- In a large bowl, combine the wafer crumbs, butter and 2/3 cup peanuts. Press into an ungreased 13-in. x 9-in. baking dish. Bake at 350° for 8-10 minutes or until lightly browned. Cool. , In a large bowl, beat the cream cheese, sugar and peanut butter until smooth. Fold in 2 cups of whipped topping. Spread over crust. , In a another large bowl, beat milk and pudding mixes on low for 2 minutes. Carefully spread over cream cheese layer. - Line two 9-inch round baking pans with wax paper and coat with nonstick spray. Dust with flour, set aside.
- In a bowl, combine flour, sugar, cocoa, baking powder, salt and baking soda.
- In another bowl combine milk, egg, oil and vanilla; add to dry mixture. Beat 2 minutes.
- Stir in boiling water. Pour into pans. Bake at 350 degrees 30-35 minutes.
- Cool 10 minutes in pans, then move to wire rack and cool completely.
- For the filling, whisk 1 3/4 cups milk and pudding mix for 2 mintues.
- In a saucepan over low heat, stir peanut butter and remaining milk until smooth. Fold into pudding. Chill 1 hour.
- For topping, melt butter and chocolate. Stir in sugar and milk. Cool until spreadable and spread over cake.

ULTIMATE CHOCOLATE PEANUT BUTTER TORTE

- Preheat the oven to 350 F. Butter 2 (8-inch) circular pans and line with parchment paper.
- In a medium bowl combine the 1 cup melted butter and cocoa and stir until the cocoa is dissolved.
- Add the sugar, 1/4 cup at a time, and mix well. Add the eggs, 1 at a time, and mix until incorporated. Stir in the vanilla, flour and salt and combine until the flour is no longer visible. Fold in the chopped peanut butter cups and divide the mixture between the pans. Bake for approximately 25 minutes, then remove from the oven and set aside to cool.
- Run a knife around the edge of each pan and turn out onto a work surface.
- Put 1 cake layer on a cake plate or a round platter. Spread the 1/4 cup of peanut butter over the first layer and top with the second layer. In a bowl, combine the remaining 2 tablespoons of peanut butter, the confectioners' sugar and water until a glaze forms. Add more water, if needed, to achieve desired glaze consistency. Pour the glaze on top of the torte, spreading it out with a small knife allowing it to drip over the sides. Melt the chocolate chips in a double boiler and drizzle over the glaze. Cut into slices and serve.

- Preheat oven to 350 degrees F.
- Butter a 10-inch round cake pan and line the bottom with waxed or parchment paper. Flour the sides of the pan with matzo cake meal.
- In the top of a double boiler set over barely simmering water, melt the butter and chocolate together, stirring frequently. Set aside to cool slightly.
- In a mixer fitted with a whisk attachment (or using a hand mixer), whip the eggs, egg yolks, and sugar until very light and fluffy. Fold in the hot chocolate mixture.
- In a small bowl, mix the matzo meal and ground walnuts. Fold into the chocolate-egg mixture. Pour into the prepared pan and bake until firm and dry on the top and a toothpick inserted into the center comes out almost clean (a few crumbs are OK), about 35 to 40 minutes.
- Let cool 20 minutes in the pan, then turn out onto a rack and let cool to room temperature. Transfer to a serving plate and refrigerate 1 hour.
- Meanwhile, make the frosting: In the top of a double boiler set over barely simmering water, whisk the egg whites and sugar together until the mixture is very hot and the sugar has dissolved somewhat. Remove from the heat and whip the mixture in a mixer (or using a hand mixer) until cooled, smooth, and fluffy. Add the butter and whip until smooth; the mixture might look broken at this point, but keep whipping and it will smooth out.
- Drizzle in the melted chocolate and coffee, and whip until smooth and fluffy. Using a flexible spatula, frost the chilled cake on the top and sides.
- Serve immediately or refrigerate up to 24 hours. Remove from the refrigerator 1 hour before serving.

- Preheat oven to 250 degrees. Grease a springform pan; dust with cocoa. Line bottom with kitchen parchment.
- In 2 qt saucepan over low heat, melt chocolate with butter.

