CHILES EN NOGADA
Steps:
- For the chiles: In a medium saute pan over medium heat, heat the vegetable oil. Add the chicken and cook until it starts to turn white, about 5 minutes. Add the onions and cook until translucent, about 5 minutes. Add the apples, apricots, cranberries, pears, raisins and garlic and cook for 2 minutes. Stir in the tomato paste and cook for 2 more minutes. Add the wine and simmer until the chicken is tender, about 5 minutes. Season with sugar, salt and pepper, and then remove from the heat.
- Stuff each roasted poblano pepper with one-quarter of the chicken mixture and set aside.
- For the sauce: In a medium saute pan over medium-low heat, cook the shallots in the vegetable oil until translucent, about 3 minutes. Add the garlic and cook until it turns a light caramel color, about 5 minutes. Add the wine and simmer until it is almost completely evaporated, about 15 minutes. Add the heavy cream and simmer until reduced by half, about 15 more minutes. Stir in the almonds and season with salt and pepper.
- To serve, place each stuffed poblano pepper on a plate and top with 2 tablespoons sauce. Garnish with the cilantro and pomegranate seeds.
CHILI CHEESE TUNA
Now....I know that this is the kind of recipe that can make people say "Yuck" really quickly, but it's really, really good. I have never had anyone dislike it before. It was my Mom's invention on a day that the cupboards were practically bare and she had hungry kids that didn't want to wait for her to run to the store. We've always put this over saltine crackers, but I also like it over toasted bread. This is a really simple and easy lunch for busy days, and it's great because you probably already have all the stuff in your pantry. I hope you enjoy it!!!

- Drain can of tuna and place in microwave safe bowl.
- Cover with American cheese slices.
- Microwave until cheese is melted.
- Stir until creamy.
- Add chili powder to taste.

CHILI CHEESE SLICES
Steps:
- Preheat oven to 375 degrees F. Line a baking sheet with foil and set aside.
- Unroll crescent rolls and separate into 6 triangles. Place on prepared baking sheet, prick holes in the dough and spray tops with cooking spray. Place in oven and bake for 5 minutes.
- Top each roll with 1 tablespoon of chili, onions, olives and Cheddar. Place back in oven and bake for another 7 minutes, or until edges are golden and cheese is melted.

CHILI CHEESE BURRITOS
I like to make a big pot of chili up and freeze it in meal-sized portions for later. We don't always like to eat chili plain, so I doctored up some chili and made burritos for a quick dinner. It's easy and doesn't require all the fresh ingredients that tacos would. If your chili is pretty soupy, you might have to cook it down a little longer than called for in the recipe. You can heat your tortillas in the oven if you wrap them in tinfoil, but the microwave is just so much easier, in my opinion.

- Combine chili, green chilies, taco seasoning, rice, and water in a medium sized pot.
- Heat uncovered over low heat about 20 minutes, stirring occasionally to keep from sticking to bottom of pan. Near the end of cooking time, you will have to stir nearly constantly as the chili will have cooked down to a nice thick consistency.
- Taste and make sure rice is cooked to your preferred softness and check thickness of chili to be sure it will stay in a tortilla.
- Warm tortillas for several seconds in microwave, spread several tablespoons of chili mixture in center of tortillas, add cheese, salsa, and sour cream to taste, and fold into burrito.
- Serve with chips and salsa or green salad.

- Cook noodles according to package directions. Meanwhile, place onion in a greased microwave-safe 11x7-in. dish; dot with butter. Microwave, uncovered, on high for 1 minute; stir. CHILE CHEESE SQUARES
This is a family favorite and it is very easy to make. We originally discovered it as an appetizer, but I think it is great for brunch. I also make it just for myself and freeze the squares to have for lunch in the future. The recipe is very open to substitutions. Fresh green chiles can be used if you happen to live where you can get them and the recipe can probably be made without them or with any amount according to your tastes.

- Sprinkle chiles and cheese in the bottom of a lightly greased 9-inch square baking pan.
- Combine biscuit baking mix, cream or milk, eggs, and salt in a medium-sized bowl.
- Beat until thoroughly blended.
