RICH LEMON ICE CREAM

- Prepare an ice bath. In a medium saucepan set over medium heat, whisk together yolks, eggs, sugar, lemon juice, and zest.
- Using a wooden spoon, stir constantly until mixture coats the back of the spoon, 7 to 8 minutes. Remove from heat; stir in cream and milk. Pour mixture through a fine sieve into a clean bowl. Chill over the ice bath or overnight in the refrigerator.
- Freeze mixture in an ice-cream maker, according to manufacturer's directions. Place in an airtight container in the freezer; store up to 1 month.
SUPER LEMON ICE CREAM

Steps:
- Combine heavy cream, half and half, sugar, and lemon zest in a saucepan; bring to a simmer over low heat. Cook and stir until sugar is dissolved, about 5 minutes. Remove from heat. Cover saucepan and allow the mixture to steep for 10 minutes.
- Uncover pan and bring back to a simmer over low heat. Beat the egg yolks in a bowl. Gradually stir one cup of the hot cream mixture into the eggs, several tablespoons at a time. This will help to bring the eggs up to temperature without scrambling them. Stir the egg mixture back into the cream mixture in the saucepan. Cook and stir over low heat until the mixture just coats the back of a spoon, 5 to 10 minutes. Transfer to a large bowl; cover. Refrigerate overnight.
- Stir the lemon juice into the cold ice cream mixture. Freeze in a 4 to 5 quart ice cream maker according to manufacturer's directions. Transfer ice cream to a lidded freezer container, and freeze for 4 hours to ripen flavors before serving.

SUPER LEMON ICE CREAM

Steps:
- Zest lemons directly into food processor. Pour in sugar and process until the sugar is faintly lemon-colored and the zest is finely ground.
- Juice the lemons you just zested and pour the measured juice into the sugar/zest mixture. Blend until the sugar dissolves.
- Add half and half and blend. If desired you can add a few drops of yellow food coloring at this point, as the finished product is a very pale, clear, almost-yellow color.
- Chill for about an hour; the product may break up, but just stir it back together.
- Freeze in an ice cream machine according to manufacturer's directions.

LEMON LIME ICE CREAM
The French "creme anglaise" method of ice-cream making gives ice cream a rich, voluptuous flavor and texture.

- In a nonreactive pan, combine the milk, 1/2 cup of the cream, the sugar, and the grated zest of 1 lemon and 1 lime. Heat the mixture, without letting it boil, just until the sugar is dissolved, about 8 to 10 minutes. Set the pan aside for 10 minutes.
- Whisk together the egg yolks, and slowly whisk in milk-and-cream mixture. Return to pan and cook over a low flame, stirring with a wooden spoon, until mixture thickens to a custardlike consistency, about 8 minutes. Do not let it get too hot or the eggs will curdle.
- Pour through a strainer into a large nonreactive bowl. Add the grated zest of the remaining lemon and 2 limes. Let stand for 10 minutes. Squeeze all the lemons and limes; add 3/4 cup of the combined juices and the remaining 3 cups cream. Chill, then pour into an ice-cream maker and freeze according to manufacturer's instructions.
TART LEMON ICE CREAM
You don't need an ice cream maker for this easy tart recipe. Just freeze in a dish right in your freezer.

- Combine the lemon zest and sugar in the container of a food processor. Blend until the zest is very fine. In a medium bowl, stir together the sugar and milk until sugar has dissolved, then stir in the lemon juice. In a separate bowl, whip the heavy cream until stiff but not grainy. Gently fold the whipped cream into the lemon mixture until evenly blended.
- Pour the mixture into a 9x5 inch loaf pan, and cover with plastic wrap. Freeze for 3 hours, or until firm.

LEMON ICE CREAM
This recipe can be prepared in 45 minutes or less but requires addtional sitting time. Carol's mom used a grater and superfine sugar when she made this recipe, but we liked the ease of grinding the zest with regular sugar in a food processor. Best of all, we never once skinned our knuckles.

- With a vegetable peeler remove zest from lemon, being careful not to include any white pith. In a food processor blend zest with sugar until very finely ground. Squeeze enough juice from lemon to measure 1/4 cup. In a large bowl stir together sugar mixture and milk until sugar is dissolved and stir in lemon juice. In a medium bowl beat cream until it just holds stiff peaks and fold into milk mixture gently but thoroughly. Pour mixture into a 9 x 5 x 3-inch metal loaf pan. Freeze ice cream until frozen, about 3 hours, and up to 1 day.
LEMON ICE CREAM
I found this recipe in an old issue of Taste of Home. It was originally submitted by a lady from San Angelo, Texas. I love the flavor and texture of this ice cream. A real summer-time treat on a hot Texas evening.

Steps:
- In a mixing bowl, combine the cream cheese, sugar and gelatin; mix well.
- Add half-and-half, lemon juice, and extracts; beat until smooth.
- Fold in whipped cream.
- Stir in enough milk, so that mixture measures 1 gallon.
- Add food coloring if desired.
- Freeze in batches according to manufacturer's directions.
- Refrigerate extra mixture until it can be frozen.
- Allow to ripen in ice cream freezer or firm up in your regular freezer for 2-4 hours before serving.
- Remove from freezer a few minutes before serving, so it softens enough to scoop.
- ~NOTE~Prep-time includes mixing the ingredients.
- Cook-time includes freezing in ice cream maker and ripening in freezer.

- Finely grate the zest from one of the lemons, then squeeze the juice from both
- Strain the juice into the zest and add the sugar, whilst stirring.
- Gradually add the cream, it will thicken slightly as it's stirred
- Pour into a container and place in the freezer until mushy
- Mix with a fork and place back in the freezer until firm.

- Combine heavy whipping cream, whole milk, 1 cup sugar, and grated lemon peel in heavy large saucepan. Bring mixture to simmer over medium heat, stirring until sugar dissolves. Remove from heat. Whisk egg yolks, fresh lemon juice, and remaining 1/4 cup sugar in large heatproof bowl to blend. Gradually whisk in hot cream mixture. Return mixture to saucepan. Stir over medium heat until custard thickens slightly and instant-read thermometer inserted into mixture registers 170°F to 175°F, about 5 minutes (do not boil). Strain custard into clean bowl; cover and chill until cold, about 3 hours.
- Transfer custard to ice cream maker and process according to manufacturer's instructions. Transfer ice cream to freezer container. Cover and freeze until firm. DO AHEAD: Ice cream can be made 5 days ahead. Keep frozen.