- Make the torte:
- Line the bottom of a greased 9-inch springform pan with wax paper, grease the paper, and dust the pan with flour, knocking out the excess. In a food processor purée the chestnuts with the butter and the rum, scraping down the sides, until the mixture is smooth. Add the chocolate and blend the mixture until it is combined well. With the motor running, add the yolks, 1 at a time, and transfer the mixture to a large bowl. In a bowl with an electric mixer beat the whites with the salt until they hold soft peaks, add the sugar, a little at a time, beating, and beat the meringue until it holds stiff peaks. Whisk about one fourth of the meringue into the chocolate mixture to lighten it and fold in the remaining meringue gently but thoroughly. Pour the batter into the prepared pan, smooth the top, and bake the torte in the middle of a preheated 350°F. oven for 45 to 55 minutes, or until a tester comes out with crumbs adhering to it and the top is cracked. Let the torte cool in the pan on a rack for 5 minutes, remove the side of the pan, and invert the torte onto another rack. - Make the glaze and garnish:
- Put the chocolate in a small bowl, in a saucepan bring the cream to a boil, and pour it over the chocolate. Stir the mixture until the chocolate is melted and the glaze is smooth and stir in the rum. Dip each candied chestnut halfway into the glaze to coat it partially, transfer the chestnuts to a foil-covered tray, and let them set.
- Invert the torte onto a rack set on wax paper, pour the glaze over it, smoothing the glaze with a spatula and letting the excess drip down the side, and let the torte stand for 2 hours, or until the glaze is set. Transfer the torte carefully to a serving plate and garnish it with the coated chestnuts.
- Make the whipped cream just before serving the torte:
- In a chilled bowl with chilled beaters beat the cream until it holds soft peaks, beat in the sugar and the rum, and beat the mixture until it holds stiff peaks. Fold in the chopped candied chestnuts.

- Make cake layers:
- In a food processor pulse 2 cups pecans with flour, salt, and baking powder until finely ground (do not pulse to a paste). Transfer mixture to a bowl and stir in orange juice. Separate eggs and in a large bowl with an electric mixer beat yolks until pale yellow. Gradually add sugar, beating until thick and pale, and fold in pecan mixture gently but thoroughly. - Make filling:
- In a medium bowl with cleaned beaters beat cream with zest until it just holds stiff peaks.
- Arrange 1 cake layer, top side up, on a serving plate and spread filling evenly onto layer. Put remaining layer, bottom side up, on filling.
- Make frosting:
- Chop chocolate. In a double boiler or a metal bowl set over a saucepan of barely simmering water melt chocolate, stirring until smooth. Remove chocolate from heat and stir in sour cream and a pinch salt until smooth.
- Immediately spread frosting on top and side of torte and pat toasted pecans around side. Chill torte, loosely covered, until frosting is set, at least 1 hour, and up to 3 days.
- Serve torte chilled or at room temperature.

- Add eggs, one at a time, beating well after each addition.

- Remove the side from an 8" springform pan.
- Line the bottom of the pan with waxed paper, extending the paper over the bottom edge.
- Attach side to bottom of the springform pan, making sure paper is secured to the pan.
- Trim paper to just beyond edge of pan.
- Grease paper and 1 inch up sides of pan with shortening or butter; set aside (or, grease the bottom of a 9x1 1/2" round baking pan; line bottom of pan with waxed paper. Grease the paper and side of pan. Set aside).
- Place the 1 cup of chocolate pieces and the 1/3 cup butter in a large microwave-safe bowl.
- Microwave on 100 percent power (high) for 1 minute to 1 minute and 15 seconds or until chocolate is smooth when stirred; cool slightly.
- Add granulated sugar and the 1 1/2 tsp vanilla to melted chocolate mixture.
- Beat with an electric mixer on medium speed until well mixed.
- Add egg yolks, one at a time, beating well after each addition.
- Beat in flour and water on low speed, just until combined.
- Stir in the 3/4 cup pecans.
- Thoroughly wash beaters.
- In a bowl, beat egg whites, cream of tartar, and salt with electric mixer on high speed just until stiff peaks form (tips stand straight).
- Stir a small amount of the beaten egg white mixture into the chocolate mixture to lighten the batter.
- Carefully fold the remaining egg white mixture into the chocolate mixture.
- Pour batter into prepared pan.
- If using the springform pan, place it in a shallow baking pan on the oven rack.
- If using the 9" baking pan, place it directly on the oven rack.
- Bake cake in a 350°F oven about 45 minutes for the springform pan or about 35 minutes for the 9" pan or until the top is evenly puffed.
- Torte will not test done in center.
- Top will have a sugary crust that will crack.
- Remove springform pan from baking pan.
- Cool cake in pan on wire rack.
- Loosen edge of cake from pan.
- Remove side of pan.
- Invert onto serving plate.
- Remove pan bottom.
- Peel off paper.
- If using 9" pan, cool cake in pan on wire rack for 30 minutes; loosen side of cake and invert onto plate.
- Peel off paper.
- Cool.
- Spoon Chocolate Glaze over cake, spreading to cover top and allowing glaze to drip over sides.
- If desired, sprinkle top with chopped pecans.
- Cover; refrigerate about 30 minutes or until glaze is set.
- Chocolate Glaze.
- In a medium microwave-safe bowl, combine the 1/4 cup semisweet chocolate chips, 2 Tablespoons unsalted butter and 2 tablespoons water.
- Microwave on 100 percent (high) about 45 seconds.
- Add 1 cup sifted confectioners' sugar and 1/2 teaspoon pure vanilla extract; beat until smooth.
- If necessary, add hot water, 1 teaspoon at a time to make a glaze consistency.
- Notes:.
- Because the torte has very little flour and lots of sugar, the top will puff up during baking and crack.
- Don't worry about the cracks.
- Before glazing, invert the cake so the smooth bottom becomes the top.
- My cake did not crack on top.
- Use a large spoon to spread the glaze on the torte, letting some of the glaze spill oven the side.
- For a fancier dessert, use a spatula to carefully smooth the glaze around the sides of the torte and over the top.

