SALTED CHOCOLATE BANANA BREAD

Salted Chocolate Banana Bread image

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-5-inch loaf pan.
  • In a medium bowl, whisk together the flour, salt, baking soda, cinnamon and nutmeg until well combined.
  • Place the butter and sugar in the bowl of a stand mixer fitted with a paddle attachment and cream together until fully combined. Add the bananas and mix for about a minute to smash the bananas thoroughly. Add the sour cream, eggs and vanilla and, you guessed it, mix. Finally, add the flour mixture and mix until just combined. Tip: Do not overmix the batter, as it can make the crumb tough and result in large "worm" holes.
  • Melt the chopped chocolate over a double boiler or microwave it in a glass or plastic bowl in 30-second intervals, stirring between intervals so the chocolate does not burn. Allow the chocolate to cool slightly. In a medium bowl, mix 1 cup of the batter with the chocolate until well combined.
  • Pour the banana batter into the prepared pan. Pour the chocolate batter in the center of the batter and swirl throughout the batter with a spoon to create the marbling effect. Bake until a toothpick inserted in the center of the loaf comes out clean, 50 to 55 minutes (okay, maybe one crumb. Or two).
  • Allow the loaf to cool in the pan for 5 minutes, then transfer it from the pan to a cooling rack to continue cooling to room temperature, and you're done! Slice, sprinkle with flaked sea salt and a touch of chili powder. Boom. Banana chocolate deliciousness.

  • Preheat oven to 350 degrees. Grease a 8 ½ x 4 ½ inch loaf pan.
  • Using a hand mixer cream butter, sugar and peanut butter in a bowl. Add eggs one at a time and mix.
  • In a separate bowl whisk together the flour, cocoa powder, baking soda, salt and cinnamon. Add the mashed banana to the creamed sugar and beat until incorporated. Add the dry ingredients and mix until just combined. Stir in half the chocolate chips by hand and pour the batter in the loaf pan. Sprinkle the remaining chocolate chips on top.
  • Bake for 45-50 minutes until a toothpick inserted into the cake comes out clean. Once cooled, remove banana bread from loaf pan. Drizzle with melted peanut butter. Slice and serve.

  • Heat oven to 190C/170C fan/gas 5. Line a 900g/2lb loaf tin with baking parchment. In a large bowl, mash together the bananas and the sugar with the back of a fork. Add the eggs and mix well with an electric hand whisk until fully incorporated, then add the butter and mix for a couple mins more to blend everything together. Sieve in the flour and baking powder and fold together with a spatula, then add the walnuts and chocolate chips. Give everything one final mix before tipping into the lined loaf tin.
  • Bake for 1 hr 5 mins or until a skewer inserted into the middle comes out clean. Leave to cool slightly in the tin, then turn out and serve cut into thick slices, either warm or at room temperature. Any uneaten cake will keep in an airtight container for up to 3 days.

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb loaf tin with baking parchment (allow it to come 2cm above top of tin). Mix the sugar, flour, bicarb, cocoa and chocolate in a large bowl.
  • Mash the bananas in a bowl and stir in the whole egg plus 2 yolks, followed by the oil and milk. Beat the egg whites until stiff. Quickly stir the wet banana mixture into the dry ingredients, stir in a quarter of the egg whites to loosen the mixture, then gently fold in the rest.   • Heat oven to 180C/160C fan/gas 4. Grease and line a 900g loaf tin.

  • 1. Preheat your oven to 160C. Line a 900g (23x13x7cm) loaf tin with parchment paper. Then put your 2 ripe bananas in a small bowl and mash them with a fork until they are a lumpy liquid consistency.
  • 2. Cream the butter and sugar together, using a hand mixer or a stand mixer, until they are pale and well blended together. Then keep the mixer on medium speed and add the eggs one by one. Add the banana to this mixture
