CHOCOLATE CHIP MARBLE CAKE

- Heat oven to 350°F (325°F for dark or nonstick pan). Generously grease, or spray with baking spray with flour, bottom of 13x9-inch pan.
- In small bowl, toss 1/2 cup of the chocolate chips with 1 tablespoon dry cake mix. Make cake mix as directed on box, using remaining cake mix, water, oil and egg whites. Stir in the 1/2 cup coated chocolate chips. Reserve 1 cup of the batter. Pour remaining batter into pan. Stir chocolate syrup into reserved batter. Drop by tablespoonfuls randomly in 8 mounds in pan. Cut through batters in S-shaped curves. Turn pan one-fourth turn; repeat.
- Bake 34 to 38 minutes or until toothpick inserted in center of chocolate comes out almost clean. Run knife around sides of pan to loosen cake. Cool completely, about 1 hour. Stir remaining 1/4 cup chocolate chips into frosting. Spread frosting over top of cake; drizzle with additional chocolate syrup. Store loosely covered.

MARBLE SNACKING CAKE WITH CHOCOLATE FROSTING
This cake really is the ultimate crowd pleaser, as it has something for everyone. Ribbons of chocolate are swirled into a fluffy vanilla cake which is topped with a light and airy chocolate frosting. By adding semisweet chocolate to a portion of the batter, we eliminated the need to make separate batches. The cake is perfect for a midweek snacking cake or celebratory dessert that you need in a pinch.

- For the cake: Position an oven rack in the middle of the oven and preheat to 350 degrees F. Spray a 9-by-13-inch baking pan with cooking spray and line the bottom with parchment.
- Place the chocolate in a medium microwave-safe bowl and microwave in 20-second intervals, stirring in between, until the chocolate is fully melted. Set aside.
- Whisk together the flour, baking powder, baking soda and salt in a medium bowl and set aside.
- Beat the granulated sugar, butter and oil in a large bowl with an electric mixer on medium-high speed until fluffy and pale, about 4 minutes. Reduce the mixer speed to low and add the vanilla and then the eggs one at a time, scraping down the sides of the bowl with a rubber spatula and mixing well after each addition. Add one-third of the flour mixture and beat on low speed until just combined. Add half of the milk and beat until combined. Repeat alternating additions of the flour mixture and milk, scraping down the sides of the bowl after each and beating until the last addition of flour is fully incorporated.
- Transfer one-quarter of the batter to the bowl with the melted chocolate and stir until the chocolate is evenly incorporated.
- Pour half of the remaining vanilla batter into the prepared cake pan and smooth out to the edges with an offset spatula. Scoop large spoonfuls of the chocolate batter on top of the vanilla batter and then pour the remaining vanilla batter on top. Using a skewer or butter knife, carefully swirl the chocolate batter into the vanilla batter to create a marbled effect.
- Bake, rotating the pan halfway through, until a toothpick inserted into the center of the cake comes out clean, about 35 minutes. The top of the cake should be springy to the touch and the vanilla spots should be lightly golden. Cool the cake in the pan for 10 minutes, then use a paring knife to loosen the sides of the cake from the pan and invert onto a wire rack to cool completely before frosting.
- For the frosting: Beat the butter in a medium bowl with an electric mixer on medium-high speed until smooth and creamy, about 3 minutes. Add the cocoa powder, cream, vanilla, salt and 1 1/2 cups of the confectioners' sugar and mix on low speed until fully incorporated. With the mixer still on low, gradually add the remaining confectioners' sugar and mix well. Increase the mixer speed to medium high and beat until the frosting is light and fluffy, about 2 minutes; the frosting will lighten in color as air is incorporated. (See Cook's Note.)
- Using an offset spatula, spread the frosting in a thick, swooping layer all over the top of the cooled cake.
CHOCO-SCOTCH MARBLE CAKE

- In a large bowl, combine the cake mix, pudding mix, eggs, sour cream and oil; beat on low speed for 30 second. Beat on medium for 2 minutes. Divide batter in half; stir butterscotch chips into half and chocolate into the other half. , Spoon half of the butterscotch batter in a greased and floured 10-in. fluted tube pan; top with half of the chocolate batter. Repeat layers. Cut through batter with a knife to swirl., Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely., For frosting, in a small bowl, combine butterscotch chips and chocolate. Beat in enough cream until the frosting is smooth and reaches desired spreading consistency. Spread over top of cake. Sprinkle with pecans.

