit for 5 minutes after removing from oven.
- Scoop into bowls and top with optional ingredients.

- Preheat oven to 350 degrees F.
- Lightly grease a 7 x 11 inch baking pan, or spray with nonstick spray. (Do NOT substitute a 9 x 13 pan-- it's too big.).
- In a small skillet over medium heat, heat a small amount of oil or spray with nonstick cooking spray.
- Add onion and green pepper.
- Saute for about 5 minutes.
- Put onions and green peppers in a large bowl.
- Add chili sauce, brown sugar, dry mustard and garlic powder; mix well.
- Mix in beans and spoon into baking pan.
- Make corn bread topping (You could also substitute your own corn bread recipe, or a biscuit crust if you prefer.) In a small bowl, combine cornmeal, flour, baking powder and salt.
- Stir in 1/2 cup water, honey, and oil, mixing until moistened. Add remaining water if mixture is too thick to spread.
- Drop by spoonfuls onto bean mixture; then spread to cover completely.
- Bake, uncovered, until crust is firm, about 30 minutes.
- Let stand for 5 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
- In a skillet over medium heat, cook the ground beef until evenly brown. Drain, and set aside.
- Heat the olive oil in a separate skillet over medium heat, and cook the onions until tender. Mix in the green pepper and peas, and season with chili powder and red pepper flakes. - In a large Dutch oven, heat the olive oil over medium heat until shimmering. Add the onion, carrot, and bell pepper and stir. Cook for about 8 minutes, until the vegetables are tender.