- Make torte:
- In a metal bowl set over a pan of barely simmering water melt chocolate, stirring until smooth, and cool.
- Spread hazelnuts in a shallow baking pan and toast in oven until they begin to turn pale golden, 7 to 10 minutes. Cool hazelnuts completely. Discard any hazelnut skins that rub off easily and transfer nuts to food processor. Add 3 tablespoons sugar and grind mixture fine.
- In a large bowl with an electric mixer beat together butter and remaining 2/3 cup sugar until light and fluffy. Add yolks, 1 at a time, beating well after each addition, and beat in vanilla, salt, and melted chocolate. Beat in hazelnut mixture until combined well.
- In another large bowl with cleaned beaters beat whites with a pinch salt until they just hold stiff peaks. Whisk about one-fourth whites into chocolate mixture to lighten and fold in remaining whites gently but thoroughly. Spread batter evenly in springform pan and bake in middle of oven 45 to 55 minutes, or until a tester comes out with crumbs adhering. Cool torte completely in pan on a rack and remove side of pan. Invert torte onto a serving plate and discard wax paper.
- Make glaze:
- Put chocolate in a small metal bowl. In a small saucepan bring cream to a boil and pour over chocolate. Stir glaze just until completely smooth and let stand until thickened slightly, about 20 minutes.
- Spread glaze evenly over top and side of torte. With a small icing spatula or butter knife make parallel lines through glaze across top to create a design. Garnish top and bottom edge of torte with chopped hazelnuts and let torte stand until glaze is set, about 2 hours.
- Serve torte with whipped cream or ice cream.
CHOCOLATE-GLAZED CHOCOLATE PEAR TORTE
This dense, moist chocolate cake, made with dried pears, is stunning when decorated with gold leaf. Of course, you can always simply top it with chocolate curls.

- Position rack in center of oven and preheat to 350°F. Spray 10-inch-diameter cake pan with 2-inch-high sides with nonstick vegetable spray. Line bottom of pan with parchment paper; spray paper. Combine dried pears, 3/4 cup water and 1/3 cup sugar in heavy small saucepan. Simmer mixture over medium-low heat until pears are tender and liquid is syrupy, about 18 minutes. Transfer mixture to processor. Add pear brandy and purée until mixture forms thick paste. Set pear purée aside.
- Stir chocolate and butter in heavy medium saucepan over medium-low heat until smooth. Add pear purée, almonds and flour. Stir to blend well. Transfer mixture to large bowl.
- Using electric mixer, beat egg yolks in medium bowl until foamy. Gradually add 1/2 cup sugar, beating until mixture is very pale and thick, about 5 minutes. Using clean dry beaters, beat egg whites in large bowl until soft peaks form. Gradually add remaining 1/2 cup sugar to egg whites and beat until medium-stiff peaks form. Fold egg yolk mixture into chocolate mixture in 3 additions. Stir 1/4 of egg whites into chocolate mixture to lighten. Fold in remaining whites in 3 additions.
- Pour batter into prepared pan. Cover with foil, sealing foil around pan edges and tenting center to allow torte to rise while baking. Place cake pan in large roasting pan. Add enough hot water to roasting pan to come halfway up sides of cake pan. Bake torte until top and sides are set and firm to touch and tester inserted into center comes out with moist crumbs attached, about 1 hour 45 minutes. Transfer pan to rack. Cool 20 minutes. Run knife around pan sides to loosen torte. Invert torte onto 10-inch-diameter tart pan bottom. Peel off parchment. Cool completely. (Can be made 1 day ahead. Cover loosely; chill.)
- Stir first 4 ingredients in heavy small saucepan over medium-low heat until smooth.
- Line baking sheet with foil. Place rack on baking sheet. Transfer torte atop tart pan bottom to rack. Pour 1/2 cup glaze over torte. Using icing spatula and working quickly, smooth glaze over top and sides, covering evenly. Freeze torte until glaze is set, about 10 minutes. Pour remaining glaze over torte and spread over top and sides until smooth. Freeze torte just until glaze is firm, about 15 minutes. (Torte can be made 1 day ahead. Cover and chill. Let torte stand at room temperature 30 minutes before serving.)
- Using spatula, transfer torte to platter. If desired, press tip of small sharp knife into 1 gold leaf sheet; gently peel off 1-inch free-form piece. Using knife as aid, carefully press gold leaf onto torte. Repeat with remaining gold leaf, spacing pieces decoratively.