- Heat oven to 180C/fan 160C/gas 4. Grease a 20cm cake tin and line the bottom with a circle of greaseproof paper.
- If you want to make life easy, simply put 225g butter, 225g caster sugar, 4 eggs, 225g self-raising flour, 3 tbsp milk and 1 tsp vanilla extract into a food processor and whizz for 1-2 mins until smooth.
- If you prefer to mix by hand, beat 225g butter and 225g caster sugar together, then add 4 eggs, one at a time, mixing well after each addition.
- Fold through 225g self-raising flour, 3 tbsp milk and 1 tsp vanilla extract until the mixture is smooth.
- Divide the mixture between 2 bowls. Stir 2 tbsp cocoa powder into the mixture in one of the bowls. Take 2 spoons and use them to dollop the chocolate and vanilla cake mixes into the tin alternately.
- When all the mixture has been used up (and if young kids are doing this, you'll need to ensure the base of the tin is fairly evenly covered), tap the bottom on your work surface to ensure that there aren't any air bubbles.
- Take a skewer and swirl it around the mixture in the tin a few times to create a marbled effect.
- Bake the cake for 45-55 mins until a skewer inserted into the centre comes out clean. Turn out onto a cooling rack and leave to cool. Will keep for 3 days in an airtight container or freeze for up to 3 months.

CHOCOLATE SOUR CREAM MARBLE CAKE
Steps:
- Preheat oven to 350 degrees. Cream butter and sugar until fluffy. Add yolks, incorporating well.
- Sift together flour and baking powder. On low speed add flour to butter mixture alternating with sour cream and half and half. In a clean bowl, whip whites until stiff. Gradually add sugar and whip until glossy. Fold into batter. In separate bowl stir together cocoa, coffee and baking soda. Take off 1/3 of the batter and stir in cocoa mixture. Drop spoonfuls of each colored batter into 6 nonstick mini bundt cake pans. Bake at 350 for 35 to 40 minutes or until firm to the touch. Let cool in pan then turn out. Serve with warm chocolate sauce and banana-walnut ice cream
MARBLE CRUMB CAKE
This is one of my favorite easy cakes. I usually have this for my birthday cake.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour one 13x9 inch cake pan.
- Combine 1/2 cup of the flour and the brown sugar, cut in the butter until the mixture is crumbly, stir in the chopped nuts and set aside.
- In a double boiler or microwave melt chocolate chips and set aside to cool.
- In a large bowl mix the remaining 2 cups flour, white sugar, baking soda, and salt. Add the shortening, eggs, buttermilk, and vanilla. Blend and then beat with an electric mixer at medium speed for 2 minutes.
- Combine 1 cup of the batter and the melted cooled chocolate, mix well.
- Alternate spooning the light and the dark batters into the prepared 13x9 cake pan. Cut through with a knife to marble. Sprinkle top with the reserved nut mixture.
- Bake at 350 degrees F (175 degrees C) for 30 minutes or until cake tests done. Let cake cool and enjoy!

CHOCOLATE MARBLE GOOEY BUTTER CAKE
This very moist cake (almost like a cheese cake) is from the Cake Mix Doctor - she has some great ideas for using cake mixes, and this is definitely one of them. Very moist, and rich and plenty of chocolate and very easy to make. It was a definite hit with my chocoholic husband.

- Place a rack in center of oven and preheat to 350 degrees.
- For the crust, mix the cake mix, melted butter and egg in bowl and blend on low speed 2 minutes. (if using a handheld mixer, you'll probably have to kick up the speed to medium).
- Pat the batter into an ungreased 9x13 pan smoothing it out so it's even.
- For the filling: beat the cream cheese in the same bowl for 30 seconds until fluffy.
- Add eggs, vanilla and melted butter beating on medium speed for 1 minute.
- Slowly add the confectioners sugar until well blended. Beat 1 minute more.
- Reserve 1 cup of cheese mixture. Spread remaining mixture over the crust, smoothing till even.
- Melt chocolate chips in pan over boiling water, or melt in microwave 1 minute at a time making just until melted.
- Stir the chocolate (still hot) with the reserved cheese filling until well blended.
- Spoon chocolate over filling in pan and swirl with a knife for marbling effect.
- Bake 45 - 47 minutes until it is well browned, but the center still jiggles when you shake the pan.
- Remove pan and cool at least 30 minutes. before cutting into bars. Store 4 days on counter, or 1 week in refrigerator. This can also be frozen up to 6 months.

- Chocolate mixture: Cream butter and sugar until light and fluffy.
- In a separate bowl mix the flour and the cocoa powder.
- Add a few spoons of the flour mixture; mix and then beat in an egg do this continuously until the eggs and flour mixture have finished.
- If the mixture is too dry add the milk.
- White mixture: cream butter and sugar until light and fluffy add some flour then beat in an egg. Do this until the eggs and flour have finished.
- Butter and flour a baking tray 24cm by 24cm.
- Put blobs of the chocolate mixture into the tray and then do the same with the white mixture.
- Get a butter knife and slowly mix the mixture in the tray (not so it goes light brown) so it forms a spiral of white and brown.
- Put it in the oven for about half an hour on gas mark 6.
- When the cake is nearly cooked get some plain chocolate and melt over a pan of boiling water.
- Get out the cake.
- When it is cooled down, spread the melted chocolate over the top of the cake then sprinkle with coconut powder.
