GRILLED ROMAINE SALAD WITH SMOKEY CHIPOTLE CASHEW DRESSING

Steps:
- Heat a grill or grill pan to medium heat.
- Add the mayo, cashews, chipotles, lime juice, garlic and some salt and pepper to a food processor or blender and pulse together until smooth.
- Grill the romaine on each side until wilted and slightly charred, about 1 minute and 30 seconds. Remove to a plate and top with the dressing, bacon, cotija and scallions.

- Preheat the oven to 400 degrees F.
- Place the cubed bread in a bowl and toss with the olive oil, Parmesan and a pinch of salt and pepper. Transfer to a sheet pan and bake until golden and crisp, 12 to 14 minutes.
- Meanwhile, chop 4 chipotle peppers into a paste and mix with the Caesar dressing in a bowl. Stir until well combined, then set aside.
- Preheat a grill pan over medium heat.
- Brush the salmon lightly with olive oil and sprinkle with a pinch of salt and pepper. Pour a little oil over the grill pan and add the salmon. Cook until nice grill marks have formed, 3 to 4 minutes. Brush the tops of the salmon fillets with more olive oil and flip over. Chop the remaining chipotle pepper and combine it with the adobo sauce and a couple of tablespoons of olive oil. Brush the mixture over the salmon as it grills. Continue to grill the salmon until cooked through, an additional 8 to 10 minutes, depending on the thickness. Set aside to rest.
- Combine the lettuces in a large bowl, then season with a pinch of salt and pepper and toss with the dressing until well coated. Add the toasted ciabatta and toss. Transfer to a large platter and top with the grilled salmon fillets. Halve the lemon and cut one half into wedges to garnish the platter. Squeeze over the juice of the other half, then serve.

- Prepare grill for direct-heat cooking over hot charcoal (high heat for gas); see Grilling Procedure .
- Put parmesan in a medium bowl and add olive oil in a slow stream, whisking. Whisk in lime juice, garlic, chipotles, and 1/4 teaspoon each of salt and pepper.
- Rub vegetable oil on corn and cut sides of avocados, then season with 1/8 teaspoon each of salt and pepper. Grill avocados, cut sides down, and corn, covered only if using a gas grill, turning corn occasionally, until golden-brown, 3 to 4 minutes.
- Peel avocados and thinly slice. Cut corn kernels from cobs.
- Toss romaine with dressing and serve topped with avocado and corn.
SOUTHWESTERN CAESAR SALAD WITH CHIPOTLE DRESSING
I love the creamy, smokey flavor of this dressing. Sometimes I add grilled chicken or other meat or fish to this salad for a complete meal. My husband kept saying how good the salad was when he tried it for the first time...and so will you.

- Whisk mayonnaise, broth, shoyu, lemon juice, chipotles, salt and brown sugar in medium bowl to blend.
- Taste dressing and adjust seasoning, adding salt and pepper if desired.
- Dressing can be prepared one day ahead of time.
- Mix lettuce, tomatoes and corn in a large bowl.
- Add dressing and 2 tablespoons cheese.
- Toss to coat well.
- Sprinkle with remaining cheese and chopped cilantro and serve.

- Preheat oven to 270F. Spread out tortilla chips on cookie sheet, sprinkle with 1/4c. finely grated cheese, and bake until cheese is melted and golden. Remove from oven and cool.
- Put lime juice, honey, fresh cilantro,chipotle chili powder, garlic, sea salt, and black pepper into a small blender. Blend together until smooth, and pour into a glass bowl. Slowly fold in the mayonnaise, olive oil, and finely grated cheese.Blend all together, pour into a small glass jar, and set aside in a cool place until ready to use.
- Wash and thoroughly dry the romaine.Tear into bite-sized pieces. Wash and dry the grape tomatoes. Cut into halves. Wash and dry the avocados. Score avocado skin along the north–south axis. Gently twist halves apart, and score the halves again north–south. Slice into quarters, pull from pit, peel skin away, and remove the pit. Cut each quarter in half and then into bite-sized chunks.
- Just before serving, place romaine, tomatoes, cheese, avocados, and Creamy Chipotle Caesar Dressing into a large mixing bowl. Gently toss together. This can be plated immediately and served with a couple of the tortilla croutons on top, or you can serve this salad right from the bowl and put the tortilla chips in a pretty basket on the side.
